SPICED CHICKEN AND RICE WITH APPLES AND RAISINS



Spiced Chicken and Rice with Apples and Raisins image

Chicken thighs are seasoned with warm spices like cumin and cinnamon, baked on top of basmati rice with apples and raisins- an easy, warm, one-pot fall recipe!

8 chicken thighs (bone-in, skin OFF (see notes))
3 tablespoons extra-virgin olive oil (divided)
2 teaspoons kosher salt (divided)
1/2 teaspoon black pepper (divided)
1 teaspoon cumin
1 teaspoon ground cinnamon
1.5 cups basmati rice (or other long grain white rice (see notes))
1 onion (diced)
1/2 cup raisins
1 apple (diced (about 1 cup))
1/2 cup slivered almonds (or sliced)
2.5 cups chicken stock/broth
chopped fresh parsley (for garnish (optional))

Steps:

  • Preheat the oven to 350 degrees F. Drizzle 1 tablespoon of the olive oil in the bottom of a 9x13 baking dish.
  • Mix the chicken thighs (take skin off if not already off) in a large bowl with the remaining 2 tablespoons olive oil, 1.5 teaspoons of the kosher salt, 1/4 teaspoon black pepper, the cumin (1 teaspoon), and the cinnamon (1 teaspoon) until well coated. Set aside.
  • Add the basmati rice (1.5 cups), the diced onion, the diced apple, the raisins (1/2 cup), the slivered almonds (1/2 cup), and the remaining 1/2 teaspoon of kosher salt and 1/4 teaspoon black pepper to the prepared baking dish. Stir to coat in the oil.
  • Pour the chicken stock on top of the rice mixture. Place the chicken thighs on top.
  • Cover dish with aluminum foil. Bake at 350 degrees for 40-50 minutes, until chicken is starting to cook and liquid underneath is bubbling. Remove foil; bake for another 20 minutes, or until chicken is completely cooked (you can check that it's 165 degrees with a meat thermometer if you wish).
  • Remove the chicken thighs and place on a plate. Stir the rice mixture to fluff up a bit and distribute all the juices.
  • Serve.

1 tablespoon butter, unsalted
1 medium onion, diced
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 cup uncooked basmati rice
3/4 cup golden raisin
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in medium saucepan. Saute onion, cloves, and cinammon until the onion is translucent.
  • Rinse the uncooked rice in a sieve with cold running water. Add rice to pan, sirring to coat.
  • Add raisins, salt, and pepper. Add 2 cups water. Increase the heat and bring to a boil. Reduce heat and cover. Cook 10-15 minutes until water has been absorbed & rice is cooked.
  • Remove from heat and let stand, covered, for 5 more minutes. Season with additional salt and pepper if desired.

This is my easy adaptation of an Afgani rice dish recipe. It has a hint of sweetness to complement the savory flavors. A big hit for our whole family, and a tasty way to dress up rice!

1 cup basmati rice
1 3/4 cups water (or amount suggested by rice packaging)
1/2 tablespoon margarine
1 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
1/8 teaspoon cumin
1/8 teaspoon pepper
2 tablespoons oil
1/2 tablespoon sugar
1/2 cup raisins
2 carrots

Steps:

  • Set raisins to soak in water for 15-30 minutes. If time allows, drain this water off and use it to cook the rice. Otherwise, discard soaking water. This will make the raisins plump and juicy in the dish.
  • Bring water to boil in a small to medium pot. Add margarine, rice, and the five dry spices to the water. Stir. Cover. Reduce heat to very low. Simmer rice for 15 minutes, then remove from heat and let sit another 5 minutes. These cooking times are given by my brand of rice. Adjust if needed for your brand.
  • While rice is cooking, peel carrots, then shred, or shave into short strips with a vegetable peeler. Feed carrot stubs to hungry kids, if applicable.
  • When cooked rice is standing by, heat oil in a small skillet on medium high heat. Add sugar and stir until it dissolves. Add carrot shavings and drained, soaked raisins to the skillet. Saute and stir until carrots wilt a bit. Remove from heat.
  • Fluff rice with a spoon or fork and garnish with carrot and raisin mixture. Enjoy!

1 cup brown basmati rice
1/2 teaspoon sea salt
1 tablespoon lemon juice
2 teaspoons finely grated fresh lemon rind
1 bay leaf
2 tablespoons finely chopped fresh parsley or 1 tablespoon dried parsley
1 1/2 tablespoons butter or 1 1/2 tablespoons olive oil

Steps:

  • Rinse rice well. Bring to a boil 2 cups of water,salt, lemon juice & rind, bay leaf and parsley.
  • Add rice. Return to a boil, then lower heat and cover.
  • Simmer for 40 minutes or until all water has been absorbed.
  • Turn heat off and let the rice sit , covered and undisturbed for 5 minutes.
  • Add butter or oil and mix gently with a fork.(take bay leaf out).
