This recipe is a hot one, but delicious! If you are weak of tongue, then divide the amounts of peppers in half. Better to add more than spoil your creation! Bay scallops are preferred, but the larger sea scallops can be used if they are cut in half. This dish can also be placed in a casserole dish and placed under the broiler until top turns golden brown!

2 cups heavy whipping cream
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme
2 teaspoons salt
2 teaspoons ground black pepper
1 ½ teaspoons crushed red pepper flakes
1 teaspoon ground white pepper
1 cup chopped green onions
1 cup chopped parsley
½ pound shrimp, peeled and deveined
½ pound scallops
½ cup shredded Swiss cheese
½ cup grated Parmesan cheese
1 pound dry fettuccine pasta

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened.
  • Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well.
  • Drain pasta. Serve sauce over noodles.

Imitation crab meat and mini shrimp make for a wonderful pasta salad that everyone loves!

1 (16 ounce) package uncooked tri-colored spiral pasta
½ cup mayonnaise
¼ cup apple cider vinegar
¼ cup olive oil
salt and pepper to taste
1 (8 ounce) package imitation crabmeat, flaked
1 (6.5 ounce) can tiny shrimp, drained
1 pint grape tomatoes, halved
1 English cucumber, diced
1 (4 ounce) can sliced black olives, drained
1 red bell pepper, seeded and chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta, and cook until tender, about 10 minutes. Drain, and rinse under cold water to cool. Transfer to a large bowl, and set aside.
  • In a small bowl, mix together the mayonnaise, vinegar, olive oil, salt and pepper. Pour over the pasta and stir to coat. Add the crab, shrimp, tomatoes, cucumber, black olives and bell pepper; mix gently to coat with the dressing. Taste, and adjust seasoning if desired. If the pasta is too dry, mix in more mayonnaise.

DIAN'S CAJUN PASTA SALAD

This is my Go-To salad for caters and potlucks. In the time is takes to cook the pasta, you can have the rest of the ingredients assembled. The peas go in frozen to help cool the salad immediatly. You can use real crab meat or Surimi Imitation Crab found in the freezer section or seafood section (Costco) of a well stocked market. It's great with fresh cooked salad shrimp also. I use Lighthouse Brand Garden Ranch because it has bits of carrot and green onion & looks and tastes great. Cajun seasoning can be an aquired taste so feel fee to adjust the seasoning or leave it out for a more kid friendly salad. This is one of my most requested recipes. Enjoy!

1 lb pasta, my favorite for this salad is bow tie but any pasta will do
1 lb lump crabmeat
1 lb frozen baby peas (keep them frozen)
1 red bell pepper, diced
1 (6 ounce) can sliced black olives
2 cups ranch dressing (I use Lighthouse Garden Ranch)
2 tablespoons cajun seasoning

Steps:

  • Cook pasta according to directions.
  • While the pasta is cooking combine the rest of the ingredients in a large bowl. Rinse the pasta under cold water to cool and stop the cooking process.
  • Add the rinsed pasta and enjoy! Refrigerate leftovers if you have any!

CAJUN SHRIMP & CRAB WITH ALFREDO SAUCE

My recipe fed four hungry Cajuns. Reminder: Shrimp tends to produce water while cooking. If you do not want a thin sauce, half way cook the shrimp in a separate pot. Then spoon them out into your sauce. If you do not like Shrimp or Crab you can always leave whichever one you do not like out of the recipe. You can also use this same recipe but with Crawfish or Chicken. I baked garlic bread to eat with my dish.

1/2 lb noodles
3 tablespoons butter
1/2 yellow onion
2 tablespoons minced garlic
1 (16 ounce) can original rotel
2 teaspoons cayenne pepper
seasoning
1 quart heavy whipping cream
1 lb shrimp, boiled and cleaned
1/2 lb lump crabmeat, cartilage removed
1 cup parmesan cheese

Steps:

  • In your main saucepan, sauté garlic and 1/2 yellow onion with butter do not burn. Cook until onions become transparent.
  • In a separate pot, cook down your can of Rotel until soft. Then add to main saucepan.
  • Stir in whipping cream, reduce heat to low and continue stirring about 2 minutes.
  • Add Shrimp & Crab. Cook till shellfish is done.
  • Season to your liking. I used Slap Ya Mama Cajun Seasoning and salt & pepper.
  • Add Parmesan cheese, stirring after about 1 minute. Stir in your cooked noodles. Mix all together.

SHRIMP AND CRAB SEAFOOD SALAD

A great, refreshing lunch on a hot day. Serve on buns or atop shredded lettuce.

1 pound imitation crabmeat
1 pound uncooked shrimp, peeled and deveined
6 teaspoons lemon juice, divided
1 cup minced celery
1 cup mayonnaise (such as Hellmann's®)
⅓ cup minced red onion
1 tablespoon minced red onion
3 tablespoons minced fresh dill
1 tablespoon seafood seasoning (such as Old Bay®)
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil. Add shrimp and 2 tablespoons lemon juice; cook until shrimp are bright pink on the outside and the meat is opaque, about 2 minutes.
  • Transfer shrimp to a bowl of ice water to stop the cooking process. Drain and pat dry with paper towels.
  • Combine celery, mayonnaise, 1/3 cup plus 1 tablespoon red onion, dill, remaining 4 teaspoons lemon juice, seafood seasoning, salt, and pepper in a large bowl.
  • Dice shrimp and crab. Add to the mayonnaise mixture and gently stir to coat. Refrigerate for 2 hours before serving.
