4 tablespoons unsalted butter, plus additional softened butter for the baking dish
1 cup packed light brown sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 large egg, lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup chopped pecans
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking dish.
  • Melt the butter in a small saucepan. Turn off the heat and let cool slightly, then add the brown sugar, almond and vanilla extract and stir until smooth. Stir in the egg.
  • Whisk together the flour and baking powder in a small bowl, then fold the mixture into the brown sugar mixture. Fold in the pecans. Pour the batter into the prepared baking dish and bake until set around the edges but still loose in the center, about 20 minutes. Let cool completely, then sift confectioners' sugar on top. Cut into 16 squares.

Steps:

  • Preheat oven to 350 °F. Spray an 8-inch square pan with vegetable oil cooking spray.
  • In a small saucepan, melt the butter. Turn off the heat, add the brown sugar and stir until smooth. Stir in the egg. 2 cups self-rising flour
1 cup pecans (chopped)
2 teaspoons confectioners sugar (optional, for dusting)

Steps:

  • Line a 9x13 inch baking pan with parchment paper or spray with non-stick spray.
  • Melt butter over medium low heat.
  • Mix brown sugar and flour in large mixing bowl.

1/4 cup unsalted butter
1 cup packed light brown sugar
1 egg, lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1/3 cup chopped walnuts
1/3 cup chopped candied ginger (crystallized)

Steps:

  • Preheat oven to 350. Spray 8-inch square pan with cooking spray.
  • Melt butter over low heat in small saucepan. Once melted, remove from heat. Add brown sugar and stir until smooth. Add beaten egg and incorporate well. Sift the flour and baking powder together and stir into the brown sugar mixture. Add the vanilla, walnuts and ginger and mix well.
  • Pour batter into pan and bake for 20-22 minutes (do not overbake! The bars should yield to a light touch).
  • Cool and cut into pieces.
