1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
1 pint ice cream (any flavor)
9 tablespoons chocolate syrup

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan).). Line 8-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray. Make brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours. Using foil to lift, remove brownies from pan, and peel foil away. Cut into 3 rows by 3 rows.
  • Top each brownie with about 1/4 cup ice cream; drizzle with 1 tablespoon chocolate syrup.

2 cups butter, cubed
32 ounces semisweet chocolate, chopped
7 eggs
2 cups sugar
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons salt
3/4 pound chopped walnuts, optional
HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). Cut brownies into squares; serve with ice cream and hot fudge sauce. Garnish with whipped cream and cherries if desired.

Like many people we are eating healther and cutting out sugars, oils, and trying to use wheat alternatives. The recipe below is for our brownies without those things. As good as they taste, we wouldn't know they weren't the real sugary thing if we had not made them ourselves! Enjoy!

1/2 cup applesauce
1/2 cup unsweetened cocoa
3/4 cup agave nectar
3 egg whites
2 teaspoons vanilla
3/4 cup spelt flour
1/4 teaspoon salt
1/2 cup almonds (optional)

Steps:

  • Preheat oven to 350.
  • Grease an 8x8" pan.
  • Whisk together applesauce, cocoa, and agave.
  • Whisk egg whites into mixture one at a time.
  • Stir in vanilla and salt until blended.
  • Stir in spelt until the mixture is smooth but no longer than that.
  • Blend in almonds if you desire.
  • Pour into greased pan.
  • Bake for 25 minutes in preheated oven.
  • Remove from oven and completely cool before cutting.

AGAVE-SWEETENED BROWNIE GEMS

In order to get the same melty chocolate sensation that comes with the basic brownie without evaporated cane juice, I rely on a simple method of denting the agave brownies in the center and filling them with a puddle of rich, silky chocolate sauce (page 93). The sauce seeps out when bitten into and is so gratifying I wasn't surprised when they began to move off the shelves faster than their sweeter counterpart. You can mix it up a bit by adding vanilla sauce to the center if there happens to be some, you know, lying around. Be sure to keep a special eye on the agave with this recipe. It'll dictate whether you end up with a dry chocolate roll or a luscious fudgelike brownie.

1/2 cup garbanzo-fava bean flour
1/4 cup brown rice flour
1/4 cup potato starch
2 tablespoons arrowroot
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 baking soda
1/4 teaspoon xanthan gum
1 teaspoon salt
1/2 cup coconut oil, plus more for the tins
1/3 cup agave nectar
1/2 cup homemade applesauce (page 78) or store-bought unsweetened applesauce
1 tablespoon pure vanilla extract
1/2 cup hot water or hot coffee
Chocolate sauce (page 93)

Steps:

  • Preheat the oven to 325°F. Lightly grease three 12-cup mini-muffin tins with oil.
  • In a medium bowl, whisk together the flours, potato starch, arrowroot, cocoa powder, baking powder, baking soda, xanthan gum, and salt. Add the 1/2 cup oil and the agave nectar, applesauce, vanilla, and hot water to the dry ingredients and stir until the batter is smooth.
  • Using a melon baller, scoop the batter into each prepared mini-muffin cup. Bake the brownies on the center rack for 9 minutes, rotating the tins 180 degrees after 5 minutes. (For a more fudgy-tasting cake, bake for only 8 minutes total.) The finished brownies will have firm edges with a soft center, and a toothpick inserted in the center will come out clean.
  • Let the brownies stand in the tins for 20 minutes, or until completely cool. While they are still in the tins, press your thumb into the center of each and fill the depression with 1 teaspoon chocolate sauce. To maintain freshness, leave the brownies in the muffin tins until ready to serve. Cover with plastic wrap and store at room temperature for up to 3 days.

AGAVE FUDGY BROWNIES

6 oz unsweetened baking chocolate
1 c unsalted butter
4 large eggs
1 1/2 c light agave nectar
2 tsp vanilla extract
1 c whole wheat pastry flour
1/2 tsp baking powder
1/4 tsp salt
3/4 c chopped walnuts, optional

Steps:

  • 1. Preheat oven to 350F. Lightly coat a 9-x-13-inch baking pan with nonstick cooking spray.
  • 2. In a glass bowl, combine chocolate and butter. Loosely cover with plastic wrap and microwave on high for 2 minutes. Immediately remove from microwave and stir until chocolate is completely melted.
  • 3. In a large bowl, beat eggs with a wire whisk. Add agave nectar and vanilla. Stir in the melted chocolate mixture.
  • 4. Sift flour, baking powder and salt over the chocolate mixture. Gently fold the ingresdients, JUST until flour is incorporated. Gently stir in walnuts, if using. DO NOT OVERMIX. Mixture will be lumpy.
  • 5. Pour into prepared pan and bake for 30 minutes, or until just set. Do not overbake, or brownies will be dry.
  • 6. Let cool in pan before cutting into 2-inch bars.

FUDGY AGAVE BROWNIES

1 package fudge brownie mix
1/3 cup vegetable oil
1/4 cup water
2 tablespoons agave
1 egg
Agave Whipped Cream
Bottled hot fudge topping

Steps:

  • Combine all ingredients mix and spread in greased and floured 5-cup heart-shaped baking pan or 8 x 8 x 2-inch pan. Bake according to package directions for 8 x 8-inch pan. Cool thoroughly. Invert onto serving plate. Spread with Agave Whipped Cream or pipe cream through pastry tube. Drizzle with hot fudge topping.

1/2 teaspoon grated lemon peel
2 cups raspberries, blackberries or strawberries
4 chocolate brownies or prepared fudge brownie mix
1 pint low-fat vanilla yogurt
