NO BAKE BUTTERSCOTCH MARSHMALLOW BARS
A simple no bake recipe for butterscotch marshmallow bars with coconut and walnuts! This is a classic holiday no bake treat!

Steps:
- In a large pot over medium-low heat, combine the butter, peanut butter, and butterscotch chips. Stir frequently until the mixture is completely melted.
- Remove from the heat and stir in coconut, walnuts, and marshmallows. Pour the mixture into an ungreased 9x13 inch pan and spread to even it out.
- Put the pan in the refrigerate to set, then cut into bars.

Steps:
- In large bowl, mix cereal, peanuts and marshmallows.
- In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered on Medium to Medium-High (50 to 75%) in 1-minute increments, stirring after each minute, just until mixture is smooth and melted. This should take 3 to 4 minutes.
- Pour over cereal mixture, using large wooden spoon to mix until cereal mixture is thoroughly coated. Drop by spoonfuls onto waxed or cooking parchment paper.
- Let stand 15 to 20 minutes to set.

PEANUT-BUTTERSCOTCH BITES
This is another recipe that I got off of the back of a Kellog's Rice Krispie box. I haven't tried it yet, but plan to in the near future! Cook time is time for the bars to set.

Steps:
- In 3-quart saucepan, combine butterscotch chips and peanut butter.
- Cook over low heat, stirring constantly, until smooth.
- Remove from heat.
- Stir in Rice Krispies cereal, mixing until well coated.
- Press mixture evenly into 9x9x2" pan coated with cooking spray.
- Chill until firm.
- Cut into bars to serve.
- Store in airtight container in refrigerator.
- For variation, add one of the following with cereal: 1/2 cup mini marshmallows, 1 cup peanuts, 1 cup raisins, or 1 cup coconut.
