- Preheat oven to 425 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray. In a small bowl, whisk together butter, garlic, lemon juice and lemon zest; set aside. Season tilapia with salt and pepper, to taste and place onto the prepared baking dish. Drizzle with butter mixture. Place into oven and bake until fish flakes easily with a fork, about 10-12 minutes. Serve immediately, garnished with parsley, if desired.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Combine cooked rice, thawed vegetables, and Cheddar cheese in a large bowl.
- Melt butter in a small saucepan over low heat. Stir in lemon juice, bouillon granules, paprika, and pepper.
- Pour 1/2 of the butter sauce over the rice mixture. Stir to combine, then spread in the bottom of the prepared baking dish. Place tilapia fillets in a single layer on top of rice, and pour remaining sauce over top.
- Bake in the preheated oven until fish flakes easily with a fork, 35 to 40 minutes.

- Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
- Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.

I got this recipe from a fund raising cookbook sold at my son's school probably 20 years ago, and my kids really loved this rice.

Steps:
- Combine water and salt. Bring to boiling and pour over rice. Let stand 30 minutes.
- Rinse rice with cold water. Drain well.
- Melt butter in skillet. Add rice and cook over medium heat, stirring frequently, until butter is almost absorbed, about 5 minutes.
- Turn into 1 1/2 quart casserole. Sprinkle with garlic salt.
- Pour broth over.
- Bake covered in a 325 degree oven for 45 minutes.
- Add parsley, fluff with fork.
- Bake uncovered 10 minutes longer.
