MOCHA NUT BUTTER BALLS
Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Stir together the flour, cocoa, coffee crystals and salt; set aside.
- In a large bowl, cream together the butter, sugar and vanilla until light and fluffy. Mix in the dry ingredients just until blended. Stir in the pecans. Roll dough into 1 inch balls and place them 2 inches apart onto an ungreased cookie sheet.
- Bake for 15 to 20 minutes in the preheated oven, until the bottoms are lightly browned. Remove from cookie sheets and roll in confectioners' sugar while still warm. Store in a tightly covered container at room temperature.

GREAT GRANDMA'S NUT BUTTER BALLS
Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, cream together the butter, 1 cup confectioners' sugar and vanilla until smooth. Stir in the cake flour, then fold in the pecans. Roll dough into 1 inch balls and place them 1 inch apart onto ungreased cookie sheets.
- Bake for 15 to 19 minutes in the preheated oven, until lightly browned. Cool cookies completely before rolling in additional confectioners' sugar. If you are storing the cookies in a tin, add remaining sugar to the tin.

NUT BUTTER BALLS
Steps:
- Mix butter or margarine with sugar until creamy. Add salt, almond or vanilla extract, flour, and nuts. Mix WELL.
- Chill dough until firm enough to handle.
- Preheat oven to 350 degrees F (180 degrees C).
- Using fingers, shape dough into 1 inch balls or crescents. Place on ungreased cookie sheet. Bake for 12 to 15 minutes or until light brown. While cookies are still warm, roll in powdered sugar. These keep well.

BUTTER NUT BALLS

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, cream the butter, sugar and egg yolks until light and fluffy. Stir in the vanilla, then the flour, and finally the walnuts.
- Roll dough into walnut sized balls, place them 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cookies should be slightly brown. Cool and roll cookies in confectioners sugar.

NUT BUTTER BALLS
I think the concept for these was developed for camping and hiking, but I make these for my kids as a healthier alternative to sweet snacks. There are tons of possibilities for variation on almost all of the ingredient which I like a lot.

Steps:
- Thoroughly mix the first three ingredients.
- Add the oats and coconut plus anything additional and stir to coat.
- Form into a 1 inch round cylinder using wax paper.
- Chill for about 30 minutes or longer and cut and roll into golf ball sized or smaller pieces.
- Roll each ball in a dish of sesame seeds (whole or ground) to coat.
BUTTER-NUT-COCOA SNOW BALLS
Steps:
- Cream butter, sugar and vanilla until fluffy. Add salt and cocoa to flour. Blend thoroughly with creamed mixture. Add pecans, and mix well. Shape into 1-inch balls. Place on cookie sheet and bake for 20 minutes in a 350 degrees oven. do not brown. Cool lightly , and while still warm, roll in powdered sugar, repeating process again. Makes 5 dozen

These cookies are wonderful additions to your cookie and dessert trays for the holidays! Just delicious! Cookies may be made in advance and frozen. The cooking time is per tray.

SWEDISH NUT BUTTER BALLS
Steps:
- Preheat oven to 350 degrees. Mix butter with sugar. Add salt, vanilla, flour, nuts and mix well. Chill dough until easy to handle. Using fingers, shape dough into 1" ball, triangles or crescents. Bake until light brown, about 12 - 15 min. @ 350 degrees. While warm, roll in confectioner's sugar. (Can also be drop cookies) *My mother used to make these at Christmas time.

I love a not too sweet cookie and one that's tender and melts in your mouth. This is another one of my Grams recipes, that we enjoyed growing up. These cookies would make a great addition to your Holiday cookie trays. Enjoy!

Steps:
- 1. Preheat oven to 350 degree F. In a medium bowl, cream butter and add sugar gradually, beating after each addition. Add yolks and lemon juice and beat until fluffy. Add half the flour , then the milk - beat and then add remaining flour. Blend this thoroughly.
- 2. Shape into balls the size of a walnut. Dip the balls into lightly beaten egg whites and roll in nuts to coat.
- 3. Place on a greased baking sheet, or parchment paper. Bake for 20 - 23 minutes. Carefully remove from sheet to cooling rack. Can dust with confectioner's sugar if desired.
