This simple recipe reminds you sweet potatoes were considered a dessert in mid-nineteenth century Virginia.

4 medium sweet potatoes (about 2 1/2 pounds)
1 tablespoon vegetable oil
Salt and freshly ground black pepper
1/2 cup sour cream
4 teaspoons dark-brown sugar

Steps:

  • Heat oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil, and set aside. Rub potatoes with vegetable oil, and place on the prepared baking sheet. Bake in the oven until the potatoes can be easily pierced with a knife, 40 to 45 minutes.
  • Slit potatoes open lengthwise, and sprinkle with salt and pepper. Top with a generous dollop of sour cream, sprinkle with dark-brown sugar, and serve immediately.

3/4 cup granulated sugar (5 1/4 ounces)
1/2 cup dark brown sugar, packed (3 1/2 ounces)
2 tablespoons ground cinnamon
2 tablespoons cold unsalted butter
1 cup pecans, chopped
4 large eggs
1 1/2 cups sour cream
1 tablespoon vanilla extract
2 1/4 cups unbleached all-purpose flour (11 1/2 ounces)
1 1/4 cups granulated sugar (8 3/4 ounces)
1 tablespoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
12 tablespoons unsalted butter, softened but still cool, cut into 1-inch cubes (1 1/2 sticks)

Steps:

  • Adjust the oven rack to the lowest position and heat the oven to 350 degrees. Grease the inside of a 10 inch pan.
  • For the Steusel - Place the flour, granulated sugar, 1/4 cup dark brown sugar, and the cinnamon in a food processor and pulse a few times to combine. Transfer 1 1/4 cups of the mixture to small bowl and stir in remaining 1/4 cup brown sugar; set aside (this will be the streusel for the inside of the cake). Add the butter and pecans to the remaining dry ingredients in the food processor bowl. Pulse the mixture about 3-4 times until the nuts and butter have been broken down into small pebbly pieces. Set aside. (The streusel with the butter and nuts will be for the top of the cake). If you do not have a food process, you could also do this with a pastry cutter but note it will take a bit more time.
  • For the Cake - In a small bowl, combine the eggs, 1 cup of the sour cream and vanilla and set aside. In the bowl of a standing mixer, combine the flour, sugar, baking powder, baking soda, and salt at low speed, about 30 seconds. Add the butter and remaining 1/2 cup of sour cream and mix at low speed until the dry ingredients are moistened. Increase to medium speed and beat 30 seconds. Scrape down the sides of the bowl with a rubber spatula. Decrease the mixer speed to low and slowly incorporate the egg mixture in 3 additions, beating for 20 seconds after each and scraping the sides of bowl as necessary. Increase speed to medium-high and beat for 1 minute (the batter should increase in volume and become aerated and pale in color).
  • Add 2 cups of the batter to the prepared pan. With an offset metal spatula or rubber spatula, smooth the surface of the batter. Sprinkle with 3/4 cup streusel filling (without butter or nuts). Drop 2 more cups of the batter over the streusel and spread evenly. Then add the remaining streusel filling. Top with remaining batter and then the streusel topping (with the butter and nuts).
  • Bakes until the cake feels firm to the touch and a toothpick comes inserted into the center comes out clean, about 60 minutes. Cool the cake in the pan for about 30 minutes. Then release the clasps of the springform pan and cool completely and serve.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Combine the egg, 3/4 cup brown sugar, white sugar, sour cream, and 1/4 cup wheat flour in a bowl. Place the strawberry slices in the pie crust, and spoon the sour cream mixture over the berries.
  • In another bowl, stir together 1/3 cup brown sugar and 1/3 cup flour. Pour in the melted butter, and stir until mixture resembles course meal. Sprinkle this mixture over sour cream mixture and berries in the pie shell.
  • Place pie on lowest rack in preheated oven. Bake for 15 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 45 minutes longer. Remove from the oven, and let it cool completely (yes, overnight works best).

1 cup granulated sugar
1 cup heavy cream
1/2 cup whole milk
9 egg yolks
1 1/2 cups sour cream
2 teaspoons vanilla extract
Pinch salt
1 quart fresh strawberries, hulled and chopped into 1/4-inch pieces
3 tablespoons light or dark brown sugar
1 tablespoon brandy

Steps:

  • In a medium-size heavy saucepan, combine 1/2 cup granulated sugar with cream and milk. Bring to a simmer; turn off heat.
  • Whisk together egg yolks and remaining 1/2 cup granulated sugar. Whisking constantly, slowly add about half (a cup or so) of hot cream mixture to yolks. Pour yolk mixture into saucepan with remaining cream. Cook, stirring constantly, over moderately low heat until mixture thickens enough to coat back of a spoon, about 7 minutes: do not let it come to a simmer or it will curdle. Immediately strain custard into a clean bowl. Whisk in sour cream, vanilla and salt. Cover custard tightly with plastic wrap and chill at least 3 hours or up to 3 days.
  • About an hour before you want to serve ice cream, combine strawberries and brown sugar in a bowl for 15 minutes. Transfer berries and accumulated juices to a skillet and bring just to a simmer. Remove from heat and stir in brandy. Use a slotted spoon to transfer berries to a bowl. Simmer juices in skillet until syrupy, about 5 minutes. Pour syrup over strawberries. Chill mixture in freezer until thoroughly cool but not frozen (15 to 30 minutes).
  • Churn custard in an ice cream machine according to manufacturer's directions. When ice cream has reached a soft-serve consistency, transfer to a bowl and swirl in the strawberry mixture with a quick folding action (you want to see red and white swirls, not pink). Serve immediately.

8 croissants (about 1 pound), torn into 3/4-inch pieces
1 cup pitted prunes, chopped
1 cup raisins, chopped
1/2 cup coarsely chopped almonds
1 tablespoon grated lemon peel
2 cups sour cream
1/2 cup (packed) golden brown sugar
1 tablespoon grated orange peel
1/2 cup brandy

Steps:

  • Preheat oven to 300°F. Generously butter 8-cup pudding mold, metal bowl, or soufflé dish and sprinkle with sugar. Combine milk, butter, and 1/2 cup sugar in heavy medium pot. Scrape in seeds from vanilla bean; add bean. Simmer gently over medium-low heat until sugar dissolves and mixture is fragrant, stirring occasionally, about 8 minutes (do not boil). Remove pot from heat; cover and let steep 15 minutes. Remove vanilla bean. Whisk eggs in large bowl to blend. Gradually whisk in hot milk mixture.
  • Whisk flour, cinnamon, nutmeg, baking soda, and salt in very large bowl to blend. Add croissant pieces, prunes, raisins, almonds, and lemon peel. Toss until croissant pieces are evenly coated and mixture is well blended. Pour milk mixture over. Let soak 10 minutes.
  • Transfer croissant mixture to prepared baking dish, pressing to pack mixture into dish. Cover dish with plastic wrap and place in roasting pan. Pour enough hot water into roasting pan to come halfway up sides of baking dish. Cover roasting pan with heavy-duty aluminum foil. Oven-steam pudding until custard is set and pudding is puffed, about 2 hours. Carefully remove aluminum foil (steam will be released). Transfer covered pudding to rack and cool 1 hour. (Pudding can be made 1 day ahead. Cover and refrigerate. Resteam in 300°F oven 45 minutes to heat through before serving.)
  • Whisk sour cream, brown sugar, and orange peel in medium bowl to blend. Cover and refrigerate at least 30 minutes. (Can be made 1 day ahead. Keep refrigerated.)
  • Remove plastic wrap from warm pudding. Invert onto rimmed platter. Pour brandy over pudding. Carefully ignite brandy. When flames subside, slice pudding into wedges and serve with dollop of sour cream and brown sugar sauce.

  • Bake pie shell. Reduce heat to 400. Mix cornstarch, sugar, salt, and nutmeg in a 2 qt. saucepan. Stir in sour cream, then the rest of the ingredients. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute. Pour into pie shell. Top hot filling with meringue, sealing to edge to prevent shrinking. Bake until a delicate brown, about 10 minutes. Cool away from draft. For meringue, beat egg whites and cream of tartar until foamy. Beat in brown sugar one tablespoon at a time and continue beating until stiff and glossy. Beat in vanilla.

I was about to make Sheri D's Amaretto Sourcream Strawberries #161835, when my mom stopped by with 3 pounds of fresh Bing Cherries from Eastern Washington. She makes the 5 hour drive annually in July just to get fresh cherries and stock up on wine for the year! She saw what I was making and suggested the following recipes for the cherries. I don't care for the taste of powdered sugar, and I don't think the recipe needs it, so I don't use it, but you decide. These are so simple, elegant (except for spitting out the pits) and yummy! For the scones:
2 cups all-purpose flour
1 Tablespoon baking powder
4 Tablespoons sugar
1/2 teaspoon salt

1 cup roughly chopped strawberries
1 egg, lightly beaten
1 cup sour cream
1/4 - 1/2 cup whole milk or heavy cream
1 teaspoon vanilla extract
For the topping
1/3 cup all-purpose flour
1/3 cup packed brown sugar
3 Tablespoons salted butter, softened

Steps:

  • Preheat the oven to 400°. Combine the flour, baking powder, sugar, and salt in a mixing bowl. Cut the butter into the flour until it looks like coarse bread crumbs. Add the strawberries and toss until the berries are coated with flour. Whisk together the egg, sour cream, 1/4 cup of the milk, and vanilla. Pour this onto the flour mixture and then fold them together until all the flour is moistened. If necessary, add up to 1/4 cup of additional milk until a shaggy, moist dough is formed. Try not to overwork the dough. Sprinkle a little flour on your counter, turn out the dough, and sprinkle a little more flour on top. Pat the dough into a circle or rectangle about 1-inch thick, and use a bench scraper to cut the scones into wedges. Transfer the scones to a greased baking sheet. Combine the ingredients for the topping and use your fingers to crumble this evenly over all of the scones. Bake for 20 - 25 minutes until the scones are firm on the outside and golden in spots. Let the scones cool on the baking sheet for 5 minutes and then transfer them to a wire rack to finish cooling. These scones are best on the day that they're made. If you're planning on keeping them for several days, skip the topping (which will absorb moisture and get mushy) and instead smear them with butter and a sprinkle of brown sugar just before eating.

2 cups sour cream

  • Bring half-and-half to simmer over medium heat, remove from heat. In large bowl, whisk yolks, brown sugar & corn syrup together. Gradually add hot half-and-half, whisking constantly. Return to pot and heat on medium low. Cook, stirring constantly, until custard thickens (do not boil). Pour through strainer into bowl set over another bowl with ice water (this cools it faster).   • Mix graham cracker crumbs,cornmeal, sugar and melted butter in a bowl. Mix with fork til crumbs are evenly moistened. Press crumbs into bottom and half an inch up the side of pan. You can use the bottom of a 1/4 cu measuring cup for this. It allows a smoother crust than you can get using your fingers. Bake for about 8 minutes, or til crust just starts to pick up a bit of color around edge. Remove from oven and let cool. Leave oven on.
  • Mix cream cheese, butter and brown sugar in bowl of mixer fitted with paddle attachment or in large bowl with handheld mixer and mix til very smooth. Scrape down sides of bowl as needed. Add molasses and vanilla and mix. Add sour cream and mix. Add heavy cream and mix just to blend. Add eggs, one at a time and mix just til incorporated. Scrape bowl, making sure filling is well mixed. Pour into prepared crust.
  • Bake for 20 minutes, then turn oven down to 300 and bake for 20 minutes more and turn the oven down to 250 and bake for 20 minutes more. Turn oven to low or 225 degrees. Continue baking til cake looks set around the edge but just a bit jiggly in very center.
  • Meanwhile, whisk together sour cream, brown sugar and brandy or bourbon or orange juice. Ass soon as the cake is done, remove it from oven and turn oven up to 350. Slowly and evenly pour sour cream topping over cake. You can use an offset spatula to help spread it into a even layer. Bake for 3 minutes or til topping is just set. Let cool completely in pan on wire rack. Refrigerate for several hours or overnight before serving. Serves 12
  • Notes: The timing for the final baking in the low oven differs widely from oven to oven. The only way to be sure is to nudge the cake and check that the edge is set and the center is just jiggly. This takes anywhere form 20 to 40 minutes. the topping may bake longer than 3 minutes to set. How long depends on how quickly our oven reheat. Don't leave cake in too long, though. You want the topping to barely set, usually 5 to 10 minutes.
  • Also, have all your ingredients at room temperature. Don't overbeat the filling. Line the sides and bottom of pan with parchment paper. Don't overbake: overbaking is the most common cause of cracking. Cool cake completely on wire rack before refrigeration, If the surface still cracks, decorate it with berries.
