This is a copycat recipe of delicious buttery cookies that taste just like Panera's.These cookie will melt in your mouth and are very addicting, so good, you won't be able to eat just one- I have been known to horde these.

1 c real butter, room temperature
2 c cake flour
3/4 c powdered sugar
1/2 tsp baking powder
1 tsp vanilla

Steps:

  • 1. Combine all ingredients; use hands to knead until ingredients are blended. Press dough into parchment paper covered 9x13 inch pan to about 1/4 inch thickness.(you may want to grease the pan slightly so the parchment paper does not slide around as you press the dough to 1/4 inch thickness) . Before baking mark rectangle cookie lines with knife to make them look more authentic Panera shortbread cookie look .   • 2. Bake at 325^ for about 20 minutes check after 15 minutes, or until light and not browned. Don't over bake. Cut into cookie squares when cool.

KITTENCAL'S BUTTERY FLAKY SHORTBREAD PAN COOKIES

This recipe will make two pans of the most delicious flaky buttery shortbread and may I add these travel well for shipping ;-) --- using a food processor insures that you will have a very tender flaky cookie, plus they take only minutes to make, these may be made up to 2 weeks in advance and store at room temperature in an airtight container, but they won't last that long lol! and they only get better with time! If you are using unsalted butter then increase the salt to 1/4 teaspoon --- make certain to slice the cookies while it is still warm and then cool completely --- while the baked cookie dough is still warm you can cut into small shapes or circles if desired --- you will *love* these!

1 1/2 cups flour
1 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
1 cup cold butter, cut into pieces (make certain that butter is very cold, place in freezer for about 5-8 minutes)
1 cup red and green maraschino cherries, chopped or 1 cup chopped dried cranberries
powdered sugar, for dusting (optional)

Steps:

  • Set oven to 325°F (set oven rack to second-lowest position).
  • Prepare two (8-inch) round cake pans (can use 8 x8 -inch square pan also).
  • In a food processor blend the first 4 dry ingredients.
  • Add in the cold butter pieces, and blend for about 30 seconds or more to combine.
  • Mix in the chopped maraschino cherries or cranberries.
  • Divide the mixture evenly between the two pans, then press the dough in firmly.
  • Bake for about 30-35 minutes (longer for more crispy) or until baked through and pale golden (don't over bake!).
  • Cool the baked dough in pans for 10 minutes.
  • While the baked dough is still warm cut into small squares (or wedges if using a round pan) then cool completely.
  • Using a spatula transfer to a plate.
  • Sprinkle lightly with powdered sugar if desired.
  • Delicious!

This is my mom's tried and true shortbread recipe. She got it from my grandmother. We make these every Christmas, and look forward to them every year.

2 cups flour
1 cup butter, softened
1/2 teaspoon baking powder
1/2 cup sugar
1 large egg
1 freshly grated lemon zest

Steps:

  • Sift flour and baking powder together in a small bowl.
  • Cream butter, add sugar slowly, mixing well.
  • Mix in egg and lemon zest.
  • Add flour/baking powder mixture, mix in well.
  • Shape into balls about the size of a golf ball, place on pan, flatten slightly with the bottom of a glass.
  • Bake at 300° for 15-20 minutes, just until a bit golden on the edges.
  • These last well if kept in a tightly covered container, and actually taste even better after a day or two as the flavors develop.

These buttery shortbread cookies are simply divine. They are melt-in-your-mouth amazing, bursting with the goodness of butter, and easily dressed up or down.

2 cups butter, cold and cut into pieces
1 cup packed light brown sugar
4 1/2 cups all purpose flour, divided
Optional: Your favorite sprinkles

Steps:

  • Preheat oven to 325F. Line baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, add butter and brown sugar. Using paddle attachment, mix until fluffy and light. Add 3½ cups of the flour and mix until combined.
  • On a large board, sprinkle ½ cup flour. Knead dough by hand for 5 minutes, adding as much of the remaining ½ cup flour as needed to make a soft dough. The dough should end up soft and pliable, similar to play-dough, not sticky. Work in desired amount of sprinkles, if using. (You may not end up using all the flour, depending on how your dough feels.)
  • Form a ball, wrap tightly, and chill for about 30 minutes. Roll dough out to about ½ inch thickness. Either cut into 3x1 rectangular strips, triangles, or use cookie cutter for shapes. Place each cookie 2 inches apart on baking sheet. Poke cookies with fork to design if not using sprinkles.
  • Bake 15-20 minutes, or until edges are golden brown. If your shapes are smaller, bake less time. Bake longer for bigger shapes.
  • Cool completely on wire rack.
