I found a recipe online for Calhoun's dip - it does not say it is the official recipe. I found that recipe to be too thin - more like soup. So I doubled the amount of cheese,...

1 lb white american cheese
1/2 c milk
1/2 c favorite dark beer
1/2 Tbsp worcestershire sauce
1/2 tsp dry mustard
1/2 Tbsp dijon mustard
1/4 tsp tabasco sauce

Steps:

  • 1. Cut white American cheese into small pieces. Place in top portion of double boiler along with milk. Heat until cheese is melted. Mix well with a wire whip.
  • 2. Place beer, Worcestershire sauce, dry mustard, Dijon mustard and Tabasco in small mixing bowl. Mix until completely blended. Add ingredients to melted cheese.
  • 3. Blend well with wire whip and place in oven-proof dish. Bake at 350° until very hot (about 20 minutes). Or, place in a very small crock pot on low power to serve hot.
  • 4. Serve with crispy garlic toast, tortilla chips, or hot soft pretzels.

Yield about 2 cups of beer cheese dip

6 ounces lager beer
1/2 teaspoon mustard powder
1/2 teaspoon Worcestershire sauce
4 ounces cream cheese
4 ounces Monterey jack cheese, grated
4 ounces sharp cheddar cheese, grated
Pinch cayenne
Pinch garlic powder
Kosher salt

Steps:

  • Bring the lager, mustard powder and Worcestershire sauce to a simmer in a small saucepan over medium heat and cook for 1 to 2 minutes, then reduce the heat to low. Add the cream cheese and cook, whisking, until melted and smooth. Gradually add handfuls of the cheeses, whisking to melt between each addition; do not let the mixture boil. Cook, whisking, until completely smooth, then add the cayenne and garlic powder and season with salt to taste. Serve warm or at room temperature; the sauce will thicken as it cools.

4 tablespoons unsalted butter
¼ cup all-purpose flour
1 cup lager beer (see note)
1½ cups half & half
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder
Scant ½ teaspoon salt
¼ teaspoon cayenne pepper
4 oz (1 cup) shredded Cheddar cheese
4 oz (1 cup) shredded Gruyère cheese
1 tablespoon chopped fresh chives, for serving (optional)

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the flour is completely absorbed. Continue cooking, whisking constantly, for 1 minute.
  • While whisking constantly, slowly pour in the beer and half & half. Whisk in the mustard, Worcestershire sauce, garlic powder, salt, and cayenne pepper. Bring the mixture to a boil, whisking constantly, then reduce to a simmer and continue cooking, whisking frequently, until thickened enough to coat the back of a spoon, about 3 minutes.
  • With the heat on low, add the cheeses a handful at a time, whisking between each addition, until the cheese is fully melted before adding more. Taste and adjust seasoning, if necessary. Transfer the dip to a serving bowl and sprinkle with fresh chives, if using. Serve immediately.
  • Leftover beer cheese can be covered and refrigerated in an airtight container. Reheat gently on the stovetop over medium-low heat, whisking frequently, until warmed through.
  • Note: Lager is a family of beers that includes bright lagers, amber lagers, dark lagers, Oktoberfests, and pilsners. I used Fat Tire because that what I had in the house, but Budweiser, Bud Light, Coors Light, and Miller Lite are all good options. No need to use anything fancy!

12 oz. IPA beer (1, 12oz can)
1/4 c. half-and-half
6 oz. shredded fontina cheese
6 oz. shredded sharp yellow cheddar cheese
1 tsp. Dijon mustard
1/2 tsp. Worcestershire sauce
Chopped chives and/or black pepper, for garnish
Pretzels, to serve

Steps:

  • 1. In a medium saucepan, melt the butter over medium-low heat. Add the onion and cook, stirring, until softened, 4 to 6 minutes. Gradually whisk in the flour and cook, whisking constantly, until lightly browned, about 1 minute. 2. Gradually whisk in the beer and half and half. Cook, whisking constantly, until the sauce is thickened and just begins to bubble, 5 to 7 minutes. Reduce the heat to low and gradually add the cheeses, whisking constantly, until melted and combined. Remove from the heat. 3. Whisk in the dijon mustard and the Worcestershire sauce. Garnish with chives and black pepper, if you like. Serve with pretzels; re-warm gently as needed.

Assorted dippers such as cubes of bread, cubes of ham, green onions, apple wedges and pretzel twists, if desired
1 clove garlic, peeled, cut in half
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 can or bottle (12 oz) regular or nonalcoholic beer
6 cups shredded mild Cheddar cheese (1 1/2 lb)
Green onion, chopped, if desired

Steps:

  • Rub inside of 3-quart saucepan with cut sides of garlic; discard garlic. Add butter to saucepan; melt over low heat. Stir in flour; cook 2 minutes, stirring constantly. Stir in beer. Increase heat to medium-high; heat to boiling. Boil 2 to 3 minutes, stirring constantly, until mixture is thick and smooth.
  • Reduce heat to low. Add cheese, about 1/2 cup at a time, stirring until cheese is melted and mixture is smooth.
  • Transfer cheese mixture to fondue pot. Immediately place fondue pot over flame. Serve with dippers. Garnish dip with onions.
