3 tablespoons cider vinegar
1/2 small green cabbage, very thinly sliced (about 5 cups)
8 brussels sprouts (about 6 ounces), trimmed, halved lengthwise, and thinly sliced
1/2 small red onion, halved lengthwise and thinly sliced crosswise (about 1/2 cup)
1/3 cup fresh orange juice
4 teaspoons fresh lemon juice
1 tablespoon finely chopped fresh dill
1 teaspoon grainy mustard
1 teaspoon poppy seeds
1/2 teaspoon coarse salt
1/8 teaspoon freshly ground pepper
3 tablespoons extra-virgin olive oil
2 small red apples, such as Gala, cut into matchsticks

Steps:

  • Bring 1 1/4 cups water to a boil in a large pot over medium-high heat. Add 2 tablespoons vinegar and the cabbage. Cover, and steam until cabbage has just wilted, about 2 minutes. Using a slotted spoon, transfer cabbage to a colander set over a large bowl. Immediately add brussels sprouts and onion to colander; toss to combine. Let cool 5 minutes.
  • Whisk orange juice, lemon juice, remaining tablespoon vinegar, dill, mustard, poppy seeds, salt, and pepper in a small bowl. Pour in oil in a slow, steady stream, whisking until emulsified.
  • Transfer cabbage mixture to a large bowl. Add vinaigrette and apples, and toss gently to coat. Let stand at room temperature 10 minutes, tossing occasionally. Serve.

Brussels Sprouts 'Slaw' With Mustard Butter image

1 stick butter, at room temperature
1 large clove garlic, put through a press
2 to 3 tablespoons Dijon or whole-grain Meaux mustard
3 tablespoons minced green onions
2 tablespoons chopped parsley
Salt and freshly ground black pepper
1 pound brussels sprouts
1 teaspoon caraway seeds or celery seeds, bruised in a mortar (optional)
Lemon wedges

Steps:

  • Place the butter in a medium bowl and add the garlic, 2 tablespoons of the mustard, the green onions and the parsley. Mix well. Add more mustard and salt and pepper to taste and set aside.
  • Trim the root ends of the sprouts and remove loose or discolored leaves. Cut the sprouts in half and then crosswise into fine shreds. (Do not use a food processor; the leaves will be too fine.) Melt 1/2 cup of the mustard butter in a large skillet over medium heat. Sauté the sprouts until tender, about 5 minutes. Lower the heat and stir in the caraway seeds, more mustard butter and salt and pepper to taste. Serve with lemon wedges.

1 small head or 1/2 of a large head of broccoli
6 oz. brussels sprouts, trimmed, thinly sliced lengthwise
1/2 tsp. kosher salt, plus more
2 oil-packed anchovy fillets (optional)
1/2 oz. Parmesan, finely grated, plus more, shaved, for serving
1/4 cup olive oil
3 Tbsp. fresh lemon juice
Freshly ground black pepper
1/2 cup Castelvetrano olives, pitted
1/4 cup unsalted roasted almonds, coarsely chopped

Steps:

  • Trim broccoli stalk and peel. Halve head lengthwise. Starting at the crown, thinly slice both halves, including the stalk (alternatively, you can slice both broccoli and brussels sprouts in a food processor). Combine broccoli and brussels sprouts in a large bowl and toss with 1/2 tsp. salt. Let sit 10 minutes to soften slightly.
  • Meanwhile, chop anchovies, if using, then mash to a paste with the side of a chef's knife. Combine anchovies, grated Parmesan, oil, and lemon juice in a small bowl; season with salt and pepper. Drizzle over slaw; toss to coat. Serve topped with olives, almonds, and shaved Parmesan.
  • Do ahead
  • Slaw (without almonds) can be made 1 day ahead. Cover and chill. Add almonds just before serving.

12 ounces shaved Brussels sprouts (about 3 cups)
1/4 cup mayonnaise
2 tablespoons buttermilk
4 teaspoons lemon juice
1 tablespoon sugar
1 teaspoon Dijon mustard
1/2 teaspoon celery salt
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large skillet or saucepan over medium heat and add the vinegar. When it begins to simmer, add the Brussels sprouts. Cook until the sprouts are just soft, about 5 minutes, then remove from the heat.
  • In a large bowl, combine the mayonnaise, buttermilk, lemon juice, sugar, mustard, celery salt, 1/4 teaspoon salt and a dash of pepper. Whisk until blended and smooth. Add the Brussels sprouts and toss to coat. Refrigerate at least 4 hours, preferably overnight.

2 tablespoons fish sauce
1 tablespoon Asian chili garlic sauce
1 pound Brussels sprouts
1 carrot, grated on the large holes of a box grater

1/2 cup whole cilantro leaves
1/2 cup salted peanuts, roughly chopped

Brussels sprouts are one of those things my mom made once when I was a kid. My sister-the perfect middle child-ate hers right up while my little brother and I sat there frowning at them. I think I was almost thirty years old before I gave Brussels sprouts a second shot. Now they're one of my favorite vegetables, and this dish is my special take on coleslaw.

Yield serves: 4 to 6

Number Of Ingredients 9

2 pints Brussels sprouts, shaved on a mandoline or cut as thinly as possible
1/2 red onion, thinly sliced
2 carrots, grated on the large side of a box grater
1 Granny Smith apple, julienned
1/2 cup apple cider vinegar
2 tablespoons Dijon mustard
2 tablespoons honey
Kosher salt
1/2 cup mayonnaise

Steps:

  • In a large bowl, toss together the Brussels sprouts, onion, carrots, and apple.
  • Combine the vinegar, mustard, and honey in a small bowl and whisk well.
  • Add the vinegar mixture to the veggies, season with salt, toss to combine, and let sit for at least 1 hour.
  • Stir in the mayonnaise, taste, and adjust the seasoning if needed (it probably will).
