8 tablespoons (1 stick) butter
1 cup brown sugar
1/2 cup heavy cream
1/4 cup corn syrup
1/2 teaspoon bottled smoke
1 teaspoon vanilla extract

Steps:

  • COMBINE all the ingredients in a small saucepan. Cook over medium heat, stirring constantly, until smooth and creamy.
  • Toasted pound cake with ice cream and caramel sauce. Add sliced fresh peaches, bananas, or pecans, if you like.

2 cups pecan halves, lightly toasted
2 tablespoons granulated sugar
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
2 tablespoons dark rum
2 teaspoons vanilla extract
1 teaspoon brown sugar
1 teaspoon unsalted butter

Steps:

  • Line a baking sheet with parchment paper.
  • To make the spice mix, place the spices in a small bowl and mix to combine.
  • To make the glaze, place the glaze ingredients in a medium-size saucepan and bring to a boil over medium heat.
  • Add the pecans to the saucepan and cook until they are well coated and the pan is almost dry, about 1 minute. Spoon the spice mix over the nuts, 1 tablespoon at a time, until they are well coated.

1/2 cup heavy cream
1 tablespoon dark rum
3/4 cup pecan pieces (2 1/2 ounces), toasted

Steps:

  • Cook sugar in a dry 2-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel.
  • Tilt pan and carefully pour in water, then cream and rum (mixture will bubble up and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved. Stir in pecans and serve sauce warm.
