We love Calarami Steaks, this is my recipe that I have been making for Years & Years. They cook fast do not over cook. I usually cook them after we have had our salad, and have everything else ready. Enjoy.

4 calamari steaks (I buy ones that are pre-pounded)
2 eggs
salt
pepper
flour
Italian seasoned breadcrumbs
canola oil

Steps:

  • Use a big skillet, place oil in skillet.
  • Beat eggs in shallow bowl.
  • Put flour in another shallow pan.
  • Seasoned bread crumbs in another pan.
  • Salt and pepper Calamari steaks, dip first into flour then into egg, then in to seasoned bread crumbs.
  • Fry in hot skillet,turn when brown on first side, brown on other side.
  • Serve.
  • These COOK FAST-- DO NOT OVER COOK as they will get TOUGH.

CALAMARI STEAKS PARMIGIANO

This recipe is almost like Chicken Parmigiano, but it uses calamari steaks, and is much quicker and easier to make. It is not baked, and the uniform texture of the steaks allows the breading to adhere nicely. Serve over your favorite pasta with extra sauce, if desired.

4 calamari tubes
¾ cup Italian seasoned bread crumbs
¼ cup grated Parmesan cheese
¼ cup milk
2 cloves garlic, minced
3 tablespoons olive oil
1 ½ cups spaghetti sauce
4 slices provolone cheese

Steps:

  • Slice the calamari tubes open so they can lay flat. Rinse and pat dry; set aside. Mix the bread crumbs and Parmesan cheese together in a pie tin or on a plate. Pour the milk into a separate dish. Dip the calamari steaks in milk, then press into the bread crumb mixture to coat.
  • Heat the olive oil in a large skillet over medium-high heat until hot. Quickly add the steaks and cook until golden brown on each side, about 3 minutes per side. They should be golden brown but be careful not to over cook or they will be tough.
  • Reduce heat to low and add garlic and then spaghetti sauce to the pan. Top each steak with a slice of provolone cheese. Cover with a lid just until the cheese has melted, about 2 minutes.

These calamari steaks come out so tender you can break them with a fork. They are fast and easy to make and oh so good.

4 calamari steaks
1-2 fresh lemons
2 c oil for frying
EGG DIP
4 eggs, beaten
1/2 c sherry
1 tsp oregano, dried
1 tsp basil, dried
1 tsp thyme, dried
1 tsp parsley flakes
1/2 tsp white pepper
1/2 tsp salt
BREADING
1 1/2 c unseasoned bread crumbs
1/2 c parmesan cheese, shredded
1 tsp oregano, dried
1 tsp basil, dried
1 tsp thyme, dried
1 tsp parsley flakes
1/2 tsp white pepper
1/2 tsp salt
1 tsp onion powder
1 tsp granulated garlic

Steps:

  • 1. Mix together ingredients for egg dip and put calamari steaks in to soak for 15-30 minutes
  • 2. While steaks are soaking mix together breading ingredients. Start heating oil to shimmering. I use canola or vegetable and only enough to half cover the steaks. I do not completely cover in oil. Olive oil will throw the taste off completely. I speak from experience on that one.
  • 3. Double Bread steaks, out of dip into breading, back into egg, back into breading.
  • 4. Fry steaks until golden on one side then flip. About 2 1/2 minutes a side. DO NOT OVERCOOK or these will be like chewing rubber bands
  • 5. Remove from oil, blot on paper towels.
  • 6. Serve with a squeeze of fresh lemon. (bottled is ok if you don't have fresh) * Note: I served with a artichoke and will also have this recipe posted for your enjoyment

LEMON CAPER CALAMARI STEAKS WITH BROCCOLINI

1/4 cup olive oil
3 garlic cloves, crushed in a garlic press
1/4 teaspoon dried hot red-pepper flakes
1 lb Broccolini, trimmed
1/3 cup water
1/4 teaspoon salt
3 tablespoons all-purpose flour
1/4 cup finely grated Parmigiano-Reggiano
1/4 teaspoon black pepper
1 large egg
1 tablespoon water
4 frozen calamari steaks (1 lb total), thawed
2 tablespoons unsalted butter
1 to 1 1/2 tablespoons fresh lemon juice
1 tablespoon bottled capers in brine, rinsed and drained
Accompaniment: lemon wedges

Steps:

  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic and red-pepper flakes, stirring, until golden, about 30 seconds. Add Broccolini and cook, turning with tongs, until coated with oil, then add water and salt and cook, covered, stirring occasionally, until crisp-tender, 8 to 10 minutes. Transfer to a platter with tongs and keep warm, loosely covered with foil.
  • Heat remaining 2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking. While oil heats, stir together flour, cheese, and pepper in a wide shallow bowl, then lightly beat egg with water in another wide shallow bowl. Dredge 1 calamari steak in flour mixture, shaking off excess, then dip in egg mixture, letting excess drip off, and transfer to a plate. Dredge another steak in flour and dip in egg in same manner, then sauté coated steaks over moderately high heat, turning over once, until golden, about 1 1/2 minutes total. Transfer to platter with Broccolini and keep warm, loosely covered. Dredge, dip, and sauté remaining 2 steaks in same manner, transferring to platter.
  • Pour off fat from skillet, then add butter, lemon juice (to taste), and capers to skillet and cook over moderate heat just until butter melts, about 45 seconds. Pour lemon caper sauce over calamari steaks and serve immediately.

This is a very simple but delicious recipe for calamari steaks. Be careful though - they cook exceedingly fast. Make sure you have the rest of the meal ready and on the table before you cook the steaks.

6 calamari steaks
2 cups buttermilk
2 eggs
5 -6 dashes Tabasco sauce
1/2 cup milk
1 cup flour
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon garlic powder
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 cup Italian seasoned breadcrumbs
1 cup canola oil

Steps:

  • Place calamari steaks in large bowl and cover with buttermilk. Let set for 15-30 minutes.
  • Whisk together eggs, Tabaso sauce and 1/2 cup of milk. Pour into flat dish or pie pan and set aside.
  • Mix flour, cumin, chile powder, garlic powder and salt and pepper. Put into flat dish or pie plan and set aside.
  • Put bread crumbs into flat dish or pie pan.
  • Heat oil in large skillet.
  • Drain calamari.
  • When oil is very hot, dredge the clamari in the flour mixture, then dip into the egg and then dredge in the breadcrumbs.
  • Fry in oil until golden brown on one side then immediately turn over and fry till golden brown on the other. This takes about 1-2 minutes total. Drain on paper towels.
  • Serve and enjoy.

For the salsa:
1 cup (4 oz./125 g) Kalamata olives, pitted and chopped
2/3 cup (4 oz./125 g) cherry tomatoes, chopped
1/4 cup (2 oz./60 g) capers, drained
2 garlic cloves, minced
1 Tbs. chopped fresh flat-leaf parsley
1 Tbs. olive oil
Grated zest of 1 lemon
1 Tbs. fresh lemon juice
1/4 tsp. freshly ground pepper
For the calamari steaks:
4 calamari steaks, 4 to 6 oz. (125 to 185 g) each
Juice of 1 lemon
1 Tbs. olive oil
1 Tbs. chopped fresh flat-leaf parsley
Salt and freshly ground pepper
Lemon wedges, for serving

Steps:

  • To make the salsa, in a bowl, stir together the olives, tomatoes, capers, garlic, parsley, oil, lemon zest and juice, and pepper. Place the calamari steaks in a nonreactive bowl and add half of the lemon juice, the olive oil and the parsley. Season with salt and pepper and toss to combine. Prepare a grill for direct-heat cooking over medium-high heat. Grill the steaks until opaque, about 2 minutes per side. Top the calamari with the salsa and a squeeze of lemon juice, and serve. Serves 4.

1 egg white prepared with 2 tsp Deb El Just Whites 2 TBS water
1 cup Kikkoman Bread Crumbs, Panko
1 TBS Butter
2 tsp Olive oil

Steps:

  • Directions Prepare Deb El Egg whites per directions on can. I prefer to prepare Calamari steaks by pounding them on both sides with a tined tenderizer to thin them out which increases the size a little. dip i egg white mixture, then in panko to coat on both sides. heat oil & butter on medium heat, saute in skillet 3 minutes on one side squeeze with lemon wedge, and salt & pepper to taste, turn and cook 3 more minutes, until crispy and golden brown, sprinkle with parsley and serve with fresh lemon...
