So simple to make and it is amazing! I am asked to bring this to every family dinner! Recipe is similar to others on here, but the measurements are different. **Had this again last night for my son's birthday dinner -- super easy and as always a HUGE hit. I found this originally on allrecipes. I am not sure who created it.

1 cup butter, melted
2 eggs, beaten
1 (8 1/2 ounce) package cornbread mix
1 (15 ounce) can whole kernel corn, drained
1 (14 3/4 ounce) can creamed corn
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees Celsius.
  • Lightly grease a 9x9 baking dish.
  • In a medium bowl, combine all ingredients (butter, eggs, corn bread mix, whole and creamed corn, and sour cream).
  • Spoon mixture into prepared dish.
  • Bake for 50 - 60 minutes in preheated oven (until top is golden brown around the edges).
  • *Please note, if you are going to double this recipe, the cooking time WILL need to be increased.

An old friend of mine threw this together one night for a cookout and I picked his brain as to how he did it. This was his "guesstimate" which I have since made and it was just as good. A real crowd pleaser. He cooked it in a disposable aluminum casserole on the top rack of his gas grill which added a really great flavor. I just did it in the oven.

3 eggs
1/4 cup butter (1/4 cup)
1 cup grits
1/2 cup white cornmeal mix
1 onion, chopped
2 cups silver queen creamed corn (1 frozen tube)
1/2 cup sour cream
1 cup cubed monterey jack pepper cheese
1 cup shredded extra-sharp cheddar cheese
2 tablespoons chopped pickled jalapeno peppers (or to taste)
salt and pepper
4 cups milk (or enough to make it resemble a thick batter)

Steps:

  • Melt butter in a bowl and add the rest of the ingredients. Pour into a pyrex (13x9) and cook in a 350 degree oven for about an hour, or until set.
