This recipe is really light and refreshing. I had this at a BBQ and loved it, so I made it tonight. Mine tasted a lot more lemony. It was great, but I'll probably use a little less lemon zest next time. I served the cheese on the side to allow my guests to choose if they wanted to add it or not. 12 ounces orzo pasta
1 bunch fresh asparagus, cut into 1-inch pieces
1 pint grape tomatoes or 1 pint cherry tomatoes, halved
1 lemon, zested and juiced
4 tablespoons extra virgin olive oil
1 garlic clove, minced
2 tablespoons fresh parsley, minced
kosher salt
fresh ground pepper
parmigiano-reggiano cheese, grated (optional)

Steps:

  • Bring 2 large pots of water to boil. Add a big pinch of salt in each.
  • To one pot, add asparagus and blanch, about 2 to 3 minutes, depending on the thickness of your asparagus. Place blanched asparagus in a bowl of ice water to stop the cooking and keep them green.
  • To the second pot, add the orzo. Cook per package instructions. When tender, drain and place in a large bowl. Add blanched asparagus and tomato halves.
  • Mix olive oil, lemon zest, lemon juice, garlic, salt and pepper in a small bowl. Stir into orzo and vegetables. Stir in parsley and grated Parmigiano Reggiano (omit the cheese to make this vegan.)
  • This can be served warm, room temperature or cold.

3 cups chicken broth
1/2 teaspoon crushed saffron
1 lb thin asparagus, sliced into 1/2 inch pieces

Steps:

  • heat butter in skillet, add orzo and stir.
  • add broth and saffron, bring to boil, cover, reduce heat to simmer, cook 8 minutes add asparagus, cover, cook 5 minutes more.
  • uncover and simmer until liquid is absorbed.
  • stir in parmesan cheese, salt, pepper.
  • serve in a bowl garnished with shavings.

4 boneless chicken breast halves
1 (10 3/4 ounce) can chicken broth
1 cup water
1 cup uncooked orzo pasta
1 (1 lb) bag frozen mixed vegetables (broccoli green beans pearl onions and red peppers)
3 tablespoons caesar salad dressing
1/8 teaspoon fresh coarse ground black pepper

Steps:

  • Heat oil in a 10-inch skillet over medium-high heat.
  • Cook chicken in oil about 10 minutes, turning once, until brown.
  • Remove chicken from skillet; keep warm.
  • Add broth and water to skillet; heat to boiling.
  • Stir in pasta, heat to boiling.
  • Cook uncovered 8 to 10 minutes, stirring occasionally, until pasta is tender.
  • Stir in frozen vegetables and dressing.
  • Add chicken.
  • Sprinkle with pepper.
  • Heat to boiling; reduce heat.

3 large garlic cloves, crushed
2 tablespoons Dijon mustard
1 tablespoon fresh lemon juice

1/2 cup grated Parmesan cheese (about 2 ounces)
1 pound asparagus
Purchased croutons

Steps:

  • Add first 5 ingredients to blender. With machine running, gradually add oil. Add 1/4 cup cheese. Season dressing to taste with pepper.
  • Bring pot of salted water to boil. Add asparagus and cook until just tender, about 3 minutes. Drain. Cool under cold water and drain. (Can be prepared 6 hours ahead. Cover dressing and asparagus separately.)

The asparagus can easily be changed to another vegetable; I have successfully used brussels sprouts with a very pleasing result.

1 bunch asparagus, aprox. 1 lb
1 tablespoon extra virgin olive oil
2 -3 garlic cloves, chopped
1 dash sea salt
6 ounces orzo pasta
6 sun-dried tomatoes packed in oil
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon oil from tomatoes
1 tablespoon balsamic vinegar

Steps:

  • Preheat oven to 430 f. Wash asparagus, trim off woody ends, and then cut asparagus spears into 1 inch pieces. Combine in a baking dish with olive oil, garlic, and salt. Roast asparagus in oven for ~15 minutes, until just fork tender. Let cool slightly.
  • Cook orzo in salted water, according to package directions.

1 lb asparagus spear
1/2 cup chopped onion
3 cloves garlic, minced
1 tablespoon olive oil
6 cups reduced-sodium chicken broth
1/2 cup dried orzo pasta or 1/2 cup other tiny pasta
3 cups snow pea pods, ends and strings removed
6 cups torn fresh spinach
1/4 teaspoon pepper
1/4 cup pesto sauce (optional)
1/4 cup finely shredded parmesan cheese

Steps:

  • Snap off and discard woody bases from asparagus.
  • Bias-slice asparagus into 1-inch-long pieces.
  • Set aside.
  • In a 4-quart Dutch oven cook onion and garlic in hot oil until tender.
  • Add chicken broth and bring to a boil.
  • Stir in pasta; reduce heat and boil gently for 5 minutes.
  • Stir in asparagus and snow peas.
  • Return soup to boiling and cook 3 minutes more.
  • Stir in spinach and pepper; cook 1 minute more.

Steps:

  • In a large saucepan, bring 2 quarts of water to a boil. Add 2 teaspoons salt and the orzo. Return the water to a boil and simmer uncovered for 9 to 11 minutes, until the orzo is al dente. Drain.

1 cup orzo
1 pound asparagus, trimmed and thinly sliced on a diagonal (about 1/4-inch thick)
5 tablespoons extra-virgin olive oil
1 teaspoon lemon zest plus 3 tablespoons lemon juice, plus more as needed (from about 1 large lemon)
1/2 cup panko or homemade bread crumbs
1 small garlic clove, finely grated
1/4 cup finely grated Parmesan, plus more for serving
1/2 cup fresh dill, mint or parsley leaves (or any combination), torn if large

Steps:

  • Bring a medium pot of salted water to a boil. Add the orzo and cook until al dente according to package directions. Two minutes before the orzo is done, add the asparagus. Drain the orzo and asparagus. Wipe out and reserve the pot.
  • While the orzo and asparagus cook, make the dressing: In a large bowl, stir together 3 tablespoons oil and the lemon zest and juice; season to taste with salt and pepper. Add the drained orzo and asparagus and toss to coat. Set aside while you toast the bread crumbs.
  • In the reserved pot, heat the remaining 2 tablespoons oil over medium. Add the panko and cook, stirring, until golden brown, 3 to 5 minutes. Remove from heat, then stir in the garlic and season with salt and pepper.
  • Stir the Parmesan and herbs into the orzo, taste, then season with salt, pepper and additional lemon juice, if desired. Top with the toasted bread crumbs and more Parmesan if you like. Serve warm or at room temperature.
