Spicy Broccoli-Mango Salad image

From Betty's Soul Food Collection... This side salad rocks with sweet and spicy flavors that blend broccoli, mango, jazzed-up pecans and a citrusy dressing into an amazing taste sensation.

4 teaspoons sugar
1/4 to 1/2 teaspoon ground red pepper (cayenne)
1/2 cup pecan halves, broken into coarse pieces
2 containers (6 oz each) Yoplait® original yogurt orange crème
1/3 cup light mayonnaise
1 tablespoon cider vinegar
1/8 teaspoon salt
5 cups fresh broccoli florets and cut-up stems (1 small bunch)
2 ripe medium mangoes, peeled, seed removed and diced (1 1/2 cups)
1/4 cup finely chopped red onion

Steps:

  • Lightly spray 8-inch skillet with cooking spray. Add sugar and ground red pepper; mix well. Stir in pecans. Cook over low heat, stirring occasionally, until sugar mixture is melted and pecans are coated. Remove from heat; set aside to cool.
  • In small bowl, mix dressing ingredients with wire whisk until smooth. In large bowl, mix salad ingredients.
  • Add dressing to salad; toss gently to mix. Just before serving, stir in pecans. Cover and refrigerate any remaining salad.

1 kg broccoli floret
2 teaspoons cayenne pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon cumin seed
2 teaspoons garlic paste
2 teaspoons oil
2 medium tomatoes, washed and sliced
1/2 cup fresh parsley, washed and chopped
1 cup lettuce, washed and shredded
1 mango, washed and diced
2 small dried red chilies, crushed
1 teaspoon honey
1/2 cup lime juice
1 teaspoon dried lime, powder

Steps:

  • Heat oil in a non-stick wok.
  • Add garlic paste and saute for a few seconds.
  • Add cumin, cayenne pepper, thyme and oregano.
  • Saute for 2 minutes.
  • Add broccoli.
  • Saute for 4 minutes.
  • Transfer to a dish.
  • Add tomatoes, lettuce and parsley.
  • Toss everything together to mix.
  • Keep aside.
  • Now prepare the mango dressing by putting all the ingredients listed under it in a blender and processing until smooth.
  • Pour this delicious orange dressing over the green salad.
  • Serve.
