These are so delicious when warm and bubbly from the broiler. We often have these for a weekend lunch. Sometimes we use them for a quick dinner with a bowl of soup and green salad.

4 slices whole grain bread, toasted on both sides in broiler
3 large tomatoes, sliced
8 ounces cheddar cheese, grated
1 small green pepper, finely diced
1 teaspoon Worcestershire sauce
2 1/2 teaspoons Dijon mustard
5 -6 tablespoons mayonnaise
1/2 small onion, grated
ground pepper, to taste

Steps:

  • Mix cheese, green pepper, Worcestershire, mustard, mayonnaise, onion and pepper.
  • Place sliced tomatoes on toasted bread and divide cheese mixture evenly among them. Gently press cheese mixture onto tomatoes with the back of a spoon until tomatoes are completely covered.
  • Broil until bubbling and golden brown.

8 thick-cut bacon slices
8 slices country-style sourdough bread or batard (cut on deep diagonal into 5x3x1/2-inch slices)
2 cups (packed) grated extra-sharp cheddar cheese (about 8 ounces)
8 tomato slices, seeds removed, slices drained on paper towels
4 tablespoons mayonnaise

Steps:

  • Cook bacon in heavy large skillet over medium heat until brown and crisp, turning occasionally, about 6 minutes. Transfer bacon to paper towels and drain. Wash and dry skillet.
  • Place 4 bread slices on work surface. Press 1/4 cup grated cheese onto each slice. Top each with 2 tomato slices. Sprinkle with pepper. Place 2 bacon slices atop each, breaking into pieces if necessary to fit. Press 1/4 cup grated cheese over bacon on each. Top sandwiches with remaining bread slices, then spread 1/2 tablespoon mayonnaise over top of each sandwich. Heat 2 heavy large skillets over medium heat. Add 2 sandwiches, mayonnaise side down, to each skillet. Place plate atop both sandwiches to weigh down. Cook sandwiches until bottom is golden brown, about 2 minutes. Spread top of each sandwich with 1/2 tablespoon mayonnaise. Turn sandwiches over, mayonnaise side down. Top with plates and cook until golden brown on bottom, about 2 minutes. Transfer sandwiches to work surface. Cut sandwiches crosswise in half and serve

Broiled Tomato Cheese Sandwich image

I love the combination of tomato and cheese. The short marination of the tomatoes in the olive oil and the balsamic vinegar gives it a nice kick. Other vinegar is not as nice. If I have it in the fridge I add an extra topping of mozzarella and you can please the meat eaters by adding slices of crunchy bacon. You can make it a closed sandwich by just toasting 4 more slices of bread to top the sandwich.

2 tablespoons olive oil
2 tablespoons balsamic vinegar (less if you use other vinegar)
3 -4 tomatoes, sliced, they must be ripe and have a good flavor
3 tablespoons mayonnaise
3 -4 tablespoons grated parmesan cheese (other cheese works well too)
1 tablespoon basil, finely chopped (1/2 teaspoon dried basil can be substituted)
1/4 teaspoon dried oregano
ground black pepper
3 -4 tablespoons grated parmesan cheese, for topping
4 slices bread, lightly toasted, for a closed sandwich toast 4 more slices

Steps:

  • Preheat broil/grill.
  • In a shallow bowl whisk together the olive oil and balsamic vinegar, add the tomatoes and mix gently, set aside.
  • In a small bowl mix together: mayonnaise, cheese, basil, oregano and black pepper.
  • Spread this on the 4 slices of toast.
  • Place on a baking sheet and broil until the cheese is melted and bubbly.
  • Remove from the broil, top with the (drained) tomato slices and then with the rest of the Parmesan cheese, return to the oven and broil for approx 5 minutes.
  • Serve open or closed.
