2-1/2 pounds medium red potatoes
1/4 cup olive oil
2 shallots, chopped
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
2 tablespoons minced fresh parsley

Steps:

  • Cut each potato lengthwise into eight wedges. , In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in a greased roasting pan., Bake, uncovered, at 450° for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.

2 lbs potatoes, cut into 1-inch chunks
1 tablespoon olive oil
1/2 cup chopped green bell pepper
1/4 cup chopped onion (optional)
1 1/4 teaspoons salt
3/4 teaspoon paprika
1/2-1 teaspoon finely minced garlic
1/8-1/4 teaspoon ground cayenne pepper, to taste
1/4 teaspoon thyme

Steps:

  • Preheat oven to 450*F.
  • Combine potatoes and olive oil in a 13x9x2-inch baking pan.
  • Add green bell pepper and onion, if using. Toss to coat.
  • Sprinkle with seasonings and toss to coat well.
  • Roast for about 35 minutes, stirring 2 to 3 times.
  • Remove from oven and serve. Enjoy!
