This is an all in one dinner that is delicious. My husband could't get enough of it. Be sure to use buffalo wing sauce and not just plain hot sauce. I got this recipe from a Betty Crocker Casseroles booklet. Let me know what you think!

1 1/4 lbs boneless skinless chicken breasts, cut into 1 inch strips
1/3 cup buffalo wing sauce
6 cups frozen southern style hash brown potatoes (thawed)
1 cup salad dressing (ranch or blue cheese)
1/2 cup shredded cheddar cheese
1 (10 ounce) can condensed cream of celery soup
1/2 cup corn flakes, crushed into crumbs
2 tablespoons butter or 2 tablespoons margarine, melted
1/4 cup chopped green onion

Steps:

  • Heat oven to 350 degrees. Spray 13x9-inch baking dish with cooking spray.
  • In medium bowl, stir together chicken strips and buffalo wing sauce.
  • In large bowl, Stir together potatoes, dressing, cheese and soup. Spoon into baking dish. Place chicken strips evenly over potato mixture.
  • In small bowl, stir together crumbs and butter. Sprinkle over chicken. Sprinkle green onions on top.
  • Cover with foil. Bake 30 minutes; uncover and bake 20-25 minutes longer until potatoes are tender and chcken juices run clear. Enjoy!

The taste of a buffalo wing in a whole roasted chicken! This would be great with a salad that has bleu cheese. Grandma clipped this from a "Woman's World" magazine and sent it my way. Spicy!

6 lbs roasting chickens
1 teaspoon paprika
1 teaspoon salt
2 tablespoons butter, melted
1 tablespoon hot pepper sauce, like tabasco
1 tablespoon apple cider vinegar
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle chicken with salt and paprika. Place on rack in a roasting pan.
  • Chicken should roast for 2 to 2 1/2 hours until a meat thermometer registers 180 degrees when inserted in the thickest part of the thigh. Avoid touching the thigh bone when checking the temperature.
  • While chicken is cooking, combine the butter, hot pepper sauce, vinegar, garlic powder, and cayenne in a small bowl.
  • Brush this mixture over the chicken several times during the last 20 minutes of cooking.
  • Let the chicken sit 10 minutes before carving.

These are the BEST hot wings. I particularly like using Frank's Louisiana Hot Sauce. Adding a tablespoon of ranch dressing to the butter sauce makes spicy ranch wings. DO NOT try making these in the oven. The wings come out soggy and the skin is rubbery.

24 chicken wings or 24 chicken drummettes
4 cups oil (peanut, corn, or other)
4 tablespoons butter
2 -5 tablespoons hot sauce
1 tablespoon white vinegar
salt
pepper
blue cheese, dip or ranch dip
celery rib

Steps:

  • Heat oil to 350 degrees; a deep-fat fryer is best for cooking wings.
  • Discard small tip of each wing, split at large joint.
  • Drummettes are ready to cook as is.
  • Sprinkle chicken with salt and pepper.
  • Add chicken to hot oil so that each piece is fully immersed in the oil.
  • Cook for 15 to 20 minutes or until chicken is crisp.
  • Remove from oil, drain, and pat dry.
  • Prepare hot wing sauce by melting butter in a saucepan.
  • Add hot sauce and vinegar.
  • Stir well.
  • Put chicken pieces in a container and pour sauce over them.
  • Cover container and shake to coat each piece.
  • Serve with celery sticks and dip.

Hold your man back!!! Meat and potatoes, what more could you want......buffalo wings? You got it! This is very simple and versatile, you could try replacing the potatoes with noodles or use blue cheese dressing instead of ranch maybe even use Ritz crackers instead of corn flakes, just a few ideas, I haven't tried them yet but I'm sure they would be tasty as well. 1 1/4 lbs boneless chicken breasts, cut in strips
1/3 cup buffalo wing sauce, Frank's buffalo wing sauce is good, I add more cause we like it with more heat
6 cups frozen southern style potatoes or 6 cups obrien potatoes, thawed
1 cup ranch dressing
1/2 cup cheddar cheese, shredded
1 (10 1/2 ounce) can cream of celery soup
1/2 cup corn flake crumbs
2 tablespoons butter or 2 tablespoons margarine, melted
1/4 cup green onion, chopped about 3-4

Steps:

  • Preheat oven to 350 degrees and prepare a 9X13 baking dish (3 quart) with cooking spray.
  • In a bowl combine chicken and buffalo wing sauce; set aside.
  • In another bowl combine potatoes, ranch, cheese and soup; add to baking dish (in high altitude add a little water to potatoes and turn temp up to 375 degrees).
  • In a single layer spread chicken mix over potato mix.
  • In a small bowl combine cornflake crumbs and melted butter; sprinkle over chicken and cover with foil.
  • Bake 30 minutes, uncover and bake an additional 20-25 minutes or until chicken is no longer pink and potatoes are soft.
  • Sprinkle with fresh green onions and serve, if you do not like fresh green onions just put on top of chicken before adding crumbs and bake.

I wanted to come up with something I could coat the chicken in besides buttermilk that would make it moist and very flavorful. Ranch dressing is my absolute favorite condiment and dip practically everything in it. So I thought instead of buttermilk, why not Ranch!

2 large chicken breasts or 1 1/4 lbs chicken breasts
1 -2 cup ranch dressing
1 cup panko breadcrumbs
1/2-3/4 cup grated parmesan cheese
0.5 (10 ounce) bag Baby Spinach
1 garlic clove, chopped
1 large shallot, chopped
2 ounces goat cheese
1 tablespoon ranch dressing
salt and pepper
10 toothpicks

Steps:

  • Preheat oven to 400.
  • Saute the garlic and shallot on medium heat until soft. Add the spinach, goat cheese and ranch dressing. Stir until well incorporated, add salt and pepper to taste.
  • In separate bowls, add ranch dressing and panko mixed with parmesan.
  • Take the chicken breasts and make a slit in the thickest part of the chicken to form a pocket. Do not cut all the way through. Stuff the breasts with some of the spinach mixture. Take the toothpicks and thread the chicken shut.
  • Take each breast and carefully dip in the dressing, shaking off the excess then dredge in the panko/parmesan mixture, making sure to coat the breasts very well. Place on a baking sheet fitted with a rack coated with cooking spray. Setting the chicken on the rack above the pan will ensure the chicken will be cooked evenly. Bake for 25 minutes or until cooked all the way through.

Ready, Set, Cook! Hidden Valley Contest Entry. I love mac and cheese and my version features Greek ingredients such as yogurt, fresh spinach, lemon zest and feta cheese. The star of the cheese sauce is the Hidden Valley Original Ranch Dressing...it takes it to over the top amazing! The guests at my Superbowl party loved every bite of it!

1 lb elbow macaroni
1 teaspoon salt
3/4 lb medium shrimp, peeled and deveined
1 3/4 cups low-fat milk
3/4 cup Hidden Valley® Original Ranch® Dressing
1 cup low fat Greek yogurt
1/2 lemon, zest of
2 teaspoons dried oregano
1 teaspoon nutmeg
2 cups shredded parmesan cheese
salt
black pepper
2 cups fresh spinach leaves
2 ounces crumbled feta cheese

Steps:

  • Preheat oven to 400 degrees. Butter a 3 quart baking dish or a 9 by 13 inch baking dish.
  • Boil 4 quarts of water. Add macaroni and 1 tsp salt and return to a boil. Cook uncovered until al dente, about 9 minutes, stirring occasionally. Drain, rinse with cold water and set aside.
  • In a medium pot, bring 5 cups water to a boil. Add shrimp and boil until opaque, about 2 minutes. Drain and set aside.
  • In a large pot, combine milk, ranch dressing, Greek yogurt, lemon zest, oregano and nutmeg. Let cook over medium heat until it simmers, stirring frequently. Remove from heat and stir in Parmesan cheese. Add salt and pepper to taste.
  • Add macaroni, shrimp and spinach to pot with cheese sauce. Mix well and spread into prepared baking dish. Sprinkle with feta cheese. Bake for 25-30 minutes or until feta cheese starts to get golden brown.
