This dessert is something we'd never make on Good Eats because it depends upon a very specific brand of cereal. If you're going to make Rice Krispie Treats, you better be using Rice Krispies, not "puffed rice cereal," because here the brand really makes a difference.And while you're at it, use a couple of other name brands: Jet-Puffed mini marshmallows and Kerrygold butter. They make all the difference in the world. I also like to toast two of these three ingredients - the butter and the actual cereal - and stash the entire dessert in a very clever mold.This recipe first appeared in the Pantry Raid video series.

1 (18-ounce) bag Rice Krispies
8 tablespoons unsalted Kerrygold butter
2 (10-ounce) bags Jet-Puffed mini marshmallows
2 big pinches kosher salt

Steps:

  • Pour the Rice Krispies into a very large wok, reserving the box and bag. (If you don't have a wok, pull out the largest pot you've got.) Place over medium-high heat and cook, stirring frequently and adjusting the heat as needed, until the cereal has turned slightly darker brown and tastes toasted. Transfer to a large bowl.
  • Place the butter in the wok and return to medium heat. Cook, stirring and swirling the pan frequently, until the butter melts, foams, and turns light golden brown.
  • Reduce the heat to medium-low and stir in the marshmallows. Cook, now stirring with a rubber spatula, until melted and smooth. Stir in the salt.
  • Reduce the heat all the way to low and add the Rice Krispies back to the wok. Stir gently until all of the cereal is coated with the marshmallow mixture, then remove from the heat.
  • Spray the inside of the now-empty cereal bag with non-stick oil spray, then carefully pack the Rice Krispie mixture into the bag. Let cool before eating straight from the box.

1/2 cup of all natural crunchy peanut butter
1/2 cup of brown rice syrup
4 cups of brown rice crispy cereal
1 teaspoon vanilla extract
1/3 cup of chocolate chips ((optional))

Steps:

  • Mix peanut butter, rice syrup, and vanilla and heat over a low heat in a small sauce pan until the mixture becomes warm and syrup (this will only take a few minutes).
  • While your peanut butter syrup is heating, spray a large bowl with cooking spray before adding the rice cereal. Pour ooey gooey peanut butter syrup over the cereal and combine until all of the rice cereal is evenly coated.
  • Transfer brown rice into an 88-baking dish that has been lightly coated with non-stick cooking spray. Pat them down and make them nice and even, pop in the fridge about an hour or so, then cut em up and enjoy!

This absurdly easy recipe came to The Times from Colin Alevras, then the chef at the Tasting Room in New York, which, until it closed in 2008, offered Rice Krispies treats every day, and made more for Halloween. Browning the butter elevates these plebeian snacks into something more toothsome, and it adds just an extra couple of minutes to the process. They're so good. (The original recipe called for one bag of marshmallows, but after retesting, we've updated it to call for two bags. This should yield a chewier, gooier treat.)

8 ounces butter, salted or unsalted, preferably cultured, plus extra for pan
2 10 1/2-ounce bag marshmallows (see note)
1 12-ounce box Rice Krispies cereal

Steps:

  • Line rimmed sheet pan with parchment paper or wax paper, or butter it well.
  • In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Watch closely and stir often.
  • When butter is evenly browned, stir in marshmallows. (If using unsalted butter, stir in 1/8 teaspoon salt.) Melt and cook, stirring often, until mixture turns pale brown, then stir constantly until lightly browned but not dark, 3 to 5 minutes.
  • Turn off heat, add cereal, and mix well, preferably with a silicone spoon or a spatula. Scrape into prepared pan and press down lightly. If necessary, butter hands to press mixture flat. Let cool, and cut into squares or bars.

Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
  • Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

3 ounces puffed brown rice, approximately 6 cups
3 tablespoons flax seed oil, plus extra for the pan
1 tablespoon orange blossom honey
7 ounces mini marshmallows, approximately 4 cups
3 ounces toasted slivered almonds, approximately 3/4 cup
1 1/2 ounces coarsely chopped dried cranberries, approximately 1/3 cup
1 1/2 ounces coarsely chopped dried cherries, approximately 1/3 cup
1-ounce dried blueberries, approximately 1/3 cup

Steps:

  • Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil and set aside. Preheat the oven to 425 degrees F.
  • Spread the brown puffed rice evenly on a sheet pan. Toast in the oven for 4 minutes, stirring occasionally. While the rice is toasting, prepare the marshmallow mixture.
  • Place the oil, honey, and marshmallows in a large mixing bowl set over a pot of gently simmering water. Stir until the marshmallows are melted, approximately 4 to 5 minutes. Once the marshmallows are melted, quickly add the toasted brown rice, almonds, and fruit and stir to combine. Coat your hands or a spatula with oil and spread the mixture evenly into the pan. Once the mixture has cooled completely, cut into squares and store in an airtight container for 1 to 2 days.

1 cup brown rice syrup
2 tablespoons almond butter (or peanut butter)
2 teaspoons vanilla extract
6 cups dry natural brown crispy rice cereal
1/2 cup peanuts (optional)
1/2 cup raisins (optional) or 1/2 cup currants (optional)
1/2 cup unsweetened carob chips (optional)
1/2 cup chopped almonds (optional)

Steps:

  • Put oil in a large pot and heat.
  • Add rice syrup and nut butter. Stir and heat until bubbles form.
  • Turn off heat and add vanilla extract.
  • Add cereal and mix well. Stir in any optional items and mix lightly.
  • Put mixture into a 9 x 13 pan. With slightly wet hands, press mixture flat.
  • Let set to room temperature. Slice and serve. Lasts a week in an airtight container.

1 pinch flaked sea salt (such as Maldon®)

Steps:

  • Melt butter in a saucepan over medium heat, stirring constantly, until golden brown and has a nutty aroma, about 5 minutes. Add marshmallows to browned butter, reduce heat to medium-low, and cook, stirring occasionally, until marshmallows are melted, 3 to 4 minutes.
  • Stir bourbon and 1 teaspoon sea salt into marshmallow mixture and remove saucepan from heat. Add rice cereal to marshmallow mixture and mix until cereal is evenly coated with marshmallow mixture; transfer to a 9x13-inch baking dish.
  • Place a sheet of parchment paper over rice cereal mixture and press into dish. Remove parchment paper and sprinkle flaked sea salt over the top. Cool treats to room temperature, at least 30 minutes.
