1 cup old-fashioned oats
1 cup whole wheat flour
3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
3/4 cup 2% milk
1/4 cup canola oil
1 teaspoon vanilla extract
Peanut butter and honey, optional

Steps:

  • Preheat oven to 400°. Mix first 6 ingredients. In another bowl, whisk together eggs, milk, oil and vanilla. Add to oat mixture; stir just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 15-17 minutes., Cool 5 minutes before removing muffins to a wire rack. Serve warm. If desired, spread with peanut butter and honey.

4 teaspoons baking powder
½ teaspoon salt
2 eggs
1 ½ cups milk
⅔ cup white sugar
½ cup canola oil
2 tablespoons brown sugar, or as needed
2 teaspoons ground cinnamon, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  • Mix flour, baking powder, and salt together in a bowl.
  • Beat eggs, milk, white sugar, and canola oil together in a separate bowl; mix into flour mixture until just combined into a batter.
  • Pour batter into prepared muffin cups to about 1/4 full. Top each batter portion with a generous pinch of brown sugar and a sprinkle of cinnamon; top with remaining batter to about 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 cups flour
1/2 cup sugar, plus
2 tablespoons sugar (or to taste)
3 teaspoons baking powder (slightly heaping)
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup cold butter (no subs!)
1 large apple, peeled and diced
1/3 cup walnuts, chopped
1 egg
2/3 cup half-and-half cream or 2/3 cup milk
1 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Set oven to 400 degrees.
  • Line 16 muffin tins with paper liners.
  • In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.
  • Cut in the butter with a pastry blender.
  • Measure out 1/4 cup to add to topping ingredients; set aside.
  • Add in the chopped apples and nuts to the flour mixture.
  • In a small bowl, whisk together egg and half and half cream, then add to the flour mixture; stir JUST until combined, mixture will be lumpy.
  • Spoon into muffin tins about 2/3 full.
  • To the reserved 1/4 cup butter mixture add in 1 teaspoon cinnamon and 2 tablespoons brown sugar; toss to combine.
  • Sprinkle the topping mixture over each muffin.
  • Bake for 15-20 minutes.

1/2 cup/115 g unsalted butter, melted and cooled to room temperature
2 large eggs
2/3 cup/135 g granulated sugar
3/4 cup/165 g packed brown sugar
1 1/2 cups/210 g frozen or fresh sweet or sour cherries, pitted and chopped
1 1/4 cups/210 g whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
1/4 cup/25 g rolled (not instant) oats
3 tablespoons packed brown sugar
Pinch of ground cinnamon
3 1/2 cups/350 g rolled (not instant) oats
1 1/4 cups/300 ml creme fraeche
1 cup/240 ml whole milk, at room temperature

Steps:

  • 1. In a medium bowl, stir together the rolled oats, creme fraeche, milk, and butter with a wooden spoon until combined. In a small bowl, whisk the eggs together and stir into the oat mixture. Add the granulated sugar, brown sugar, and cherries and continue to stir until well combined.
  • 2. In a separate small bowl, combine the whole wheat flour, baking powder, baking soda, and salt and stir until well mixed. Gently fold the dry ingredients into the wet oat mixture. The batter will be gloppy. Transfer the batter to an airtight container and place in the fridge. Let the batter sit for at least 8 hours or up to overnight in the refrigerator.
  • 3. When ready to bake, preheat the oven to 350 degrees F/180 degrees C, and place a rack in the center of the oven. Line the cups of the muffin tin with paper liners, coat liberally with nonstick spray, or butter and flour them. Spoon about 1 cup/240 ml of the batter into each muffin cup, filling it all the way to the brim and wa-a-a-y over. (It will seem like there's too much batter for the tins, but if you want the characteristic muffin top you need to overfill them. You can make smaller muffins if you prefer and reduce the baking time by about 10 minutes.) The batter will be stiff and firm.
  • 4. To make the topping: In a small bowl, stir together the oats, brown sugar, and cinnamon. Sprinkle the topping evenly over the muffins and place the muffin tin on a baking sheet to catch any drips. Bake for 45 to 55 minutes, or until the muffins are golden brown on top and spring back when pressed in the middle with a fingertip. Let cool in the tin on a wire rack for 20 minutes and then remove the muffins from the pan.
  • 5. These muffins taste best the day they are made, but you can store them in an airtight container at room temperature for up to 2 days. If you keep them for longer than a day, refresh them in a 300 degrees F/150 degrees C oven for 5 to 6 minutes. Or, you can freeze them, well wrapped in plastic wrap, for up to 1 week. Reheat directly from the freezer in a 300 degrees F/150 degrees C oven for about 10 minutes.

3 Tbsp butter, melted
1/2 Tbsp lemon zest, grated
1 c blackberries, still frozen and rolled in flour

Steps:

  • 1. Add the flour, baking powder, baking soda, cinnamon, and salt to a big bowl and whisk until well mixed.
  • 2. Mix the brown sugar, milk, egg, lemon zest, and melted butter in another bowl until well mixed.
  • 3. Pour the wet ingredients into the dry ingredients and mix until incorporated (not too much mixing or the muffins will be chewy instead of cake-like).
  • 4. Add the floured blackberries and fold into mixture.
  • 5. Put into buttered muffin tins.
  • 6. Pop into the oven for 16 - 20 minutes at 350.
  • 7. You can tell the muffins are done by pushing on the top of one and if it springs back up they are done. Since this recipe uses brown sugar instead of white sugar the color will be darker when they are finished baking.
  • 8. The flour on the blackberries keeps them from falling to the bottom of your muffins and helps the muffins not be soupy.

1-2 tablespoons butter, cubed

  • 1. Preheat oven to 350 degrees F. In a large bowl, whisk oil, sugar, egg, milk and sour cream until smooth. In a separate, sift together flour, baking powder and salt. Add alternatively to the wet ingredients with the milk. Beginning and ending with the flour mixture. In small bowl, combine all ingredients for crumble. Mix until a crumbly mixture forms. Leave the muffins to cool completely in the pan. For the icing, whisk above ingredients and drizzle each muffin generously. Allow a few minutes for icing to set before serving.

1/4 teaspoon fine-grain sea salt or table salt
1 1/2 cups mashed ripe bananas (3-4 medium bananas, about 1 pound)
2/3 cup dark brown sugar + 1/4 cup dark brown sugar (divided)
1/2 cup vegetable oil or canola oil
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray a muffin tin with non-stick spray or add cupcake liners.
  • In a medium bowl, stir together the flaxseed meal and water. Set aside to thicken up.
  • To a large bowl, add the flour, baking soda, cinnamon, and salt. Combine.
  • To the bowl with the flax and water, add the bananas. Mash with a potato masher or fork, or use a hand blender to completely puree the bananas and minimize any lumps. Add 2/3 cup brown sugar, oil, and vanilla extract. Mix well with a whisk to combine.
  • Pour the wet ingredients over the dry ingredients and stir with a wooden spoon just until combined.
  • Fill the muffin tins halfway full with half the batter. Add about a teaspoon and a half of brown sugar to each muffin tin. Top each with the remaining batter.
  • Bake for 20-25 minutes, until golden brown and the tops spring back when you poke them. You can test with a toothpick - if it comes out clean, the muffins should be done.
  • Remove from oven and let cool in the pan for 5 minutes. Transfer muffins from pan to a wire rack to finish cooling. Serve with butter, vegan butter, or your favorite nut butter. Or enjoy them plain!
  • Muffins keep at room temperature in an airtight container for about 3 days. They also freeze well!

1/3 cup butter, softened
1/2 cup packed brown sugar
2 eggs
1 cup Wheaties
1/2 cup milk
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • In a bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Stir in cereal. Combine milk and vanilla. Combine flour, baking powder and salt; add to creamed mixture alternately with milk mixture, beating just until moistened., Fill paper-line muffin cups two-thirds full. Bake at 400° for 13-15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

1 1/2 cup(s) frozen or fresh sweet or sour cherries, pitted and chopped
1 1/4 cup(s) whole-wheat flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 teaspoon(s) kosher salt
FOR BROWN-SUGAR OAT TOPPING
1/4 cup(s) rolled (not instant) oats
3 tablespoon(s) packed brown sugar
- pinch of ground cinnamon

Steps:

  • In a medium bowl, stir together rolled oats, creme fraiche, milk and butter with a wooden spoon until combined. In a small bowl, whisk the eggs together and stir into the oat mixture. Add granulated sugar, brown sugar, and cherries, and continue to stir until well combined. In a separate small bowl, combine whole wheat flour, baking powder, baking soda, and salt, and stir until well mixed. Gently fold the dry ingredients into the wet oat mixture. The batter will be gloppy. Transfer the batter to an airtight container and place in the fridge. Let the batter sit for at least 8 hours or up to overnight in the refrigerator.
  • When ready to bake, preheat oven to 350 degrees and place a rack in the center of the oven. Line the cups of the muffin tin with paper liners, coat liberally with nonstick spray, or butter and flour them. Spoon about 1 cup of the batter into each muffin cup, filling it all the way to the brim and wa-a-a-y over. (It will seem like there's too much batter for the tins, but if you want the characteristic muffin top you need to overfill them. You can make smaller muffins if you prefer and reduce the baking time by about 10 minutes.) The batter will be stiff and firm.
  • To make the topping: In a small bowl, stir together oats, brown sugar, and cinnamon. Sprinkle the topping evenly over the muffins and place the muffin tin on a baking sheet to catch any drips. Bake for 45 to 55 minutes, or until the muffins are golden brown on top and spring back when pressed in the middle with a fingertip. Let cool in the tin on a wire rack for 20 minutes and then remove muffins from the pan. These muffins taste best the day they are made, but you can store them in an airtight container at room temperature for up to 2 days. If you keep them for longer than a day, refresh them in a 300 degree oven for 5 to 6 minutes. Or, you can freeze them, well wrapped in plastic wrap, for up to 1 week. Reheat directly from the freezer in a 300 degree oven for about 10 minutes.

1 c old-fashioned oats
1 c whole wheat flour
1/2 c all-purpose flour
2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 c brown sugar, packed
3/4 c evaporated milk
1/4 c canola oil
1 1/2 tsp pure vanilla extract

Steps:

  • 1. In a small bowl, combine the oats, flours, baking powder and salt. Make a well in the center of the ingredients and set aside.
  • 2. In another small bowl, combine lightly beaten eggs, with the brown sugar, milk, oil and vanilla.
  • 3. Pour the liquid ingredients into the well of the dry ingredients and stir just until all is moistened; but try to get as much as you can in each stroke, so that there are not a bunch of dry ingredients left on the bottom or sides.
  • 4. Preheat the oven to 400F degrees. Place paper liners into each muffin cup, and spray with butter flavored vegetable spray inside of each cup (lined OR not). If you spray the paper liners, the muffin will come out of the cup nicely, without taking half of the muffin w/it!
  • 5. Fill each muffin cup about 1/4 inch from the top of the cup. By filling it just that little bit more, you have nice rounded tops instead of flat and/or low muffins.
  • 6. Bake for 15-20 minutes. Check after 14 minutes. Much depends on the heat of YOUR individual oven, whether you have light or dark pans, etc. If a wooden pick inserted into the middle of a middle cupcake, comes out clean (without dough)and when you touch it lightly, it springs back just a bit, instead of leaving a finger indentation) they are done!
  • 7. Leave in tins for just about 5 minutes, then remove to cool completely on wire racks. Best served warm. I usually double the recipe and put one batch in the freezer for another day!
