Here's a classic old-fashioned beef stew that simmers for hours in the slow cooker. I call it my "lazy" stew because it's so easy to make on busy days. Perfect for hearty appetites, it's guaranteed to keep folks coming back for more!

Number Of Ingredients 13

1 boneless beef chuck roast (1 to 1-1/2 pounds)
1 envelope onion soup mix
2 teaspoons browning sauce, optional
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups water
2 cups cubed peeled potatoes (1/2-inch pieces)
6 to 8 medium carrots, cut into chunks
1 medium onion, chopped
1 cup frozen peas, thawed
1 cup frozen corn, thawed, optional
5 tablespoons cornstarch
6 tablespoons cold water

Steps:

  • Place roast in a 5-qt. slow cooker; sprinkle with soup mix, browning sauce if desired, salt and pepper. Pour water over meat. Cover and cook on low for 8-10 hours or until meat is tender., Remove roast to a cutting board; let stand for 5 minutes. Add vegetables to slow cooker. Cube beef and return to slow cooker. Cover and cook on low for 1-1/2 hours or until vegetables are tender. , Combine cornstarch and cold water until smooth; stir into stew. Cover and cook on high for 30-45 minutes or until thickened.

2 lb stew meat
1/2 c dry, red wine
1 - 10.5 oz cream of mushroom soup
1 - 8 oz can, sliced mushrooms, drained
1 pkg lipton onion soup mix
3/4 lb baby carrots - optional
IF TOO THICK WHEN FINISHED...JUST ADD A LITTLE WATER OR BEEF BROTH
1/4 - 1/2 c beef broth - optional - to thin out - do not add while cooking, decide after if you want to use
I HAVE STARTED DOUBLING THIS RECIPE, AND ADDING MORE VEGGIES, SUCH AS CHUNKS OF POTATOES...I JUST DOUBLE THE MEAT AND SOUP...ALWAYS COMES OUT DELICIOUS

Steps:

  • 1. Place ingredients in a large pot or casserole dish with a tight lid, in the order I have listed. Do not stir. Bake in a 300 degree oven for 3 hours. Do not lift the lid.
  • 2. When the time is up, stir and serve. I added carrots this time, sometimes I add potatoes. Entirely up to you. Served with mashed potatoes today. Enjoy!

6 large potatoes, pared and quartered
6 large carrots, pared and quartered
3 lbs stew beef chunks
1/3 cup soy sauce
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
3 tablespoons flour
1/2 large onions or 1 medium onion, chopped
1 cup beef broth (may be canned)
1 (8 ounce) can tomato sauce

Steps:

  • Place into crockpot in this order: potatoes, carrots, meat.
  • Sprinkle the meat with the soy sauce, salt, paprika, flour, in that order.
  • Spread the chopped onions on top of that.
  • Combine the beef broth and tomato sauce; pour over all of the above.
  • Cover and cook on low 9 to 11 hours.
  • May be cooked on high for 5 hours.
  • May be stirred during cooking, although, stirring is not necessary.

This is so easy to throw together, and can be done the night before in the stoneware section of the crock pot, then put in the fridge over night. Just pop it on the heating base the next morning, and let 'er go! It is hearty, filling, and is a wonderful and delicious smell when you walk into the house after a long day at work!

6 medium potatoes, peeled and cubed
6 large carrots, cut into 1" segments
3 lb lean stew meat
1/3 c soy sauce, low sodium
1 tsp salt
1 tsp paprika
1/2 tsp pepper
3 Tbsp all purpose flour
1/2 c onions, chopped
1 c beef broth or bouillon
8 oz tomato sauce

Steps:

  • 1. Layer potatoes and carrots in bottom of crock pot. Arrange meat over carrots. Sprinkle with soy sauce, salt, paprika, pepper and flour. Top with the onions. Mix the beef broth and tomato sauce together and pour over all. Cover.
  • 2. Cook on LOW, 9-11 hours, AUTO: 7 hours, or HIGH, 5 hours.

1/3 cup soy sauce
2 beef bouillon cubes, crushed
1 teaspoon salt
1/3 teaspoon black pepper
3 tablespoons flour
1 teaspoon paprika
2 large onions, chopped
1 cup beef broth, condensed
1 (8-ounce) can tomato sauce

Steps:

  • Layer potatoes, then carrots on bottom of crockpot liner. Top with meat sprinkle meat with soy sauce, crushed bouillon cube, salt, pepper and flour. Spread with chopped onions. Combine beef broth and tomato sauce and pour over all. Place liner in base. Cover and cook on AUTO for 7 hours or LOW 9-11 hours or HIGH 5 hours.
