2 eggs, slightly beaten
2 c light or dark brown sugar, packed
1 c butter or margarine
3 tsp vanilla
3 1/2 c unsifted all purpose flour
1 tsp baking soda
1/2 tsp salt
OPTIONAL
1 c finely chopped walnuts

Steps:

  • 1. In a mixer bowl, cream together eggs, sugar, butter and vanilla.
  • 2. Combine flour, soda and salt.
  • 3. Add to egg mixture.
  • 4. Blend well.
  • 5. Stir in nuts, if used.
  • 6. Divide dough in half.
  • 7. Roll each half into a log, 2-inches in diameter, in waxed paper.
  • 8. Twist ends to shut.
  • 9. Refrigerate until firm, at least overnight.
  • 10. Preheat oven to 350 degrees F.
  • 11. Cut rolls into 1/4-inch thick slices.
  • 12. Set slices, 1-inch apart, on ungreased cookie sheets.
  • 13. Bake at 350 degrees F for 10 to 12 minutes or until golden crisp.
  • 14. Serve hot or remove while hot onto rack to cool.

2 units eggs
2 cups brown sugar
1 cups butter
3 teaspoons vanilla
3.5 cups all purpose flour
1 teaspoons baking soda
0.5 teaspoons salt
1 cups walnuts

Steps:

  • In a mixer bowl, cream together eggs, sugar, butter and vanilla. Combine flour, soda and salt. Add to egg mixture. Blend well. Stir in nuts, if used.
  • Divide dough in 1/2. Roll each half into a log 2-inches in diameter, or pat into rectangle on wax paper. Twist ends to shut. Refrigerate until firm, at least overnight.
  • Slice into 1/4 in slices. You don't want them too thick. Set slices, 1 inch apart, on ungreased cookie sheets.
  • Bake at 350 F. for 10 to 12 minutes or until golden. I found the 12 minutes time worked best in my oven.
