This roasted broccoli recipe takes a vegetable side dish over the top! Buttery bread crumbs and store bought hollandaise sauce make this broccoli irresistible!

2 heads of broccoli
2 tablespoons olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup Panko bread crumbs
1 tablespoon chopped garlic
1.9 ounce package Hollandaise Sauce

Steps:

  • Preheat oven to 450 degrees.
  • Cut the broccoli into florets and place on a baking sheet. Toss with olive oil, salt, pepper and garlic powder and roast for 20 minutes, turning over halfway through.
  • While the broccoli is roasting, melt the butter and garlic in a large skillet. Add the breadcrumbs and toast while tossing, about 5 minutes until golden brown. Remove the breadcrumbs from the skillet and set aside.
  • Make the Hollandaise sauce according to the package directions.
  • To serve, place the roasted broccoli on a serving platter and top with the breadcrumbs and the Hollandaise sauce. Serve any extra sauce on the side.

1 to 2 c broccoli florets
2 Tbsp butter
1 large garlic clove, minced
1/4 c italian bread brumbs

Steps:

  • 1. Steam the broccoli florets, to your preferred tenderness.
  • 2. While the broccoli is cooking, prepare the bread crumb topping.
  • 3. Melt butter over medium heat. Add the minced garlic, and cook for one minute.
  • 4. Next add the bread crumbs, stirring until the crumbs are golden brown, about three minutes or so. Remove from heat.
  • 5. Place steamed broccoli in a serving bowl, dot with butter, and top with bread crumb mixture.
  • 6. So quick and easy, you are ready to serve!

1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Steps:

  • Preheat the oven to 450°F. Cut the broccoli into florets and place on a baking sheet. Toss with the olive oil, salt, pepper and garlic powder and roast for 15 minutes, turning halfway through. While the broccoli is roasting, melt the butter in a large skillet. Add the garlic, stir and cook for one minute, then add the breadcrumbs tossing to coat in the butter and garlic. Cook until the breadcrumbs are brown and toasted, about 5 minutes. Make the hollandaise sauce according to package directions. 1 to 1 1/2 pounds broccoli florets
Salt and freshly ground black pepper
4 slices firm white bread, crusts removed
6 tablespoons butter

Steps:

  • Place the broccoli florets in a vegetable steamer basket.
  • Pour about 3/4-inch water into a large saucepan. Place the steamer basket in the pan, bring the water to a simmer over medium-high heat, and cover. Steam for 5 minutes, or until the broccoli is crisp-tender. Transfer to a serving bowl and season with salt and pepper.
  • Meanwhile, place the center of the bread into a food processor and pulse to make bread crumbs. In a small saucepan, heat butter on medium high until butter turns a nutty brown color. Add the bread crumbs and toss in the butter. Pour the buttered crumbs onto the broccoli and toss to coat.

Buttered breadcrumbs can be used to top casseroles and au gratin dishes or as garnish for vegetables. For extra rich buttered breadcrumbs, double the amount of butter. This uses Soft Breadcrumbs which I posted separately. Variations: Add to taste grated parmesan cheese, minced parsley, minced toasted walnuts, toasted almonds or toasted sesame seeds.
