CLASSIC GOOEY BROWNIES

Cooking spray
1 1/2 sticks (12 tablespoons) unsalted butter
4 ounces unsweetened chocolate
3 large eggs, room temperature
1 1/2 cups granulated sugar
1 teaspoon instant espresso powder
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon kosher salt
1 1/2 cups dark chocolate chips
2 tablespoons buttermilk
1 tablespoon brewed coffee
1/2 cup confectioners' sugar
3 tablespoons unsweetened cocoa powder

Steps:

  • For the brownies: Preheat the oven to 375 degrees F. Line an 8-by-8-inch square baking pan with parchment paper so that the paper overhangs two sides of the pan. Coat the parchment and sides of the pan with cooking spray.
  • Combine the butter and chocolate in the top of a double boiler and melt over medium heat. Set aside to cool slightly. Whisk the eggs in a large bowl until pale yellow. Add the granulated sugar, espresso powder and vanilla extract to the eggs and whisk until fluffy. Whisk together the flour and salt in a small bowl.
  • Pour the chocolate mixture over the egg mixture and whisk until smooth. Fold in the flour mixture until just combined. Stir in the chocolate chips. Transfer the batter to the prepared pan, spreading it to the edges with an offset spatula or the back of a spoon. Bake until the batter is set and cracked on top, 30 minutes. Remove to a rack and let cool.
  • For the icing: Whisk together the buttermilk, coffee, confectioners' sugar and cocoa powder until smooth.
  • Remove the cooled brownies from the pan by using the parchment overhang to lift them out. Pour the icing over the top and spread with a small offset spatula. Let dry. Cut into squares and serve.

2 cups white sugar
½ cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup walnut halves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt. Spread the batter into the prepared pan. Decorate with walnut halves, if desired.
  • Bake in preheated oven for 20 to 30 minutes or until a toothpick inserted in the center comes out with crumbs, not wet. Cool on wire rack.

I don't know what possessed me to buy goat's milk butter, other than culinary curiosity. Upon tasting it on bread, we all decided it might be better used for baking. It has a distinctive flavor. Well, you can't ruin brownies, can you? I don't know about that - the flavor of the butter still comes through. It will be interesting to see how long these brownies hang around (or how fast they don't disappear)! But the recipe works well - if you make them, perhaps you'd like to use sweet cream butter from cow's milk.

1/2 cup(s) goat's milk butter
1 cup(s) powdered cocoa
3 - eggs
1 1/2 cup(s) sugar
1 teaspoon(s) vanilla
1/2 cup(s) pastry flour
1/2 cup(s) whole wheat flour
1/2 teaspoon(s) salt
1 cup(s) broken nutmeats (i used walnuts)

Steps:

  • Preheat oven to 350° and grease a 9x9-inch baking pan.
  • Melt butter in a microwave-safe dish. Stir in cocoa powder until blended. Set aside to cool slightly.
  • Beat eggs until light and foamy. Beat in Sugar and vanilla. Stir in the melted butter and cocoa until uniform in color.
  • Stir in flours and salt until well-blended. Then fold in nutmeats. Spread batter into prepared pan.
  • Bake 25 minutes. Remove from oven to rack to cool. May cut into 16 squares while still slightly warm.

The restaurant that I work at serves both a very good cheese platter and a scrumptious fudge brownie. This is an idea inspired by a little creativity when I had a bit of cheese left over during dessert.

1/2 cup butter, melted
1/2 cup unsweetened cocoa
1/2 cup light brown sugar
2 eggs
2 tablespoons balsamic vinegar
1/2 cup flour
1/2 teaspoon salt
8 ounces goat cheese
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
1/4 cup walnuts, chopped

Steps:

  • Grease or line an 8-inch pan with foil, then set aside.
  • Preheat oven to 350 degrees.
  • Stir butter and cocoa in large bowl until cocoa is completely dissolved.
  • Add brown sugar and whisk to combine.
  • Add one egg at a time, making sure each egg is fully mixed into the batter.
  • Add balsamic vinegar, flour and salt, only stirring until no flour is visible, being careful not to over-mix.
  • Pour batter into pan and set aside.
  • Beat goat cheese, sugar, egg and vanilla until smooth.
  • Dollop on top of brownie batter and carefully swirl with knife, but don't mix in completely.
  • Sprinkle with chopped walnuts.
  • Bake for approximately 25 minutes, or until a toothpick inserted in the middle comes out clean. Try not to over-bake.
  • Cool, then cut into squares. Recipe makes 16 brownies.
