Number Of Ingredients 9

1/3 cup frozen orange juice concentrate, thawed
1/3 cup unseasoned rice vinegar
1/3 cup canola oil or vegetable oil
2 (8-ounce) bags coleslaw mix
4 ears of fresh corn, shucked, kernels cut from cob
2 medium carrots, peeled, coarsely grated
1 medium red bell pepper, stemmed, cored, cut into thin strips
6 medium green onions, thinly sliced
1/2 cup chopped fresh cilantro

Steps:

  • Whisk orange juice concentrate, rice vinegar, and canola oil in small bowl. Season with salt and pepper. DO AHEAD Dressing can be made 1 day ahead. Cover and refrigerate.
  • Combine slaw mix, corn kernels, carrots, red bell pepper strips, sliced green onions, and chopped cilantro in large bowl. Toss with enough dressing to coat. Season slaw to taste with salt and pepper. Let stand 15 minutes for flavors to blend. Toss again and serve.

6 cups shredded red cabbage
3 cups shredded carrots
¼ cup finely chopped shallots, from 1 to 2 shallots
1 clove garlic, minced
½ cup coarsely chopped fresh cilantro (parsley may be substituted)
Zest and juice from 1 orange (about 1 teaspoon zest and ¼ cup juice)
¼ cup fresh lime juice, from 2 limes
⅓ cup vegetable oil
1½ tablespoons sugar or honey
1 teaspoon salt
½ teaspoon freshly ground black pepper

Steps:

  • Combine all of the ingredients in a large bowl and toss well. Cover and refrigerate for at least 1 hour or overnight. Stir well, then taste and adjust seasoning, if necessary (I sometimes add a bit more sugar or honey).

2 navel oranges
3 tablespoons champagne vinegar
2 tablespoons extra-virgin olive oil
1 small head Savoy cabbage, cored and shredded (2 cups)
1 cup fresh flat-leaf parsley
1 cup fresh basil, leaves torn
3 scallions, thinly sliced (2 tablespoons)
Coarse salt and freshly ground pepper

Steps:

  • Cut peel and pith from oranges. Slice oranges along membranes to release segments, letting segments and any juices fall into a bowl. Squeeze juice from membranes over segments, and discard membranes.
  • Mix 2 tablespoons of the orange juice and the champagne vinegar in a small bowl. Pour in oil in a slow, steady stream, whisking constantly until emulsified.
  • Combine cabbage, parsley, basil, scallions, and orange segments in a serving bowl. Add dressing, and toss to coat. Season with salt and pepper.

1/4 cup milk
1 tablespoon lemon juice
1 tablespoon sugar
1/8 teaspoon salt
1/2 cup chopped pecans, toasted

Steps:

  • In a large bowl, toss cabbage, oranges, apples, grapes and currants; cover and refrigerate. In a small bowl, combine the mayonnaise, milk, lemon juice, sugar and salt; cover and refrigerate. Just before serving, stir dressing and pecans into salad.

2 tablespoons Rice Wine Vinegar
1/4 cup extra virgin olive oil
1 tablespoon swerve (or maple syrup)
1 teaspoon cumin
1/4 teaspoon cayenne pepper

  • In a large bowl combine cabbages, carrots, cilantro and scallions.

1 large orange, zested and juiced
2 teaspoons white wine vinegar
2 teaspoons sesame oil
1/2 teaspoon salt
4 cups green cabbage, thinly sliced
4 cups red cabbage, thinly sliced
4 scallions, thinly sliced
3 medium carrots, shredded
8 cabbage leaves, for garnish
black sesame seed, for garnish
white sesame seeds, for garnish

Steps:

  • In a bowl, whisk together orange juice, 1 1/4 teaspoon orange zest, vinegar, sesame oil and salt until blended.
  • Add green cabbage, red cabbage, scallions and carrots; toss gently to coat. Cover and chill 1 hour.
  • Arrange cabbage leaves on serving platter, if desired. Top with slaw.
  • Garnish with black and white sesame seeds, if desired.
