SALT POTATOES WITH BUTTER AND CHIVES

Steps:
- Bring potatoes, salt and 6 cups water to a boil in a 4-quart saucepan over medium-high heat, stirring occasionally to ensure the salt has dissolved. Lower to a simmer, then cook until potatoes are tender, 18 to 20 minutes.
- Pour the water and potatoes into a colander in the sink and leave to air-dry for 5 minutes; you will see the salt start to form on the outside of the potatoes.
- Transfer the potatoes to a serving dish, then pour the melted butter and sprinkle the chives over the top. Toss together, then serve immediately.

Steps:
- Heat oven to 450°F. Spray 18x13-inch rimmed pan with cooking spray.
- In 5-quart Dutch oven, mix potatoes and broth; heat to boiling over high heat. Reduce heat to low; simmer 30 to 35 minutes or until potatoes are tender when pierced with fork; drain, reserving broth for another use if desired. Shake pan with potatoes over low heat to dry. Remove from heat.
- In small bowl, mix melted butter and garlic. Pour 1/4 cup of the butter mixture over potatoes; toss to coat thoroughly. Place potatoes in pan. Use bottom of glass or measuring cup to flatten each potato to about 1/2-inch thickness. Drizzle top with remaining butter mixture; season with salt.
- Bake 35 to 40 minutes, turning once, until browned and crispy. Transfer to serving platter; sprinkle with chives.

- 1. Bring a medium sized pot to a boil !
- 2. Wash and cut potatoes in half, place in boiling water, boil for 15mins, Drain.
- 3. While potatoes are in the strainer, place the butter into the hot pan, and melt, replace potatoes back into their original pan, add chives and salt and pepper.
- 4. Replace lid and hold firmly on the pot, flipping the pot back and forth in the pan, so the butter and seasonings cover and coat every last potato. Place potatoes in a serving dish ( or simply leave in the pot, less dishes anyways) and Serve immediately,I hope this side dish makes its way to your table very soon! Enjoy!! Tip** can change this side dish up some what, can add Bacon,*lets face it, what could go wrong with bacon!* and or minced garlic(add to the water while boiling potatoes, or add garlic powder to the finished product (1/2 tsp)

- Bring a 2 quart sauce pot half full of water to a boil.
- While water is coming to a boil dice potatoes to 1/4 inch cubes.
- Add cubed potatoes to boiling water and cook on a slow boil until just fork tender (still firm).
- Drain in a colander and return potatoes to pot.
- Add butter cubes and gently stir until butter has melted.
- Stir in minced chives and season to taste with salt and pepper.

- Bring water to a boil as you slice potatoes thick or thin, leaving the skin on. (I keep my slices "potato chip shaped" and not too thin!).
- Boil potatoes until tender (when a fork can be inserted with ease), about 15-20 minutes.
- Drain in colander.
- Place potatoes in a big bowl and add plenty of butter/margarine. (I use at least 2-3 tablespoons maybe more, depending on number of potatoes used and whatever our mood happens to be!).
- Then sprinkle chives on top of potatoes to taste and for a little more color.
- *Add salt and pepper to taste.
- *Can add some bacon bits and shredded cheese on top or mixed if you like. I haven't ever tried that, but sounds like it might be good.

- Bring a large pot of water to boil with 1 tablespoon kosher salt.
- Wash the potatoes. Dice them into 3/4 to 1″ wide bite-sized pieces if they're large, or cut them in half if they are small (you can also boil baby red potatoes whole). Once the water is boiling, add the potatoes and boil 12 to 15 minutes until tender when pierced with a fork (you may need longer if boiling whole).
- Drain and remove the potatoes to a bowl. Gently toss them with the butter, herbs, fresh ground black pepper and ¾ teaspoon kosher salt (or more or less to taste: add salt until the flavor pops!).
