HOME-STYLE BROWN RICE PILAF



Home-Style Brown Rice Pilaf image

This is comfort food at its best with mild flavors and it's simple to make. This is a very versatile dish: if you prefer, you can use almonds in place of the cashews, and cilantro in place of the parsley.

Number Of Ingredients 13

1 ½ cups water
½ teaspoon salt
¾ cup uncooked brown rice
3 tablespoons butter
1 ½ cups chopped onion
1 clove garlic, minced
2 carrots, sliced
2 cups fresh sliced mushrooms
1 cup chickpeas
2 eggs, beaten
freshly ground black pepper
¼ cup chopped fresh parsley
¼ cup chopped cashews

Steps:

  • Bring 1-1/2 cups water to boil, add rice. Bring contents back to a boil, cover the pot and simmer for 45-50 minutes, or until rice is tender.
  • Approximately 20 minutes before rice is finished cooking heat the butter in a large skillet over medium heat. Stir in onions and saute them, stirring frequently until they soften. Add the garlic and carrots and continue stirring for 5 minutes.
  • Place mushrooms inside of skillet and cook until mushrooms begin to brown, about 10 minutes. Add the chickpeas and cook 1 more minute.
  • When the rice is finished cooking pour the eggs into the skillet and cook the mixture, stirring constantly until the eggs are cooked. Remove the skillet from the heat, stir in pepper, parsley, and nuts.
  • Spoon the cooked rice into the skillet and stir well. Serve the pilaf hot with soy sauce on the side for added flavor.

This is a recipe that I created recently using fresh herbs from my home garden. I made this recipe for My brother and I for lunch with Cuban inspired grilled pork chops and my Mango, Avocado and Cucumber salsa which I submitted yesterday. It was a yummy meal, very satisfying and delicious. It is a very easy recipe to throw together, I acutally make it in my rice cooker.

Number Of Ingredients 14

2 cup(s) brown rice, raw (i use uncle ben's)
4 1/2 cup(s) vegetable stock, (home made or purchased)
3 tablespoon(s) olive oil, extra virgin
1 large red onion, diced
5 clove(s) garlic, pressed
2 tablespoon(s) fresh oregano, chopped
2 stalk(s) celery, diced
2 large carrots, diced
2 teaspoon(s) ground cumin
2 medium serrano chiles, seeded and finely minced
1/2 large red bell pepper, diced
1/2 cup(s) fresh cilantro, chopped
1 can(s) 19.75 oz. can black beans
- salt and pepper to taste

Steps:

  • Heat oil in rice cooker (or heavy bottom pot), stir in onions and cook until edges begin to turn brown; add in celery, carrot and red bell pepper. Cook until vegetables are beginning to get tender(about 5 minutes).
  • Add rice to vegetable mix. Mix rice thouroughly into vegetable mixture. Then add in garlic, cumin and serrano chillies. Allow to cook for 3 or 4 minutes.
  • Stir in the drained beans and vegetable stock. Season with salt and pepper to taste. Cover and cook until rice is done.

1 small green pepper, chopped
1/2 cup chopped sweet red pepper
1/2 cup chopped sweet yellow pepper
1/2 cup chopped red onion
2 tablespoons canola oil
2 cans (15 ounces each) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons cider vinegar
1/2 teaspoon garlic salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
2-1/2 cups hot cooked brown rice

Steps:

  • In a large saucepan, saute peppers and onion in oil until tender. Stir in the beans, tomatoes, vinegar, garlic salt, pepper and cayenne. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until desired consistency, stirring occasionally. Serve with rice.
