1 (16 ounce) box mini penne pasta
1 ½ pounds chopped cooked chicken
½ cup diced green bell pepper
2 hard-boiled eggs, chopped
⅓ cup grated Parmesan cheese
⅓ cup chopped red onion
½ (8 ounce) bottle creamy Caesar salad dressing, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain and rinse with cold water.
  • Stir pasta, chicken, green bell pepper, eggs, Parmesan cheese, and red onion together in a bowl. Pour salad dressing over the top and toss to coat. Cover the bowl with plastic wrap and refrigerate until chilled and flavors blend, at least 2 hours.

Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup Parmesan
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated garlic
8 ounces penne pasta
One 8-ounce boneless, skinless chicken breast
1 1/2 teaspoons olive oil, plus more for oiling the grill grates
1 1/2 cups shredded romaine lettuce
1/4 cup finely chopped celery
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire, garlic, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add it to the large bowl and set aside.
  • Prepare a grill or grill pan for medium-high heat. Sprinkle the chicken breast with salt and pepper. Lightly oil the grill grates or grill pan. Grill the chicken, flipping once, until well-marked and the internal temperature registers 165 degrees F on an instant-read thermometer, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Add the grilled chicken, romaine, celery and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3 breasts chicken
3 tablespoons olive oil

2 heads romaine lettuce, cut into 1-2 inch (3cm - 5cm) pieces
1 cup grape tomatoes, cut in half
1 cup crouton
parmesan cheese, to taste
¾ cup caesar dressing

Steps:

  • Boil water, add the pasta, and cook according to package instructions. Drain water, and let the pasta chill.
  • Meanwhile, season each of the chicken breasts with 1 Tbsp. olive oil, salt, and pepper.
  • Grill for six to eight minutes on each side. Cut the chicken into bite-size pieces.
  • In a large bowl combine pasta, romaine lettuce, tomatoes, chicken, croutons, parmesan, and Caesar dressing. Toss gently.

2 boneless skinless chicken breasts season with salt, pepper, garlic
1 (1 lb) package extra-wide pasta noodles, cooked and cooled
1 head romaine lettuce, chopped into two inch pieces
1 red onion, sliced thin
1/2 lb mushroom, sliced thin
1 cup grated parmesan cheese
1 tablespoon anchovy paste
2 tablespoons fresh garlic, chopped
3 tablespoons white wine vinegar
2 tablespoons Dijon mustard
1 teaspoon salt

1 cup olive oil
1/2 cup vegetable oil

This is a great way to use up some of those items that were tucked away in the pantry for "just in case." A caesar pasta salad kit, a can of tender chicken breast chunks, a can of artichoke hearts and some mayo come together to make a great meal that can be on the table in half an hour, tops, and can be served either warm or chilled. Don't skip the crushed crouton topping. It adds a great crunch.

1 box(es) caesar pasta salad kit (aka suddenly salad brand)
salted boiling water to cook pasta
1 tablespoon(s) water
1/3-1/2 cup(s) mayonnaise (i use dukes)
1 can(s) chicken breast chunks,12.5 oz. drained & flaked
1 can(s) quartered artichoke hearts, 8.5 oz. drained & cut bite-size
seasoned croutons, lightly crushed
grated parmesan cheese

Steps:

  • Gather and prep ingredients.
  • Bring 2 to 3 quarts water to boiling; add about 1/2 to 1 teaspoon salt. Add the package of rotini pasta; return to boil, reduce heat to medium-high and gently boil pasta for 12 minutes, stirring occasionally to prevent sticking.
  • While pasta is boiling, mix together 1 tablespoon water and the seasoning packet from the salad kit. Add 1/3 to 1/2 cup mayonnaise, stirring to blend well. Set aside.
  • Drain cooked pasta (do not rinse if you want a warm salad, rinse with cold water for cold salad.)
  • Add drained pasta to bowl with seasoned mayonnaise mixture; mix gently until pasta is evenly coated.
  • Add chicken and artichokes, mixing gently until evenly coated with the mayonnaise mixture. Add more mayonnaise if needed, especially after refrigerating.
  • Just before serving, lightly sprinkle with crushed seasoned croutons and grated parmesan cheese.

 2 tsp thyme
 2 tsp basil
 2 tsp oregano
 ¼ cup parmesan cheese
 1 cup flavored bread crumbs
Mushrooms
 1 tbsp olive oil
 1 cup sliced mushroom
 1 minced garlic clove
 1 tsp of nature's seasoning
Creamy Bacon Caesar Dressing
 ½ lb. crispy bacon, crumbled
 ½ cup Caesar dressing
 ½ cup milk
 1 tsp. nature's seasoning
 1 tsp basil
 1 tsp oregano
 1 tsp thyme

Steps:

  • Combine pasta and lettuce and hold on to cheese till everything else is done. Chicken: Preheat oven to 400F Marinate chicken in wine with ½ nature's seasoning, 1 garlic clove, lemon pepper, ½ thyme, ½ basil and ½ the oregano. When finished, combine remaining ingredients in a shallow dish. Coat the chicken pieces in the mixture. Pour onto greased baking sheet and bake for 40 minutes. Mushrooms: Heat oil in a wok; add garlic and other ingredients and sauté until mushrooms are tender. Take out chicken pieces and add to chicken/bread crumb mixture. Toss around and return to oven. Creamy Bacon Caesar Dressing: Bring milk, dressing and spices to a boil. Turn down to a simmer and add bacon bits. Simmer for about 20 minutes. Toss ingredients together when everything is ready. You can serve salad warm right away with baked chicken mixture or cool all ingredients and combine later. I love Caesar Salads and combined with the chicken and pasta it makes for a great dish to take to a potluck or just whenever you want something light. *You could substitute 1 (8 ounce) package of imitation crabmeat for the chicken to make it a Seafood version of the salad. Serve on a bed of romaine lettuce if desired.

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored. Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad.

8 ounces chicken tenders, cut in 3-inch pieces
1 cup Italian seasoned breadcrumbs
1/2 teaspoon red pepper flakes
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 egg, beaten well
2 tablespoons olive oil, to saute the chicken in
6 ounces cavatappi pasta
1 bunch arugula
4 tablespoons parmesan cheese, as a garnish
4 tablespoons mayonnaise
1 tablespoon minced garlic
2 tablespoons parsley
1 tablespoon lemon juice
2 tablespoons chicken broth
1 teaspoon minced garlic
1 teaspoon anchovy paste

Steps:

  • Chicken -- I set down 2 bowls. One with the egg and one with the bread crumbs with the salt, pepper and red pepper. Now, dip the chicken in the egg and then the bread crumbs and then into a saute pan heated to medium high heat with the olive oil. Cook all the pieces until golden brown on each side. They should only take a couple of minutes per side. Quick cooking. Remove and set on a plate lined with a paper towel to drain any grease. Cover with foil or a lid to keep warm. TIP: I just throw mine in the microwave, no heat, the closed space tends to keep them warm until the salad is ready.
  • Pasta -- make the pasta according to directions, then drain well and set to the side and just let it cool. TIP: stir in 1 drizzle of olive oil so the noodles don't stick together.
  • Dressing -- In a mini food processor add everything for the dressing and mix. Mix until you get a nice smooth creamy dressing. Taste for any additional salt or pepper.
  • Salad -- combine the cooled pasta, arugula and dressing and toss well. Then add the chicken and lightly toss. Top each salad plate with some of the parmesan for a garnish.
  • Serve this with a nice toasted slice of bread and you got an amazing dinner. This is a lighter healthier version so don't expect a heavy creamy sauce with this. This is a heart healthy recipe.

2 -3 chicken breasts, cubed
salt
pepper
1 teaspoon garlic salt
1 lb bow tie pasta or 1 lb spiral pasta, cooked
2 bunches broccoli, chopped
8 ounces sliced mushrooms
8 ounces shredded carrots
6 -8 ounces caesar salad dressing
soy sauce (to taste)
peanuts, lightly chopped

Steps:

  • Cook chicken along with salt, pepper and garlic salt in sauce pan till browned. Steam broccoli, mushrooms and carrots until slightly tender.
  • Mix the chicken, veggies, Caesar salad dressing and soy sauce to taste. Top with chopped peanuts - as many as you desire and serve cold.

3 cups roasted boneless skinless chicken breast halves
3 cups hot, cooked penna rigate pasta (about 6-oz uncooked, tubular pasta)
2 cups spring mix lettuce or romaine hearts
1 1/2 cups halved cherry tomatoes
1/2 cup thinly sliced fresh basil
1/2 cup green onion
1/4 cup shredded carrot
1/3 cup T. Marzetti's Creamy Ceasar salad dressing
1/4 cup chopped fresh parsley
4 ounces crumbled feta cheese
1 clove minced garlic

Steps:

  • Combine all ingredients in a large bowl; toss well to coat. Serves 4 to 6
