CAFE PASQUAL'S CILANTRO RICE

Number Of Ingredients 9

1 1/2 cups long grain white rice
2 cups water
1 1/2 teaspoons kosher salt
1 cup loosely packed fresh cilantro
1/2 cup chopped white onion
1/4 cup chopped scallion
1 1/2 tablespoons chopped fresh jalapenos, including seeds
1 1/2 tablespoons fresh lime juice
1 teaspoon olive oil

Steps:

  • Bring rice, water & 1 teaspoon salt to a boil. Reduce heat, cover pan & simmer 20 minutes.
  • Remove from heat and let stand, covered, for 5 minutes. Remove lid & fluff with a fork.
  • While rice is cooking, using a blender, puree cilantro, onion, scallion, jalapeno, lime juice, olive oil & remaining 1/2 teaspoon salt. (If needed, can add 1-2 tablespoons water to get a smooth puree.).
  • Add mixture to rice & stir with a fork till well blended.

I found this recipe on smartsource.dom and revised it. It is unbelievably good; it's packed with flavour. If you are a cilantro lover, this is something you can't miss.

2 tablespoons olive oil
1 small onion, chopped
1 large jalapeno, seeded and minced
2 cloves garlic, minced
2 cups white rice (Japanese best)
1 (14 1/2 ounce) can reduced-sodium fat-free chicken broth
1 (4 ounce) can diced green chilies (mild)
1/2 teaspoon salt
3/4 cup lightly packed chopped cilantro

Steps:

  • In a large heavy saucepan, heat oil over medium high heat.
  • Add onion and cook 2 minutes.
  • Add jalapeno and garlic, cook 2 to 3 minutes, until onion is soft and beginning to color.
  • Add rice and cook, stirring constantly, until grains turn translucent, 1 to 2 minutes.
  • Pour in broth and 1 can water and bring to a boil.
  • Stir in chiles and salt.
  • Cover, reduce heat to low and cook 15 to 17 minutes, or until liquid is absorbed and rice is tender.
  • Stir in cilantro just before serving.

This is my version of the Cilantro Lime rice that Cafe Rio uses for their Burritos!! You can also serve it as a side dish...Enjoy!!

1 cup white rice (not instant)
2 cups chicken broth
1 tablespoon lime juice
1 garlic clove
1 pinch salt
1/2 cup fresh shredded cilantro
0.5 (14 ounce) can green enchilada sauce

Steps:

  • Cook the rice as directed on the rice package -- except use broth instaed of water. When rice is done fluff with a fork then add cilantro, garlic, lime juice, salt and 1/2 can green enchilad sauce and mix well with a fork!
  • This rice is "FEN"tastic -- Enjoy it!

vegetable oil cooking spray
1/2 cup green onion, sliced
1 cup long grain rice
1 small orange, zest of
2 1/4 cups water
2 tablespoons fresh cilantro, chopped
salt and pepper

Steps:

  • Spray medium saucepan with cooking spray; heat over medium heat until hot.
  • Saute onions until tender, 3-5 minutes.
  • Add rice and orange zest to saucepan; cook over medium heat until rice is lightly browned, 2-3 minutes, stirring frequently.
  • Add water to saucepan and heat to boiling; reduce heat and simmer, covered, until rice is tender, 20-25 minutes.
  • Stir in cilantro and season to taste with salt and pepper.
