MOM'S MEAT LOAF

Number Of Ingredients 11

2 large eggs, lightly beaten
3/4 cup 2% milk
2/3 cup finely crushed saltines
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon rubbed sage
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

CLASSIC MEATLOAF

Number Of Ingredients 10

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

Jamie Deen's wife makes this meatloaf it is very good. I love the sauce that you put on top, it's what makes it so good.

MEATLOAF
2 lb hamburger
1 medium onion
3 Tbsp ketchup
2 eggs
1 slice white bread
salt and pepper (to taste)
GLAZE
1/4 c ketchup
1 Tbsp dejon mustard
2 tsp brown sugar

Steps:

  • 1. Preheat oven to 350 degrease.
  • 2. mix meatloaf ingredients, press into loaf pan.
  • 3. bake for 30 minutes, remove from oven and spread glaze on top, return to oven and bake for 30 minutes more remove from oven, let cool 10 minutes.

This is my favorite meatloaf recipe, best I have ever eaten. I got it from my Paula Deen cookbook.

2 lb ground beef
1 med onion (chopped)
3 Tbsp ketchup
2 eggs
1 slice white bread (torn into pieces)
1 tsp salt
3/4 tsp black pepper
GLAZE:
1/4 c ketchup
1 Tbsp mustard
2 tsp packed light brown sugar

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In a small bowl whisk together glaze ingredients
  • 3. In a large bowl, combine all the meatloaf ingredients and mix well
  • 4. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes.
  • 5. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more
  • 6. Remove from oven and let stand for 5 minutes.
  • 7. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.
