1 ½ cups buttermilk
½ cup warm water (110 degrees F/45 degrees C)
½ cup margarine
¼ cup white sugar
½ teaspoon baking soda
2 (.25 ounce) packages active dry yeast
2 teaspoons salt
5 ½ cups bread flour

Steps:

  • Proof yeast in warm water.
  • Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
  • Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
  • Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
  • Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

BREAD MACHINE BUTTERMILK AND HONEY WHEAT BREAD

This is one of my favorites. The recipe came from Eagle Mills. If you don't have buttermilk, you can substitute 1 cup milk plus 1 teaspoon cider vinegar, and let it sit about 10 minutes before using. You can also add 4 tbs. buttermilk powder to the dry ingredients and substitute water for the buttermilk. I have also used plain all-purpose flour with excellent results.

3 cups warm buttermilk (110° to 115°)

Steps:

  • In a large bowl, dissolve yeast in warm water. Add buttermilk, butter, honey, salt, baking soda, wheat germ and 4 cups flour. Beat until smooth. Gradually stir in enough remaining flour to make a soft dough. , Turn onto a heavily floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide into thirds. Divide each portion into thirds; shape each into a 12-in. rope. Braid three ropes; pinch ends to seal and tuck under. Place in a greased 9x5-in. loaf pan. Repeat with remaining dough. Cover and let rise until doubled, about 45 minutes. , Preheat oven to 350°. Bake 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Combine flour and baking powder in a medium bowl and set aside.
  • Combine sugar and butter in a small bowl; mix for about 1 minute. Add eggs and mix well; add buttermilk and vanilla extract, mixing until well incorporated. Pour over the dry ingredients and mix until incorporated. Fold in blueberries with a rubber spatula. Pour batter into the prepared bread pan.

MOM'S SWEET BUTTERMILK CORN BREAD

This corn bread is a little on the sweet side. It's made with white cornmeal, but yellow works too. I learned to make it from my other mom (MIL). It is baked in a cast-iron skillet. Can be used to make stuffing or put leftovers in a cup with milk and put it in the fridge overnight for a comforting breakfast.

1 Cup buttermilk
1 large egg beaten
4 TBS butter
2 TBS sugar
1 1/2 teas rapid rise or breadmachine yeast
1 tsp salt
3 Cup bread flour

Steps:

  • 1. Measure out all of the ingredients.
  • 2. Place the cold buttermilk in the microwave for 30 seconds to warm. Beat the egg and stir into the buttermilk.
  • 3. Place ingredients into bread machine in order recommended by manufacturer. I put liquid (buttermilk and egg) in first then add the flour, salt & sugar. Cut the butter into small pieces and scatter around on top. Make a little hole in the top center and add the yeast making sure not to let the yeast touch any wet ingredients.
  • 4. Set machine to quick bake with medium crust. If you like a lighter loaf you can set it for light crust.
  • 5. This recipe can also be stirred up using the dough cycle in the machine and baked in a conventional oven at 350 degrees for 35 minutes.
  • 6. Cinnamon Raisin Bread- add 1 teaspoon of ground cinnamon, 4 Tablespoons of sugar and 1/2 - 1/3 cup of raisins. Add the raisins according to manufacturer's instructions for your brand of machine.

1 cup buttermilk
1 1/2 teaspoons salt
3 tablespoons sugar
3 tablespoons butter
2 cups whole wheat bread flour
2 cups white flour (all purpose for Canada and white bread flour if you are in the US)
3 tablespoons rolled oats
3/4 cup warm water
1 teaspoon sugar
1 tablespoon dry yeast
1/2 teaspoon baking soda

Steps:

  • Fit a kneader blade on a heavy-duty stand mixer.
  • Proof 1 tablespoon yeast in 3/4 cup warm water with 1 teaspoon sugar for 8-10 minutes or until foamy.
  • In the stainless steel mixing bowl add in 2 cups EACH white and whole wheat bread flour and the rolled oats; mix slightly to combine with a spoon.
  • In the microwave warm the buttermilk, butter, 3 tablespoons sugar and 1-1/2 teaspoons salt for about 40 seconds until warm (the butter does not have to melt completely) then pour into the stainless steel mixing bowl with the flour.
  • After the yeast is proofed, add into the bowl along with the 1/2 teaspoon baking soda and start mixing/kneading adding in more WHITE flour as needed to create a soft semi-sticky dough (because of the oatmeal and whole wheat flour the dough will be more sticky than usual).
  • Knead for 10 minutes.
  • Remove the dough to a lightly-floured surface; cover with a clean tea towel and let rest for 10 minutes.
  • Gather up the dough and knead gently for about 15 seconds with your hands (it will come together nicely).
  • Generously grease a large bowl with oil.
  • Place the dough in the bowl, cover with plastic wrap or a clean tea towel and let rise for about 1 hour and 15 minutes (it might take more or less time depending on the temperature of your kitchen, or place in a warmed oven to rise).
  • Remove and punch down dough.
  • Place on a floured surface and roll out to about 14x8 inches (does not have to be exact size!).
  • Roll up tightly and tuck the sides under to fit the 8x4-inch loaf pan (I just slice off the ends of the dough enough to fit into the pan and pinch the dough together, it makes for a more even loaf).
  • Cover and let rise for about 30-45 minutes (depending on how warm your kitchen is) in a warm place covered with a clean tea towel.
  • Bake for about 30 minutes in a 375°F oven.

  • Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
  • Keep adding flour until the dough comes together and is no longer sticky.
  • Then let the dough knead in the machine 5-10 minutes.
  • Take out of the bowl and finish kneading by hand until the dough is smooth.
  • Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
  • Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
  • Set aside for the second rising.
  • Heat the oven to 350 degrees F.
  • Bake the loaves until done, about 30-45 minutes.

This is the only loaf bread we eat at home. It won a grand-prize ribbon at the county fair! We grow and grind our own white wheat, so I have the luxury of using fresh flour.

1 ½ cups buttermilk
3 tablespoons honey
2 tablespoons butter
2 ⅓ cups whole wheat flour
1 cup all-purpose flour
2 ½ tablespoons vital wheat gluten
2 teaspoons active dry yeast
½ teaspoon powdered lecithin
½ teaspoon salt
1 pinch ground ginger
1 pinch vitamin C powder

Steps:

  • Combine buttermilk, honey, and butter in a microwave-safe bowl; heat in microwave in 30 second increments until temperature is just below 110 degrees F (43 degrees C).
  • Pour buttermilk mixture into the bowl of a stand mixer and add whole wheat flour, all-purpose flour, wheat gluten, yeast, lecithin, salt, ginger, and vitamin C powder; mix, using the dough hook attachment on low speed, until dough just holds together and sides of bowl are clean. Let dough rest in bowl for 2 minutes; mix again with the dough hook attachment for 2 minutes more.
  • Remove dough from bowl and knead by hand on a work surface until dough is warm and elastic, 2 to 3 minutes.
  • Spray a large bowl with cooking spray and place dough in the bowl, turning it to coat all sides with oil. Spray a piece of plastic wrap with cooking spray and cover bowl with sprayed-side down. Let dough rise until doubled in size, about 1 hour.
  • Gently deflate dough by pressing with your fingers and let rise 10 to 15 minutes more.
  • Turn dough onto a work surface and roll into an 8 1/2x11-inch rectangle. Starting with the short end, roll dough tightly into a roll, pinching the seams shut. Fold the ends underneath the loaf, pinching the edges to form a smooth top.
  • Spray a loaf pan with cooking spray and place loaf in the pan. Cover dough loosely with the sprayed-plastic wrap. Let dough rise 1 1/2 to 2 inches above the pan, 30 to 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from loaf.
  • Bake in the preheated oven for 35 to 40 minutes. Flip bread out of pan using hot pads; internal temperature should read 190 degrees F (88 degrees C). Allow loaf to cool on wire rack before slicing.

I was searching for Zucchini bread to use up some home-grwon zucchini that I had and I came across a recipe that was good, but not great. I decided to modify it and add one of my favorite ingredients, BUTTERMILK. I love buttermilk pound cake and had a recipe for it as well. I love the texture of a light pound cake, but the semi-sweetness of a bread. So, after testing and modifying, I finally have a great recipe, Zucchini Buttermilk Bread. Hope you Like it, I know I do!

1/2 cup butter, softened
1/3 cup oil
1 1/2 cups sugar
1/2 cup brown sugar
1/2 cup buttermilk
3 eggs
1 1/2 cups raw zucchini, shredded
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup walnuts, chopped (optional)

Steps:

  • In a large bowl, combine butter, oil and sugars; blend together until fluffy.
  • In a small bowl, combine flour, salt, baking powder, cinnamon, nutmeg & walnuts (optional).
  • To the butter/sugar mixture, add one egg at a time and mix gently after each addition; mix in vanilla.
  • To the buttermilk, add baking soda (this activates the flavors in the buttermilk).
  • Alternating with buttermilk and flour mixture, add a little at a time to the large bowl containing the wet ingredients. When adding last bit of flour mixture, stir, DO NOT beat or over mix.
  • Pour into a loaf pan and bake at 300 degrees for 1 hour 15 minute to 1 hour 25 minutes or until done in center.
