When I was young, friends of our family traveled to Hawaii and brought back macadamia nuts. My mom used them in this recipe. It's a tasty twist on traditional pecan pie.

1 sheet refrigerated pie crust
3 large eggs
1 cup dark corn syrup
2/3 cup sugar
2 tablespoons butter, melted
2 teaspoons vanilla extract
2 cups chopped macadamia nuts

Steps:

  • Unroll crust and place in a 9-in. pie plate; flute edge and set aside. In a small bowl, beat the eggs, corn syrup, sugar, butter and vanilla until combined. Stir in the nuts. Pour into crust. , Bake at 325° for 50-55 minutes or until center is set and top is golden brown. Cool on a wire rack. Refrigerate leftovers.

1 cup brown sugar
6 cups sliced apples
1/4 cup flour

Steps:

  • Melt butter; add flour, sugar and hot water.
  • Cook until thick; add apples.
  • Cook until tender; add vanilla.
  • Put in baked pie shell; cool.
  • Serve with whipped cream.
  • Bake shell ahead of time.

1/3-1/2 c light corn syrup
2 c apples, coarsely shredded
1/4 c butter, melted
1 tsp vanilla
1/4 tsp salt
1/4 tsp cinnamon
1 pkg butterscotch chips (11 oz.)
1 c macadamia nuts, coarsely chopped
1 pie shell, 9 inch, unbaked

Steps:

  • 1. Combine eggs, corn syrup, apples, butter, vanilla, salt and cinnamon in large bowl: mix well.
  • 2. Stir in nuts and chips.
  • 3. Pour into pie shell. Put pie on cookie sheet.
  • 4. Bake at 375 degrees for 45-50 minutes.
  • 5. Cool on wire rack for 2 hours.
  • 6. Serve immediately or cover and refrigerate.

⅔ cup white sugar
3 eggs, lightly beaten
1 (6.5 ounce) jar macadamia nuts, coarsely chopped
¼ cup butter, melted
1 (9 inch) unbaked pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the dark corn syrup, sugar, and eggs. Stir in macadamia nuts and melted butter. Pour into pie shell.
  • Bake in preheated oven for 50 to 60 minutes, or until filling is set. If necessary, cover edge with foil to prevent overbrowning.

1 cup light corn syrup
3 tablespoons butter
1/2 cup brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
3 eggs
1 1/2 teaspoons vanilla extract
1 (6 1/2 ounce) jar macadamia nuts, coarsely chopped

Steps:

  • Preheat the oven to 350°F.
  • Unfold the pie crust and place in a 9-inch pie plate or tart pan, pressing the crust firmly into the pan.
  • Trim the edges and flute, if desired.
  • In a large saucepan, combine the corn syrup, butter, brown sugar, flour, and salt over medium heat, stirring until the mixture comes to a rolling boil.

I'm pretty sure my grandmother got this recipe off the back of a bag of butterscotch chips, probably in the late 60's. I remember it was a big hit and we'd request it from her. She was a great pie maker and taught me how to make and roll out crust, a talent I'm glad she shared with me but when she died in 1975, we couldn't find...

9 in unbaked pie shell
5 c peeled and sliced apples
6 oz bag of butterscotch morsels (chips)
cinnamon
1/2 c sugar
1/2 c flour
2 tsp salt
1 c light cream

Steps:

  • 1. Combine apples and butterscotch chips and put in pastry shell. Sprinkle generously with cinnamon
  • 2. Mix sugar, flour and salt. Then add cream, about 1/3 first and stir to make a paste like mixture to get out the lumps first and then add the remaining cream and mix well. Drizzle over the apples trying to coat as many as you can.
  • 3. Place the pie in a large brown paper bag (grocery size) and put in pre-heated over at 375 degrees about 70 minutes. I always use a baking sheet to get it in and out of the oven easier.
