BUDDIG PINWHEELS

This is a recipe that my mom has made for parties. I have no idea where the recipe came from (if it's one of her creations or not), but I was addicted to it from the first bite, even after I whined that I didn't like horseradish! (Don't be afraid of the many steps-I was being thorough!)

2 (2 1/2 ounce) packages Buddig beef, lunchmeat
8 ounces cream cheese, softened
1 tablespoon horseradish sauce (or more if you like it spicier-I used about 2T.)
1 1/2 teaspoons minced onions (once again, adjust to your liking)
1 teaspoon parsley

Steps:

  • Mix together all ingredients except lunchmeat and set aside.
  • Lay four slices of lunchmeat, slightly overlapping, in a row.
  • Underneath the first row, again slightly overlapping it, lay another row of 4 slices.
  • Repeat once more with another row (there are 12 slices in a pkg.).
  • They will make a square and all the slices will be overlapping another (3 rows of 4 slices each, each one overlappiing the previous row).
  • Gently spread 1/2 of the mixture onto the slices, the opposite direction that you overlapped the slices in (in my case it was right to left).
  • This will prevent the slices from bunching up while you spread, as they are thin.
  • Starting from the bottom, roll upward, making the roll snug, but not tight.
  • When you get to the section where the slices overlap, use a thin amount of the mixture to glue it to the roll.
  • Continue to the top of the roll, and"glue" it together so the roll is smooth.
  • Gently wrap the roll in saran wrap and chill for at least 1 hour or until firm.
  • Cut into slices about 1" thick.
  • This makes one roll.
  • Repeat with the other pkg of meat and mixture to make a second roll.

Two 8-ounce blocks cream cheese, softened
1/4 cup jarred pesto
2 burrito-size spinach tortillas
2 burrito-size whole wheat tortillas
2 burrito-size jalapeno-Cheddar tortillas
1 cup spinach leaves, chopped
One 6-ounce jar marinated artichoke hearts, chopped
1/4 cup sliced green olives
1/4 cup sliced sun-dried tomatoes
4 slices Swiss cheese
8 large slices pepperoni
8 large slices salami
8 large slices spicy capicola
4 slices pepper jack cheese
1 cup arugula
6 mini sweet peppers, slice thin
1/2 cup chopped hot cherry peppers

Steps:

  • For the base spread and tortillas: Mix together the cream cheese and pesto until well combined. Lay out the spinach, whole wheat and jalapeno-Cheddar tortillas and divide the cream cheese mixture among them. Using a spoon or offset spatula, spread the mixture all the way to the edges of each tortilla.
  • For the veggie pinwheels: Evenly distribute the spinach over the top of the base spread on the spinach tortillas. Arrange the artichokes, green olives and sun-dried tomatoes over the spinach. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the meaty pinwheels: Shingle the cheese, pepperoni, salami and capicola onto the base spread on the whole wheat tortillas, slightly favoring one side. Roll up the tortillas tightly and individually wrap in plastic. Set aside.
  • For the spicy pinwheels: Divide the pepper jack between the jalapeno-Cheddar tortillas topped with the base spread. Divide the arugula, sliced peppers and chopped cherry peppers between the tortillas. Roll up the tortillas tightly and individually wrap in plastic. Refrigerate the rolled tortillas for at least 2 hours and up to 12 hours.
  • Unwrap and slice each tortilla into 1-inch segments/pinwheels. Arrange on a platter and serve.

These are the first to go on the party trays I make. They are simple to make and tastes great.

2 (8oz) pkg cream cheese softened
5-8 large flour torillas
6-8 pkg buddig meats (chicken, ham and turkey etc.)
freshly cut or dried chives for sprinkling

Steps:

  • 1. Spread a good amount of the softened cream cheese on a tortilla.
  • 2. Sprinkle with the chives.
  • 3. Place the thin Buddig meat in a layer on the top of the cream cheese and chives.
  • 4. Roll up the tortilla and cut in 1/2" sized pieces.

A friend gave me this recipe, and whenever I serve these tortilla pinwheel sandwiches, people ask me for the recipe, too! 1 package (8 ounces) cream cheese, softened
1 cup shredded cheddar cheese
1 cup sour cream
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chiles, well drained
1/2 cup chopped green onions
Garlic powder to taste
Seasoned salt to taste
5 flour tortillas (10 inches)
Salsa, optional

Steps:

  • Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.
