1 (16 ounce) can baked beans, undrained
1 (16 ounce) can baby lima beans, drained
1 (16 ounce) can red kidney beans, drained
4 slices bacon (or more)
1 medium onion, chopped fine
1/2 cup catsup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce
4 slices Velveeta cheese (no substitutes)

Steps:

  • Brown bacon in skillet, then remove, and set aside.
  • In a 3 quart casserole baking dish, combine the beans, onion, catsup, brown sugar, Worcestershire sauce, and bacon.
  • Cover, and bake 1 hour in a 350 degree oven.
  • Remove from oven, top with the Velveeta slices, return to oven (uncovered) and continue to bake until the cheese melts.

½ cup bacon, chopped
1 pound lean ground beef
1 (15 ounce) can pork and beans
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can butter beans
1 (15 ounce) can lima beans, drained
½ cup ketchup
1 cup packed brown sugar
1 cup chopped onion
3 tablespoons white wine vinegar
1 teaspoon mustard powder
½ cup chopped celery

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
  • Cover and bake for 1 hour.

1 pound lean ground beef (90% lean)
1 small onion, chopped
1 can (21 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) butter beans, rinsed and drained
1/2 cup packed brown sugar
1/2 cup ketchup
4 bacon strips, cooked and crumbled
1 tablespoon cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

Steps:

  • Preheat oven to 325°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 5-7 minutes, breaking up beef into crumbles; drain. Stir in remaining ingredients. Transfer to a greased 2-qt. cast-iron pan or baking dish. , Bake, uncovered, until the beans are as thick as desired, 45-60 minutes.

1 cup chopped onion
1 lb hamburger
1 (30 ounce) can kidney beans, drained
1 (30 ounce) can pork and beans
1 (10 ounce) box frozen lima beans
3/4 cup brown sugar
1/2 cup ketchup
2 tablespoons vinegar

  • Bake 1 hour at 350 or heat in crock pot for several hours.

These are my Aunt Jessie's famous baked beans. She makes them for all our family picnics and everyone loves them. I make them vegetarian by eliminating the bacon and ground beef. It isn't necessary to replace the eliminated items but you can substitute tofu crumbles for the beef.

6 slices bacon
1/2 lb ground beef
1 medium onion, chopped (1/2 cup)
1/2 cup ketchup
1 teaspoon salt
3/4 cup firmly packed brown sugar
1 teaspoon dry mustard
2 teaspoons vinegar
1 (16 ounce) can pork and beans or 1 (16 ounce) can vegetarian baked beans
1 (16 ounce) can kidney beans
1 (16 ounce) can lima beans or 1 (16 ounce) can butter beans

Steps:

  • Cook bacon in skillet until crisp, then crumble and set aside.
  • Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
  • Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don't drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
  • Bake at 350 F for 40 minutes or cook in crock pot until heated through.
  • For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn't necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground "beef" I heat it up in the pan with the onion before adding to the bean mixture.

1 teaspoon mustard
1/2 cup catsup
1 can kidney bean

  • Brown hamburger.
  • Add onion and cook until onions are transparent.
  • Drain.

Calico beans (aka cowboy beans or trucker beans) get their name from the variety of bean colors in the dish. Here we use a trio of canned beans: white navy beans, deep red kidney beans and light brown pork and beans. They're baked with bacon and ground beef in a tangy-sweet sauce until bubbling, resulting in the perfect summer side dish to accompany grilled meats. Calico beans are also great on their own as a main course, topped with shredded cheese and hot sauce.

6 slices bacon (about 6 ounces), cut crosswise into 1/4-inch pieces
1 medium yellow onion, diced
1 pound ground beef, 80/20
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can navy beans, rinsed and drained
One 11-ounce can pork and beans
1/2 cup ketchup
1/4 cup packed light brown sugar
1 tablespoon dry mustard
1 tablespoon apple cider vinegar
1/2 teaspoon kosher salt

Steps:

  • Position an oven rack in the middle of the oven and preheat to 325 degrees F.
  • Put the bacon in a large skillet and cook over medium heat, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate. Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the onion and ground beef and cook, breaking up the beef, until the onion is softened and the beef is crumbled and fully cooked, about 5 minutes. If necessary, drain any excess moisture released from the meat. Add the cooked bacon, kidney beans, navy beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar and salt. Stir together and then transfer to a 9-by-13-inch baking dish.

I've been "tweaking" this recipe for about 10 years now. This version is my absolute favorite, and I've had many requests for the recipe. I've never found a bean I didn't enjoy in this dish yet. (Well, maybe not green or yellow wax!) Originally got the first recipe from a friend I worked with.

2 lbs hamburger
1 (16 ounce) can Manwich sloppy joe mix (BOLD)
2 (15 ounce) cans petite diced tomatoes
1 (1 ounce) envelope onion soup mix (Lipton, Mrs.Grass, Knorr, type)
1 (28 ounce) can bushes baked beans (I use the Boston flavor, but use whatever flavor you like)
2 (16 ounce) cans large butter beans
2 (16 ounce) cans baby butter beans
1 (14 1/2 ounce) can light red kidney beans
1 (14 1/2 ounce) can dark red kidney beans
1 (15 ounce) can great northern beans
1 (15 ounce) can black beans (not the Spicy Ones)
1 (14 1/2 ounce) can baby lima beans
3/4 cup ketchup
1/3 cup Heinz 57 steak sauce
1/4 cup brown sugar
2 tablespoons sour cream, per serving (optional)
3 -6 saltine crackers, per serving (optional)
1/4 cup grated cheddar cheese, per serving (optional)

Steps:

  • In large skillet or Dutch oven brown hamburger; as you are doing this add the envelope of onion soup mix.
  • When hamburger/soup mix is browned, add can of Manwich BOLD.
  • Next lightly rinse all beans except the Bushes baked beans.
  • Add petite diced tomatoes and all types of beans to hamburger/soup/Manwich mixture.
  • Stir together over medium heat.
  • Add ketchup, Heinz 57, and brown sugar.
  • Heat thoroughly.
  • Dish into large bowls.
  • Garnish with grated cheese, crackers & a dollop of sour cream.
  • Sometimes this dish will become very thick, if this happens you can thin with water or beef broth.
  • Special Note: You can pretty much add or delete any bean you like or maybe dislike?!
  • Just have fun! and ENJOY!
  • This recipe makes quite a bit. So if you're not feeding 8-12 you can freeze the extra or half the recipe.
