I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

1 pound dried baby lima beans
2 quarts water
2 onions, coarsely chopped
1 meaty ham bone
1 cup leftover ham meat from bone, chopped
3 cups water, or as needed to cover
1 teaspoon Cajun seasoning
¼ teaspoon freshly ground black pepper
¼ teaspoon garlic salt, or to taste
1 pinch cayenne pepper

Steps:

  • Soak lima beans in 2 quarts of water in a large bowl for 8 hours or overnight. The next day, drain the lima beans and place into a slow cooker with onions, ham bone, and ham. Pour in 3 cups of water or as needed to cover. Place lid on the cooker, set to High, and cook for 3 hours.
  • Stir in Cajun seasoning, black pepper, garlic salt, and cayenne pepper; set cooker to Low and cook until the beans and meat are very tender, about 4 more hours.

1 1b. large lima beans
1 cup dark brown sugar
1/2 cup catsup
onion flakes
parsley flakes

Steps:

  • 1. Soak limas in a large pot of water overnight
  • 2. Cook in water the next day for 1 hour till tender
  • 3. Drain some of the water, not all and pour limas into a large baking pan
  • 4. Add catsup, brown sugar, dash of onion flakes, and a dash of parsley flakes.
  • 5. Brown pork chops and put into limas

2 cups fresh green lima beans
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 teaspoons sugar
1 teaspoon dry mustard
1 tablespoon chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh summer savory
2 teaspoons chopped fresh thyme
2 tablespoons finely chopped onion
2 tablespoons unsalted butter
6 (1-inch thick) pork chops
2 cups fine bread crumbs, toasted
1 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook lima beans in salted water until almost tender, and reserved 1/2 cup of the cooking liquid. Pour the lima beans into a large flat baking dish with the reserved liquid. Stir in the salt, pepper, sugar, mustard, parsley, savory, thyme, and chopped onion. Mix well.
  • Heat the butter in a large skillet over medium-high heat. Add the chops and cook, turning once, until well browned. Place the chops on top of the beans.
  • Mix bread crumbs with sour cream. Spread over chops. Cover dish and bake for 8 minutes. Uncover the chops and continue baking, until lightly browned, about 8 minutes more.
  • Arrange the chops on a bed of the lima beans on a large platter and sprinkle with parsley. Serve.

This a a southern comfort food which my family loves. I usually only make these on the weekends, so they can cook slow and long at a very low temperature. Note: This ain't your diet food, but it is so worth the calories you ingest. LOL

2 lb dried large lima beans
1 stick butter
1/2 to 1 lb ssalt pork (or hog jowls)
1 gal water
2 Tbsp black pepper
2 Tbsp kosher or sea salt

Steps:

  • 1. Wash beans thoroughly, picking through to remove any stones or other foreign objects (such as dirt clods) Put beans in crockpot with 1 gallon water (or more if needed to cover to about 2" above level of dried beans. Turn crockpot on to high
  • 2. Sear hog jowls in heavy skillet, then transfer to crockpot with beans Add stick of butter
  • 3. Continue cooking on high for approximately one hour, checking to make sure beans are still completely covered by water Dried beans will absorb a lot of water while cooking At this time, add salt and pepper and stir well to blend
  • 4. Turn crockpot to medium or low and cook for 6-8 hours until beans are tender and thickened into a sort of soup.
  • 5. Good served with cornbread and fresh green or sliced onions.

Easy Baked Cajun Pork Chops image

Now to be honest, if you want to do these right you should check out the Paul Prudhomme recipe I've also posted. But... I make them this way when I'm low on time or energy and I think they are pretty good! They are baked instead of fried which is healthier but also means you aren't tied to the stove. Sometimes I leave out the tomatoes and serve with spanish rice instead. Cooking time is a guess. My oven cooks fast so I'm never sure what to tell people!

1/2 tablespoon Mrs Dash's extra spicy seasoning
1/3 cup butter, melted
1 cup diced tomato (can use canned)
1/4 cup chopped onion
2 garlic cloves, minced

  • Sprinkle spice blend evenly over meat.

1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon rubbed dried sage leaves
½ teaspoon garlic salt
1 ½ teaspoons extra-virgin olive oil
4 center cut pork chops

Steps:

  • Mix paprika, cumin, black pepper, cayenne pepper, sage, and garlic salt on a plate. Liberally coat each pork chop with the spice mixture.
  • Heat olive oil and several pumps of non-stick, butter-flavored spray in a large skillet over high heat. Place pork chops in the skillet, reducing heat to medium.
