I'm always looking for lactose-free dips because I'm lactose intolerant and, well, dips are my favorite. This one is healthy and just spicy enough, and actually tastes like a meaty taco dip with fatty refried beans. Top it off with some soy sour cream and fresh cilantro and dig in with some homemade tortillas.

1 (15 ounce) can garbanzo beans, drained
½ cup canned diced tomatoes with green chile peppers and onions
1 canned roasted red pepper, diced
1 small jalapeno pepper, diced
1 teaspoon sriracha sauce
1 teaspoon garlic powder
1 teaspoon chili powder
½ (1 ounce) packet taco seasoning mix

Steps:

  • Combine garbanzo beans, diced tomatoes, roasted red pepper, jalapeno pepper, sriracha sauce, garlic powder, and chili powder in a saucepan over medium heat. Cook and stir until beans are soft and heated through, about 15 minutes. Drain all but 1 tablespoon liquid from the mixture.
  • Stir taco seasoning into the bean mixture; cook until flavors combine, about 2 minutes.
  • Pour bean mixture into a food processor; puree to desired consistency. Spoon dip into a serving bowl.

1 cans refried beans
1 packages taco seasoning
1 packages sour cream
1 packages cream cheese
0.5 jars salsa
2 cups lettuce
2 cups cheese
1 cans black olives
1 units tomatoes
1 units dipping chips

Steps:

  • 1) Mix refried bean with the taco seasoning and spread over the bottom of a casserole pan.
  • 2) Blend the sour cream and cream cheese together and spread over the top of the beans.
  • 3) Pour salsa over the cream mixture.
  • 4) Chop up lettuce and tomato and drain black olives.
  • 5) Spread lettuce over the salsa.
  • 6) Add the cheese on top of the lettuce.
  • 7) Put the black olives and tomato over the top and serve chilled with your favorite dipping chips.

1 pound lean ground beef (90% lean)
3/4 cup water
2 envelopes taco seasoning, divided
2 cups fat-free sour cream
1 package (8 ounces) cream cheese, softened
2 cups shredded iceberg lettuce
1 cup shredded cheddar cheese
3 medium tomatoes, finely chopped
1 medium green pepper, finely chopped
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, cook and crumble beef over medium heat until no longer pink, 4-6 minutes; drain. Add water and one envelope taco seasoning; cook until thickened. Cool slightly., Beat sour cream, cream cheese and remaining taco seasoning until blended. Spread in a 3-qt. dish; add ground beef. Top with lettuce, cheddar, tomatoes, pepper and olives.
