I experienced the most wonderful broiled shrimp dinner at a local restaurant and created my version which is pretty darn close to their recipe. You will absolutely love these! Prep time includes cleaning and butterflying shrimp.

1 lb shrimp, peeled &,deveined (the bigger, the better)
2 tablespoons melted butter
garlic salt
1/4 cup unseasoned breadcrumbs
2 tablespoons grated parmesan cheese
1 teaspoon dried parsley
melted butter, to drizzle

Steps:

  • Butterfly shrimp and place on non-stick baking pan or line pan with aluminum foil for easier cleanup.
  • Brush shrimp with melted butter.
  • Sprinkle lightly with garlic salt.
  • Mix together bread crumbs, Parmesan cheese and parsley.
  • Sprinkle lightly over shrimp.
  • Drizzle lightly with additional melted butter.
  • Broil until light brown.

1 lb unshelled shrimp
2 garlic cloves, finely chopped
4 tablespoons olive oil
1 teaspoon cumin
1/2 teaspoon ground ginger
1 teaspoon paprika
1/4 teaspoon cayenne
1 bunch cilantro, finely chopped
salt and pepper
lemon wedge

Steps:

  • Using a sharp knife, butterfly the shrimp by splitting them down the middle - but not all the way through, leaving the tails intact (the original recipe said to just use kitchen scissors and cut them down the middle and leave the tails intact. . up to you which method to use).
  • Lay the shrimp in a single layer in a large shallow dish. In small bowl, mix remaining ingredients, except lemon wedges. Pour over shrimp and let marinate for 2 hours.
  • Preheat broiler. Broil shrimp for 4 minutes or until pink. Serve with lemon wedges.

1 lb uncooked shrimp, peeled and deveined
1/2 cup sesame oil
1/4 cup rice wine or 1/4 cup sherry wine
1/4 cup soy sauce
3 tablespoons honey
2 garlic cloves, finely minced (or crushed)
2 green onions, chopped
1 tablespoon sesame seeds
1 -2 tablespoon your favorite hot sauce (adjust to taste)

Steps:

  • Combine all the ingredients for sauce together in a bowl and whisk until the honey dissolves.
  • Stir in the shrimp and marinate for at least 30 minutes.
  • Preheat a broiler to high.
  • Thread shrimp onto skewers, reserving the marinade in a saucepan.
  • Stir in 1 tbsp cornstarch and boil the marinade until thick and syrupy.
  • Baste the shrimp with the sauce and save any extra sauce for serving time.

Here I have opted for ras el hanout, a complex North African blend that delivers modest peppery heat along with pungent elements of cumin, fenugreek and coriander, as well as the warm astringency of allspice and cloves. Harissa, a North African hot sauce, seasons the dip. Serve it as an appetizer or pair it with a grain like rice or farro, or a buttery tumble of fluffy couscous for a more substantial meal.

1 pound large shrimp, about 20, preferably Gulf, shelled and deveined
1/2 teaspoon salt
1 cup plain Greek-style yogurt
1 tablespoon harissa paste, or to taste
1 tablespoon finely minced cilantro leaves
2 tablespoons ras el hanout (Moroccan spice blend)
2 tablespoons unsalted butter, melted
1/2 lemon, seeds removed

Steps:

  • Place shrimp in a bowl and add the salt. Mix well and set aside 30 minutes. Meanwhile, stir the yogurt and mix in the harissa and cilantro. Transfer to a serving dish and set aside.
  • Heat broiler. Rinse and dry shrimp, place in a bowl and add the ras el hanout. Toss to mix thoroughly. Select a shallow baking dish that will hold the shrimp snugly in a single layer. Brush with a little of the butter. Arrange shrimp in the dish and brush with remaining butter. Broil close to the source of heat until shrimp are lightly browned and cooked through, 6 to 8 minutes. (Alternatively, the shrimp can be placed on soaked wooden skewers, about 3 shrimp per stick, and broiled or grilled over high heat, turning once.) Squeeze the lemon over the shrimp.
  • Serve as a cocktail snack directly from the dish with picks to skewer shrimp and harissa dip alongside.
