Buffalo Cauliflower with Blue Cheese Sauce image

Enjoy one of your favorite bar and party snacks in a new form. With our spicy buffalo sauce and cool, creamy blue cheese sauce, cauliflower is as satisfying as wings but with a fraction of the calories and fat.

1/3 cup nonfat sour cream
2 tablespoons crumbled blue cheese
1 tablespoon skim milk
2 teaspoons mayonnaise
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1/4 cup hot sauce, such as Frank's
1 tablespoon freshly squeezed lemon juice
2 tablespoons olive oil
Kosher salt
8 cups cauliflower florets (from about 1 medium head)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the cheese sauce: Whisk together the sour cream, blue cheese, milk, mayonnaise, 1/8 teaspoon salt and a few grinds of pepper in a small bowl. Cover and refrigerate until chilled, about 30 minutes
  • For the Buffalo cauliflower: Meanwhile, microwave the butter in a small microwave-safe bowl on high until melted. Whisk in the hot sauce and lemon juice and set aside.
  • Mix olive oil, 1/4 teaspoon salt and 1/2 cup water in a large bowl. Add the cauliflower and toss until well coated. Spread the cauliflower on a rimmed baking sheet and roast until beginning to brown and just tender, 20 to 25 minutes. Whisk the hot sauce mixture again, drizzle over the cauliflower and toss with tongs to coat. Roast the cauliflower until the sauce is bubbling and browned around the edges, 5 to 7 minutes more. Serve hot with the cheese sauce.

The whole dip - from caramelizing cauliflower to stirring together the creamy hot sauce base and baking on the generous layer of cheese - is made in one pan. You can bring the pan right to the table with dippers of choice and watch it disappear. Just because classic dishes are made a certain way - and Buffalo wings have a cult following, no doubt! - don't be afraid to riff on them once in awhile. That's how new classics are made.

1 small head cauliflower (about 1 1/2 pounds), cored and cut into small florets (about 4 cups)
1 tablespoon olive oil
Kosher salt and black pepper
2 tablespoons unsalted butter
1/2 cup Buffalo-style hot sauce, such as Frank's
4 ounces cream cheese, cut into pieces and softened (about 1/2 cup)
1/4 cup sour cream
1/2 cup freshly shredded Cheddar (about 2 ounces)
1/4 cup crumbled blue cheese (about 1 ounce)
1 1/2 teaspoons finely chopped chives or scallions, or to taste
Celery sticks, carrot sticks, bread, potato chips or tortilla chips, for serving

Steps:

  • Heat oven to 375 degrees. In a 9-inch cast-iron or ovenproof skillet, toss the cauliflower with the olive oil and season with salt and pepper. Cover with a lid or aluminum foil and cook on the stovetop over high to steam, 5 minutes.
  • Uncover the skillet and cook, stirring occasionally, until the cauliflower is fork-tender and caramelized in spots, about 10 minutes.
  • Stir in the butter. Once melted, stir in the hot sauce and simmer until the sauce has reduced by half, about 3 minutes.
  • Turn off the heat, then stir in the cream cheese and sour cream until combined. Sprinkle the Cheddar on top.
  • Bake until bubbling around the edges and the cheese has melted, about 10 minutes. If you'd like the top to get browned, run it under the broiler for 1 to 2 minutes.
  • Immediately sprinkle with blue cheese and chives. Serve with vegetables, bread or chips for dipping.

¾ cup gluten-free baking flour (such as Premium Gold® Flax and Ancient Grains All-Purpose Flour)
1 cup water
½ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
2 heads cauliflower, cut into bite-size pieces
2 tablespoons butter
½ cup hot pepper sauce (such as Frank's RedHot®)
1 teaspoon honey

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet with cooking spray.
  • Mix flour, water, garlic powder, salt, and pepper together in a bowl using a whisk until batter is smooth and somewhat runny. Add cauliflower to batter and mix until cauliflower is coated; spread onto the baking sheet.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes.
  • Melt butter in a saucepan over medium heat. Remove saucepan from heat and stir hot pepper sauce and honey into butter until smooth. Brush hot sauce mixture over each cauliflower piece, repeating brushing until all the hot sauce mixture is used.
  • Bake in the oven until cauliflower is browned, about 10 minutes. Remove baking sheet from oven and allow the cauliflower to cool 10 to 15 minutes.

1 head cauliflower, chopped into bite-size pieces
1 -2 tablespoon olive oil
kosher salt, to taste
2 tablespoons unsalted butter
2 garlic cloves, chopped
1/4 cup hot sauce (Frank's Red Hot is a good choice)
1 cup plain yogurt
1/2 cup blue cheese, crumbled
2 teaspoons garlic powder
1 teaspoon salt (to taste)
1/8 teaspoon black pepper

Steps:

  • Preheat the oven to 450°F.
  • In a bowl, combine the cauliflower with just enough olive oil to lightly coat the cauliflower and toss. Sprinkle with kosher salt.
  • Spread the cauliflower on a baking sheet and bake for 30 to 35 minutes or until browned, turning once.
  • While the cauliflower roasts, make the buffalo sauce: Melt butter in a small saucepan. Add garlic. Stir together butter and garlic with hot sauce; remove from heat and set aside.
  • If using, make the blue cheese dip: In a small bowl, combine yogurt, blue cheese crumbles, garlic powder, and salt & pepper.
  • When the cauliflower is done, remove from the oven and mix with buffalo sauce to combine. Serve with blue cheese dip.
