1 teaspoon olive oil
1 medium onion, chopped
1 cup sliced fresh mushrooms
1 cup cubed fully cooked ham
1/8 teaspoon pepper
1/2 cup reduced-sodium chicken broth
1/4 cup water
3/4 cup uncooked instant rice
2 green onions, sliced
1/4 cup shredded Parmesan cheese

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup shredded cheddar cheese, divided
1 package (16 ounces) frozen California-blend vegetables, thawed
1 cup cooked rice
1 cup cubed fully cooked ham

Steps:

  • In a large saucepan, combine the soup and 1/2 cup cheese; cook and stir until cheese is melted. Stir in the vegetables, rice and ham., Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

2 tablespoons butter or margarine (about 2 tablespoons)
2 1/2 cups water Hot (about 2 1/2 cups)
1/2 cup carrot shredded
5 eggs large
1 cup ham diced cooked
1/3 cup green onion sliced, including some green
1/8 teaspoon black pepper
4 ounces Swiss cheese shredded (about 1 cup)

Steps:

  • * Preparation Time: About 30 minutes Storage Time: Up to 4 hours Baking Time: 40 minutes Butter a deep 10-inch pie plate or a 1 1/2 -quart casserole dish. Prepare rice mix according to package directions using butter or margarine and water. Add carrot while adding water to mixture in skillet.Meanwhile, in a medium bowl, beat eggs. 2 (16 ounce) packages frozen mixed vegetables
1/2 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
3 cups milk
2/3 cup butter or 2/3 cup margarine
1/2 medium onion, chopped
1/4 lb sharp cheddar cheese, grated
1 lb ham, cubed
1 1/2 cups breadcrumbs
1/4 cup butter or 1/4 cup margarine, melted

Steps:

  • Cook vegetables, drain.
  • Mix flour, seasonings, and 2 cups of the milk.
  • Heat remaining milk; add flour mixture and butter. Cook until thick.
  • Add onion and cheese; heat until cheese melts.
  • Add ham and vegetables.
  • Mix crumbs with melted butter; sprinkle over top of casserole.
