CARAWAY BRUSSELS SPROUTS

Number Of Ingredients 12

2 pounds fresh Brussels sprouts, trimmed and halved
6 teaspoons olive oil or bacon drippings
1 large sweet onion or large red onion, sliced
6 garlic cloves, thinly sliced
2 teaspoons caraway seeds
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon coarsely ground pepper
1/4 teaspoon crushed red pepper flakes
1/4 cup maple syrup
3 tablespoons sherry vinegar
1 teaspoon Dijon mustard

Steps:

  • In a large skillet, place steamer basket over 1 in. water. Place Brussels sprouts in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, until crisp-tender, 8-10 minutes. Remove from skillet; keep warm. Drain water., In the same skillet, heat oil over medium heat. Add onion; cook and stir until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Stir in Brussels sprouts, caraway seeds, thyme, salt, pepper and red pepper flakes. In a small bowl, whisk maple syrup, sherry vinegar and Dijon until blended. Pour over Brussels sprout mixture; stir until coated. Serve warm.

3 cups Brussels sprouts (can use frozen or fresh)
1/2 cup chicken stock
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons butter
1/8 teaspoon caraway seed
1/2 tablespoon lemon juice

Steps:

  • Combine sprouts, stock, salt and pepper in saucepan, cover, bring to a boil and simmer til tender.
  • Melt butter in microwave cup, add caraway seed and lemon, pour over sprouts and serve.

1 1/2 pounds Brussels sprouts, cored and leaves removed
1 gallon salted boiling water
3 tablespoons butter
1 tablespoon caraway seeds
Pinch cracked black pepper
Pinch salt
1/2 lemon, juiced

Steps:

  • In a large pot, bring salted water to a boil. Add the Brussels sprouts and blanch, about 1 minute until bright green.
  • In a saute pan, add butter, caraway seeds and cracked black pepper. Melt butter until browned.
  • Drain the Brussels sprout leaves and toss into butter mixture to coat. Season with salt and lemon juice and serve.

1 ½ pounds Brussels sprouts
3 tablespoons extra-virgin olive oil
1 teaspoon red pepper flakes
salt and ground black pepper to taste
1 small red onion, chopped
3 cloves garlic, coarsely chopped
2 tablespoons butter

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Add Brussels sprouts; cook until slightly tender, 1 to 2 minutes. Remove and run sprouts under cold water to stop the cooking process. Trim ends off each Brussels sprout and slice sprouts in half.
  • Heat olive oil in a large skillet over medium heat; arrange Brussels sprouts, cut sides down, in the hot oil. Season with red pepper flakes, salt, and black pepper. Cook Brussels sprouts, keeping them in the same place, until cut sides are browned, 7 to 9 minutes.
  • Mix red onion and garlic into Brussels sprouts; cook and stir mixture until Brussels sprouts are cooked through but still firm, 10 to 13 more minutes.
  • Place butter in a cold saucepan; place saucepan over medium heat. Cook butter until it begins to bubble and foam, about 5 minutes. Reduce heat to low; cook, constantly stirring, until butter begins to brown, 5 to 10 minutes. Remove from heat and pour browned butter over Brussels sprouts; toss to coat.

1 stick butter, at room temperature
1 large clove garlic, put through a press
2 to 3 tablespoons Dijon or whole-grain Meaux mustard
3 tablespoons minced green onions
2 tablespoons chopped parsley
Salt and freshly ground black pepper
1 pound brussels sprouts
1 teaspoon caraway seeds or celery seeds, bruised in a mortar (optional)
Lemon wedges

Steps:

  • Place the butter in a medium bowl and add the garlic, 2 tablespoons of the mustard, the green onions and the parsley. Mix well. Add more mustard and salt and pepper to taste and set aside.
  • Trim the root ends of the sprouts and remove loose or discolored leaves. Cut the sprouts in half and then crosswise into fine shreds. (Do not use a food processor; the leaves will be too fine.) Melt 1/2 cup of the mustard butter in a large skillet over medium heat. Sauté the sprouts until tender, about 5 minutes. Lower the heat and stir in the caraway seeds, more mustard butter and salt and pepper to taste. Serve with lemon wedges.

2 pounds brussels sprouts
4 tablespoons unsalted butter
1 1/2 cups thinly sliced onion (1 medium)
Salt
2 pounds Golden or Red Delicious apples (about 6)
3/4 cup apple juice
2 teaspoons Dijon mustard (do not use grainy mustard)
3 shallots, chopped fine (1 cup)
1 tablespoon caraway seeds
2 teaspoons apple cider vinegar

Steps:

  • Wash brussels sprouts and trim roots. Separate leaves and place them in a bowl. Cover and refrigerate. (Can be completed the day before.)
  • Warm a large sauté pan over medium heat. Melt 2 tablespoons butter, then add onions and 1/2 teaspoon salt. Cook over medium-low heat, stirring frequently, until onions are soft, about 15 minutes.
  • Peel, core and slice 5 apples. Add to pan with onions. Cook on medium heat, stirring occasionally, until apples soften and begin to break apart, about 20 minutes. Add apple juice and simmer for 10 minutes. Add mustard and remove from heat.
  • Put apple-onion mixture in a blender or food processor and pulse 6 to 8 times until smooth. Keep warm.
  • Warm a very large sauté pan over medium heat. Melt remaining 2 tablespoons butter, then add shallots. Cook for 5 minutes, until shallots are soft and translucent. Stir in caraway seeds. Add brussels sprout leaves and cook over medium heat, stirring frequently, for 10 minutes. Add vinegar and continue cooking until leaves are just tender, about 5 more minutes. Season with salt to taste. Julienne remaining apple with skin on.
  • Spoon apple-mustard purée onto a warmed serving platter. Pile sautéed brussels sprouts on purée. Sprinkle julienned apple on top. Serve immediately.

  • Preheat oven to 450°F with rack in middle.
  • Toss Brussels sprouts with oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl until well coated. Transfer to a large 4-sided sheet pan in 1 layer and roast 10 minutes. Sprinkle caraway seeds over Brussels sprouts and toss, then spread out in 1 layer and roast until Brussels sprouts are crisp-tender and well browned in spots, about 10 minutes more.

This is a recipe from Joy of Cooking... totally changed my mind about Brussels Sprouts! It's imperative that you use fresh sprouts, the texture would be way off with the frozen ones.

15 Brussels sprouts, halved lengthwise
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
3 cloves garlic, smashed with the flat of a knife
freshly grated parmesan cheese (optional)
salt and pepper

Steps:

  • Melt butter and olive oil in a medium skillet (over medium-high heat) until butter is foamy.
  • Reduce heat to medium, add smashed garlic and cook until lightly browned.
  • Remove garlic and discard.
  • Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a knife.
  • The cut side of the sprouts should get nice and browned, with a nutty, buttery flavor enhanced by garlic.
  • Top with freshly grated parmesan and salt& pepper to taste.
