1/4 cup butter, softened
1 tablespoon finely chopped shallot
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh parsley
1 teaspoon Dijon mustard
1 teaspoon lemon juice, freshly squeezed
2 large garlic cloves, finely minced
1/2 teaspoon salt
16 ounces fresh halibut steaks, 3/4 inch thick
1 tablespoon butter
1 tablespoon extra virgin olive oil

Steps:

  • In a small mixing bowl, combine 1/4 cup butter, shallots, dill weed, parsley, mustard, lemon juice, garlic and salt; mix well.
  • Rinse halibut steaks in cold water and pat dry on paper towels.
  • In a 8 inch x 8 inch oven proof casserole dish, add 1 tablespoon of butter and 1 tablespoon of olive oil. Place under the broiler on HIGH heat for about 2 minutes or until the butter has melted.
  • Place the halibut steaks in the casserole dish.
  • Spread one half the lemon/herb mixture equally over each steak.
  • Place under the broiler on HIGH heat and broil for 6 minutes.
  • Turn halibut steaks over and spread the remaining lemon/herb mixture evenly over the steaks.
  • Continue to broil on HIGH heat for another 5 to 6 minutes or until fish flakes easily with a fork. Do not overcook the fish.
  • Serve with cooked basmati brown rice.
  • You may also use finely chopped chives or green onions instead of the shallots.

1 large piece of skinless halibut (about 1 1/2 pounds; preferably center-cut)
1 lemon, halved, plus wedges for serving
Kosher salt and freshly ground pepper
1/2 cup mayonnaise
2 tablespoons roughly chopped fresh chives
2 tablespoons roughly chopped fresh dill
2 tablespoons roughly chopped fresh parsley
4 cups baby arugula (about 3 ounces)
2 tablespoons extra-virgin olive oil
3 large heirloom or beefsteak tomatoes, sliced 1/2 inch thick

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Cut the halibut into 4 pieces; arrange on a foil-lined baking sheet, cut-side down. Squeeze 1 lemon half over the fish and season with salt and pepper; spread the mayonnaise over the tops. Bake until the fish is almost cooked through, 6 to 7 minutes. Switch the oven to broil. Broil the fish until the tops are golden, about 3 minutes.
  • Meanwhile, combine the chives, dill and parsley in a small bowl; set aside. Toss the arugula with the juice of the remaining lemon half and 1 tablespoon olive oil; season with salt and pepper.

4 tablespoons olive oil
6 large slices tomato
Salt and pepper to taste
6 thin slices lemon
12 flat anchovy fillets
1 tablespoon minced fresh parsley
6 black Nicoise olives

Steps:

  • Cut garlic in half and rub fish steaks with cut sides. Brush fish with three tablespoons of the olive oil.
  • Broil the fish steaks under a preheated broiler about five minutes, turn and broil on the other side about three minutes longer. Fish should not be quite cooked through.
  • Place a slice of tomato on each fish steak, brush with remaining olive oil and season to taste with salt and pepper. Broil two to three minutes longer, until the tomato is soft and beginning to brown around the edges. Remove fish steaks to a serving platter.

2 halibut steaks, cut in half (about 1 1/2 pounds)
Juice of 1 lime or lemon
1 tablespoon olive oil
1/4 teaspoon saffron threads
1 cup dry white wine
2 shallots, minced
1 clove garlic, minced
1 jalapeno pepper, seeded and chopped
2 tablespoons butter
2 cups Arborio or short grain rice
Approximately 1 1/2 quarts hot chicken or fish stock, or water
Coarse salt and freshly ground pepper to taste
1/4 cup heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Preheat broiler. Wipe the halibut steaks dry with paper towels. Sprinkle with lime or lemon juice and olive oil. Set aside. Mix the saffron with the wine and set aside.
  • In a large skillet, soften the shallots, garlic and jalapena pepper in the butter. Add the rice and cook, stirring frequently, until the grains are opaque. Pour in the saffron wine mixture and bring to boil, stirring.
  • Turn down heat and add a cup of stock or water. Simmer over low heat, stirring occasionally. As the liquid evaporates, add more. Season with salt and pepper to taste. Continue adding liquid and stirring for about 20 minutes, or until the rice is al dente. The liquid should be absorbed; the rice should be creamy.
  • While the rice is cooking, broil the halibut steaks. If they are done before the rice, keep warm.
  • Add the cream to the rice, stir thoroughly over low heat and correct seasoning. Place half a halibut steak on each plate, plus a serving of rice. Sprinkle with chives and serve.

4 -5 tablespoons sherry wine
1 large garlic clove
1/2 teaspoon ground ginger

  • Combine the above marinade ingredients in a non metallic container.

  • 5. Preheat the broiler, set the oven rack about 4 inches from the heat and lightly oil the broiler pan rack. Season each side of the halibut steaks with salt and pepper and set the steaks on the broiler rack. Broil the halibut for 3 to 4 minutes, turn the steaks and broil on the other side until the fish is just opaque through, 4 to 5 minutes longer. Meanwhile, reheat the compote and stir in the walnut pieces.
  • 6. Transfer the halibut steaks to individual dinner plates, spoon the cranberry compote partly over and alongside the halibut and serve immediately. Garnish with pear wedges or chopped walnuts if you like.

This is my stand by easy dinner party recipe. The fish is light and flaky and is complemented nicely by the richness of the herbed goat cheese topping. It's impressive yet as simple as can be.

6 ounces soft herbed goat cheese
2 (6 ounce) halibut steaks
1/2 cup breadcrumbs

Steps:

  • In a small bowl, stir goat cheese. Pat this evenly over the tops of the halibut steaks.
  • Press fish, cheese-side down, into a bowl of breadcrumbs. Place the steaks on a baking sheet. Spray lightly with PAM.
  • Bake for about 15-20 minutes at 400 degrees. You will know they are done when the topping is browned and the fish can be flaked with a fork.

1/4 cup miso, shiro (sweet white miso paste)
2 tbs sake
2 tbs mirin
1.5 lbs halibut steak, cut into 4 melallions
1 tbs sesame seeds
Sliced lime for garnish
pickled ginger for garnish

Steps:

  • Preheat broiler. Line a heavy baking sheet with aluminum foil. Lightly oil foal or coat with nonstick spray and set aside. Place halibut on prepared baaking sheet and brush tops with half the miso glaze. Broil 3-4 inches from the flame until golden brown (4-5 minutes). Turn over, brush with remaining glaze. Sprinckle sesame seeds on topa nd broil until fish is opaque in the center (3-4 minutes). Serve with lime wedges and pickled ginger.

2/8oz Fillets of Halibut
2-3oz Soft Butter
1/2oz Lemon Juice
Splash White Wine
Dash Worcestershire Sauce
1/2 teasp Parsley
1/2 teasp Dil
Good Pinch of Cracked Black Pepper & Sea Salt
2-3oz Cooking Oil

Steps:

  • Mix all ingredients accept for cooking oil and fish in bowl.Whisk together until thoroughly blended,then chill for 10-15 min.Then in Lg. saute pan heat cooking oil on Med High heat.Take Halibut and season with a little Salt & Pepper,Dill.Place in pan and sear for about a 1Min. on both sides until lightly browned.Remove from heat then place 1oz or so of Butter mixture on each Halibut fillet.Place pan with halibut under broiler in oven for about 1-2min. to finish.Remove from heat and don't forget to turn off the broiler,I need to work on this one!Place fish on plates,garnish with lemon and fresh parsley.Wonderful with steamed rice.

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Cut the halibut into 4 pieces; arrange on a foil-lined baking sheet, cut-side down. Squeeze 1 lemon half over the fish and season with salt and pepper; spread the mayonnaise over the tops. Bake until the fish is almost cooked through, 6 to 7 minutes. Switch the oven to broil. Broil the fish until the tops are golden, about 3 minutes.Meanwhile, combine the chives, dill and parsley in a small bowl; set aside. Toss the arugula with the juice of the remaining lemon half and 1 tablespoon olive oil; season with salt and pepper.Top each fish fillet with the herb mixture.
