QUICK CABBAGE WITH BACON AND APPLES



Quick Cabbage with Bacon and Apples image

8 ounces thick-cut bacon
One 2-pound head red cabbage, sliced thinly (about 12 cups)
1/4 cup apple juice
1 tablespoon honey
1 tablespoon apple cider vinegar
1 Gala apple, thinly sliced
Kosher salt and freshly ground black pepper
4 scallions, finely chopped

Steps:

  • Spread the bacon out in a large nonstick saute pan. Place over medium-high heat and cook until crispy, about 6 minutes per side. Remove the bacon and place on a paper towel-lined plate, leaving the fat in the pan. Once cool to the touch, crumble the bacon into bite-sized pieces.
  • Reduce the heat to medium and add the cabbage to the pan. Cook, stirring frequently, until slightly wilted, about 4 minutes. Pour the apple juice, honey and vinegar around the sides of the pan. Cook, stirring occasionally, until the liquid has cooked off, 2 to 3 minutes more. Add the apples and sprinkle with 1 teaspoon salt and 3/4 teaspoon black pepper. Toss to combine. Turn off the heat and stir in the scallions and crumbled bacon.
  • Transfer to a serving platter and serve warm.

5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
  • Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

2 cups uncooked fine egg noodles
3/4 pound bacon strips, diced
1/2 medium head cabbage, thinly sliced
1/4 teaspoon salt
Dash pepper

Steps:

  • Cook egg noodles according to package directions. In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 3 tablespoons drippings. , Add cabbage to drippings; cover and cook on low for 20 minutes or until cabbage is tender, stirring occasionally. Drain noodles. Stir into skillet. Add bacon, salt and pepper; heat through.

2 tablespoons finely chopped cooked bacon
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper, or to taste
1 medium head cabbage, cored and quartered

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix bacon, lemon juice, Worcestershire sauce, olive oil, salt, and pepper together in a bowl. Set aside.

large knob of butter
100g smoked streaky bacon , cut into small pieces
1 garlic clove , finely chopped
few thyme sprigs
1 celeriac , cut into batons
2 carrots , cut into batons
1 Savoy cabbage , shredded
small glass (125ml) white wine

Steps:

  • In a large pan melt the butter. Add the bacon and sizzle for 5 mins until golden. Add the garlic and thyme to the pan and stir for 1 min. Take the pan off the heat, remove the bacon mixture and reserve.
  • Add the celeriac and carrot batons into the now empty pan with a little of the bacon-flavoured butter. Gently cook for 10 mins until soft, then add the cabbage and cook for 5 mins until it starts to soften. Add the bacon and garlic back to the pan, then add the white wine. Allow the wine to evaporate for a few mins then season the mixture and serve. This can be made ahead and left in the pan, then reheated.
