CHICKEN, SHRIMP AND SAUSAGE CAJUN PASTA
This is a spicy dish. If you do not tolerate heat, adjust spices or omit cayenne and Cajun seasonings and use mild sausage.

Steps:
- 1. Cook pasta per directions on box, set aside.
- 2. In large Dutch oven, brown chicken and sausage in hot oil. Remove and drain.
- 3. Add onion, green and red peppers, celery, bell pepper, thyme, oregano, paprika, salt, cayenne pepper and Cajun seasoning to the pan. Cook and stir for about 5 minutes until onions and peppers are tender.
- 4. Add pasta, tomatoes with juice and tomato sauce, chicken and sausage into the Dutch oven. Bring to a boil.
- 5. Stir in shrimp and parsley. Cover and cook for 5-8 minutes longer or until shrimp curl and turn pink. Serve.

- Put all into crock pot except for last 4 ingredients with thighs at bottom.
- Cook on low 8-10 hours or high 4-5 hours.
- In last hour of cooking add shrimp, hot sauce, and lemon juice.
- Serve over rice.

- 1.Place the chicken thighs in the bottom of the slow cooker. 2.Add the remaining ingredients except for the shrimp, lemon juice, hot sauce and rice. 3.Cover; cook on Low for 8 to 10 hours or on High for 4 to 5 hours. 4.In the last hour of cooking, add the shrimp, lemon juice and hot sauce. 5.Serve over the hot rice.
CAJUN CHICKEN AND SHRIMP
I have not tried this recipe, but am posting here for safe keeping and in the hopes someone on Zaar will try it and enjoy it. This was in a recent issue of Woman's Day magazine. My plan is to use red bell pepper and maybe add some red pepper flakes for some kick. I listed the chicken parts separately, but ideally the chicken should just equal 1 1/4 lb. If you try it, I hope you enjoy it!

Steps:
- Use a large non-stick skillet, spray with nonstick spray.
- Heat over medium-high heat.
- Add chicken and cook 5 minutes or until browned, turning once.
- Add sausage, onion, pepper and celery, saute for 3 minutes or until sausage is browned.
- Stir in water, rice and seasonings, bring to a boil.
- Cover and simmer 15 minutes, until chicken and rice are almost tender.
- Stir in shrimp and okra, cover and cook for 5 minutes, stirring 1-2 times, until rice and okra are tender.
- Serve with your favorite hot sauce.
