Born out of a need to rid the fridge of extras, this Mexican casserole recipe is flexible. Add more corn to make it sweeter, if you like. You can also spice it up as hot or mild as you want. -David Mills, Indianapolis, Indiana

1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. , Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave 1-2 minutes or until spreadable., Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half the beef, bean mixture, corn and cheese; repeat layers. , Bake, uncovered, until cheese is melted, 40-45 minutes. Let stand 5 minutes. If desired, serve with lettuce, tomatoes, olives and sour cream.

My Favorite Mexican Casserole image

This is super quick and delicious. The only thing I'd do differently is add some jalapeno peppers to make it spicier. It's a great way to use the bottom of the tortilla chip bag. 1 1/2 cups tortilla chips, crushed
1 lb chicken, shredded and cooked
15 1/2 ounces garbanzo beans, rinsed and drained
15 1/2 ounces kidney beans, rinsed and drained
15 1/4 ounces whole kernel corn, rinsed and drained
8 ounces tomato sauce
1 cup salsa
1 cup red onion, chopped
1 green bell pepper, cut into 1/4 inch dice
1/4 cup cilantro leaf, chopped
salt
fresh ground black pepper
6 ounces monterey jack cheese
6 ounces sharp cheddar cheese
2 cups tomatoes
1 cup sour cream
1/2 cup cilantro leaf, chopped (fresh)

Steps:

  • Preheat oven to 350.
  • Grease a 13x9" baking dish and scatter crushed tortilla chips evenly on the bottom.
  • Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, sant, and pepper in a bowl.
  • Place half the mixture evenly in the baking dish.
  • Combine the cheeses and sprinkle half over mixture.
  • Cover with the remaining half of the chicken-and-bean mixture and sprinkle the remaining cheese over top.
  • Bake for 30 minutes.
  • Let stand for 5 minutes before serving.
  • Serve the garnishes in bowls so guests can top their portions with diced tomatoes, sour cream, and cilantro.

EASY MEXICAN CASSEROLE

This is an easy and very tasty dish. I often substitute ground turkey and low fat dairy products and it is still delicious! Serve with chips, salsa and green salad.

1 pound lean ground beef
2 cups salsa
1 (16 ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
½ cup chopped green onion
½ cup chopped fresh tomato
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  • Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly.

I found this delicious recipe in a Southern Living Cookbook that I made a few minor tweaks to. This is a crowd pleaser that is very filling. You can use Spicy Enchilada Sauce if you want to make it really spicy though we find the mild sauce gives it enough kick.

2 lbs lean ground beef
1 yellow onion, chopped
2 teaspoons garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can enchilada sauce
1 (5 ounce) can evaporated milk
1 (8 ounce) package monterey jack cheese or 1 (8 ounce) package mexican cheese
1 (6 1/2 ounce) package corn tortillas, cut into fourths

Steps:

  • Cook the first five ingredients in a large skillet. Drain grease and return to skillet.
  • Add both the cans of soup, enchilada sauce and evaporated milk.
  • Cook over low heat until mixture is warm and add the entire package of cheese stirring until the cheese melts.
  • Remove from heat.
  • Place 2 cups of the beef mixture in a lightly greased 13 X 9 baking dish.
  • Top with 1/3 of the tortilla pieces.
  • Repeat layers twice ending with the tortilla pieces on top.
  • Bake uncovered at 350 degrees for 25 to 30 minutes or until bubbly around edges.
  • Top each serving with sour cream if desired.
