2 Calamari Steaks
Progresso Garlic & Herb Bread Crumbs
4 eggs
1/3 cup white wine ( Pinot Grigio )
1 ounce of sliced almonds ( 1oz == 1/4 cup )
1 tablespoon butter
1 lemon
olive oil
salt & pepper

Steps:

  • Add enough olive oil to a medium sized frying pan to thinly cover the surface ( a few tablespoons ). Set to a medium heat. Wash calamari steaks under water and pat dry. Wisk egg in a bowl and dip the steaks in the egg wash. Cover the steaks with the Progresso Bread crumbs. Add one steak at a time to the pan and cook until golden brown ( about 3 minutes per side ). Set aside on plate when done. Repeat. If serving as an appetizer, cut the steaks into bite size pieces. Lemon, wine, butter sauce: ================== In the same pan, add the almonds and toast them for about 1 minute. Add butter. When the butter has melted and begins to bubble add the wine. Add the juice from 1/3 of a lemon. Add salt and pepper to taste. Let the sauce simmer for about a minute. It should reduce by about 1/2. Pour sauce over calamari.

1 calamari steak
1 cup progresso breadcrumbs
1 egg
1 cup heavy cream, mixed 1/3 with
half-and-half
2 tablespoons gorgonzola
2 tablespoons pecorino romano cheese (parmesan)
1 teaspoon dried oregano
1 teaspoon dried basil
1 pinch chili flakes
2 tablespoons lemon juice
1 pinch chopped fresh basil (so its in strips)
20 capers
3 kalamata olives, cut in half
1 tablespoon onion
salt and pepper
marinara sauce, maybe 1/8 cup (enough to make sauce pinkish)
oil, to create shallow fry in a medium pan

Steps:

  • in a small bowl beat egg, 1/4 cup of cream mixture, dried oregano, dried basil, chili flakes, one tablespoons parmesan cheese, and pinch salt pepper.
  • Dry the calamari steak and dip into the mixture.
  • Place calamari steak in bread crumbs and coat with crumbs pressing the crumbs into the steak with heel of hand until well attached.
  • Heat oil in medium frying pan.
  • Fry calamari steak until golden brown on both sides, steak is now cooked.
  • In a separate pan saute onions, capers, and olives.
  • When done, add remaining cream mixture, Gorgonzola cheese, remaining parmesan, fresh basil, lemon juice, and marinara sauce, please salt to taste.
  • When sauce is thick either heat calamari steak in oven for 1 minute or add hot sauce over the top, and eat!

PAPRIKA CALAMARI STEAK

Yield USE one to two steaks per person.

Number Of Ingredients 6

Squid steaks
favorite type of paprika
flour
panko (optional)
fresh citrus (limes, lemon, etc.)
oil for sauteing

Steps:

  • Rinse the squid steaks. You can also score them with a knife on the diagonals crossing but not cutting all the way through the flesh. Sprinkle ground paprika on both sides, the dredge in flour and/or panko if desired. Shake off excess flour. Saute about 3 minutes per side in your favorite type of heated oil. Don't over-cook. Flip and saute the other side. Add to dinner plate and squeeze your favorite type of citrus juice on and add salt and pepper if desired. Simple and healthful. ENJOY!
