SCOTTISH BUBBLES AND SQUEAK PATTIES
My father in law is from Scotland and this is a favorite family dish.

Steps:
- Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, then simmer over medium heat until tender enough to pierce with a fork, about 10 minutes. Drain and mash potatoes, then set aside.
- Meanwhile, combine cabbage and carrot in another saucepan and add just enough water to barely cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain off liquid and stir into the mashed potatoes along with the onion, mustard and Cheddar cheese. Season with salt and pepper.
- Shape the mixture into 4 patties. Heat a greased grill pan over medium-high heat. Place the patties on the pan and grill until heated through and golden brown, about 5 minutes on each side. Serve right away.

- 1. Boil the potatoes over medium heat for about 10 minutes or until fork-tender. Drain and mash; set aside.
- 2. In a medium saucepan, combine the cabbage and carrot, adding just enough water to cover the bottom of the pan. Cook over medium heat until tender, about 5 minutes. Drain and stir into the mashed potatoes, along with the onion, mustard and Cheddar cheese. Season with salt and pepper.

Steps:
- 1. Cook cabbage in a very small amount of water in a saucecpan, just enough to cook till tender.
- 2. In a skillet, fry bacon and saute onions until onions are translucent. Add ham and continue cooking until well heated.
- 3. Add butter, seasonings, cabbage and potatoes to meat mixture and stir.
- 4. Cook without stirring until slightly browned on bottom, then flip (like hash browns) and brown on other side.
