1 teaspoon lemon pepper seasoning
1 teaspoon white pepper
1 teaspoon creole seasoning
1 teaspoon blackened fish seasoning (I like Prudhomme's blackened redfish seasoning)
4 catfish fillets, 1 1/2 to 2 pounds
2 tablespoons lemon juice
lemon wedge (to garnish)

Steps:

  • Combine first 4 ingredients; rub the seasoning on catfish. Sprinkle lemon juice on both sides of fish.
  • Grill, covered with grill lid, over medium hot coals (350-400°F) 5 minutes on each side until fish flakes easy with a fork. Garnish with lemon, if desired.

2 small or medium catfish filets
salt and pepper to taste
lemon pepper seasoning or your favorite seasonings

Steps:

  • 1. Wash and dry catfish filets. Salt and pepper. Sprinkle your choice of seasonings on both sides of fish. Let stand for a few minutes. We use a cajun, no salt mixture of seasonings. This is made up of curry powder, onion powder,garlic powder, and other ingredients on the label. Actually, we do not put a lot of salt on the fish when we are seasoning it.
  • 2. After the fish is seasoned, place it on the grill. Keep turning it until there are no more juices running from it. When using the George Forman grill we just follow the directions of usage for the grill. This is also good on the regular grill!

4 (6 ounce) catfish fillets, approximately
2 tablespoons olive oil
4 slices limes, thin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/4 teaspoon coarse salt
1/2 teaspoon white pepper
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1 teaspoon Hungarian paprika
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
3/4 cup diced turkish dried apricot
3/4 cup fresh diced pineapple
1/3 cup diced red onion
1/4 cup diced red bell pepper
2 medium shiitake mushrooms, diced
1/4 cup finely chopped fresh cilantro
1 jalapeno pepper, seeded and diced
2 -3 tablespoons lime juice

Steps:

  • Combine all the ingredients for the salsa and refrigerate until ready to serve
  • In a small jar, combine all the ingredients for the rub and shake to distribute well
  • Preheat grill to medium
  • Rinse fish under running water, pat dry
  • Drizzle the olive oil over fish, sprinkle with rub and gently rub into fish
  • Turn fish over and repeat with olive oil and rub
  • When grill is hot, place prepared fish on grill and cook for 15 to 20 minutes or until fish flakes easily when pierced with fork, turning fish once
  • Place cooked fish on individual serving plates, divide salsa among the servings and garnish with lime twists

This is a recipe handed down to me by my father, and is one of my favorite Cajun-style dishes. I hope you enjoy it as much as I do. I am currently attempting to figure out a way to cook this dish on the George Foreman Grill; stay tuned for the results!

1 lb boneless catfish fillet
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon parsley flakes
1 teaspoon ground red pepper
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon thyme
butter or oil (for cooking)

Steps:

  • NOTES: You MUST use butter or oil; margarine will not work.
  • A large cast-iron skillet works best for this, but any large non-stick skillet will work.
  • This recipe will work with nearly any type of boneless fish fillets, but catfish seems to be one of the tastiest.
  • This recipe produces a LOT of smoke, so make sure you have a good vent above your stove, or open some doors and/or windows.
  • Mix all dry ingredients together.
  • Coat fillets evenly with mixture.
  • Heat small amount of butter or oil in skillet until hot.
  • Place fillets in skillet.
  • Cook 3-5 minutes on each side.
  • Change butter or oil if it gets too black.

Griddled Egg White French Toast for One on George Foreman Grill image

Utilizing my George Foreman grill (conveniently located in my dorm room!), this is a wholesome, calorie-friendly breakfast that is made in no time - guaranteed success every time! If you want to make it even lower in calories, use light bread. I like using regular thick-sliced white bread; sourdough is a good option too. I don't spray the griddle, because my GF grill (like all others) has a nonstick surface.

1 egg white
2 tablespoons nonfat milk
2 slices white bread (or any other you like)
Splenda granular, to serve (optional, but highly recommended!!)
cinnamon, to serve (optional)

Steps:

  • Preheat grill for 5 minutes.
  • While waiting, whisk egg whites and milk in a shallow wide bowl (so that you can dip the bread with ease) - beat very well until smooth - egg whites can be lumpy and thus resulting in uneven french toast.
  • Submerge bread one by one into egg mixture - soak!
  • Place bread on griddle, side by side.
  • Close the cover and let cook for about 2 minutes, or less.
  • Don't open and close to check before 1 minute is up - your bread will tear apart (unless you like open-faced french toasts)!
  • Serve hot, with splenda and cinnamon!
  • If not served immediately, french toast freezes very well. Lay on paper towels to cool (so they absorb the moisture) and then freeze.
  • ENJOY!
