400g Conchiglie Shells
200g Broccoli, sliced into littleness florets
200g Closed Cup Mushrooms, thinly sliced and quartered
175g Unsmoked Bacon, thinly sliced and fat removed
2 Garlic Cloves, roughly shopped
100g Spring Onions, chopped
500g Boneless Chicken Breast, chopped into large skunks
400g Conchiglie Shells

180ml Skimmed Milk
30ml Soft Butter
190g Green Pesto
Parmesan Cheese, Grated

Steps:

  • Boil a large pan of water with a sprinkle of salt, when bubbling, add pasta to water and leave for 10 - 12 minutes. Add broccoli and leave for further 5 minutes, once cooked, drain out and add pasta and broccoli back to pan.
  • Add a tbsp of oil to a large frying pan and add to high heat. Add chicken breast to pan and fry until begins to brown, remove from the pan. Add bacon into pan and fry for around 3 - 5 minutes, then add mushroom, garlic and spring onions and leave for another 2 - 3 minutes.
  • Once bacon has cooked, add chicken back to the pan and stir together gently for another 5 minutes. Remove from heat and stir into pasta.
  • In a medium sized saucepan, melt the soft cheese and butter together on a low heat, stirring together constantly. Once melted together and the sauce is visibly thinner, stir in the milk and add the pesto and stir for roughly 5 minutes. When happy with the sauce, stir into the pasta pan and mix together well so all contents are coated.
  • Now, add all the pasta mix to a deep oven dish and spread out around dish, then sprinkle over Parmesan cheese and put into the oven, for about 30-35 minutes on 200c (Fan Oven) or until Cheese is brown and golden.

400g penne, farfalle or conchiglie pasta
250g broccoli, cut into florets
1 garlic clove, peeled
1 large lemon
½ tsp dried chilli flakes
3 tbsp pine nuts
5 tbsp extra-virgin olive oil
3 tbsp parmesan (or vegetarian alternative), grated

Steps:

  • Tip the pasta into a large pan of boiling salted water and cook according to pack instructions. Meanwhile, bring a smaller pan of salted water to the boil, add the broccoli and boil for 4 minutes.
  • Drain the broccoli and return it to the pan. Lightly mash the broccoli with a potato masher or fork. Finely grate the garlic and zest the lemon, then mix into the broccoli with the chilli flakes and pine nuts. Cut the lemon in half and keep for later.
  • Drain the pasta and return it to the pan. Stir in the broccoli pesto and squeeze over the juice of 1⁄2 lemon. Pour in the olive oil and generously season with salt and pepper. Spoon in the grated Parmesan, toss the pasta well and serve.

1/3 cup walnut halves
1/2 cup packed fresh basil leaves, plus a few sprigs, for garnish
1 clove garlic, smashed
1 1/2 cups chopped raw broccoli florets and tender stems (about 4 ounces)
1/4 cup low-sodium vegetable broth
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon red pepper flakes, optional
Kosher salt
Juice of 1/2 small lemon (1 tablespoon)
2 tablespoons extra-virgin olive oil
3 tablespoons freshly grated Parmigiano-Reggiano, Romano or grana padano cheese
10 ounces whole wheat or tri-color fusilli

Steps:

  • Preheat the oven to 350 degrees F. Spread the nuts out on a small baking pan and toast lightly, about 5 minutes. Set aside to cool.
  • Pulse together 1/4 cup of the walnuts and the garlic in a food processor; add the broccoli, basil, broth, nutmeg, red pepper flakes if using, 3/4 teaspoon salt and the lemon juice, and pulse until just combined. Slowly drizzle in the oil through the feed tube with the processor running and puree until a slightly chunky sauce forms, scraping down the sides of the bowl as needed. Add 2 tablespoons of the cheese and pulse until incorporated.
  • Cook the pasta in a large pot of salted water according to the package directions. Drain, reserving 1/2 cup of the cooking liquid.
  • Toss the pasta with the pesto in the dry pot or a mixing bowl, along with some of the reserved cooking liquid. Add the remaining cooking liquid if needed and additional salt to taste.
  • Transfer the pasta to individual bowls and sprinkle with the remaining 1 tablespoon cheese. Chop the remaining walnuts and scatter on top. Garnish with basil leaves and serve.

Pesto becomes more full-bodied with the addition of broccoli that's blanched in the same pot as the pasta and fresher with the combination of mint and lemon. For a sauce that's light and loose, use only the florets - not the stems. Raw walnuts have a welcome natural sweetness and nice crunch that complement the pesto, but you can leave them out or substitute sunflower seeds if you have a tree-nut allergy.

4 cups broccoli florets (10 ounces from 2 crowns)
1 pound cut pasta, such as medium shells
1 large garlic clove, smashed
2 packed cups fresh mint leaves (about 2 ounces from one small bunch)
Black pepper
1/2 cup extra-virgin olive oil, plus more for serving
1 lemon, zested and juiced
Parmigiano-Reggiano, for serving
1/2 cup walnuts, chopped

Steps:

  • Bring a large saucepan of water to a boil over high heat. Add 1/4 cup salt, then add the broccoli. Cook, stirring occasionally, until bright green and just tender, about 5 minutes. Use a spider or slotted spoon to transfer to a food processor; keep the water boiling.
  • Drop the pasta into the boiling water and cook according to the package's directions for al dente. Reserve 1/2 cup pasta cooking water.
  • Meanwhile, add the garlic to the broccoli and pulse, scraping the bowl occasionally, until smooth. Add the mint, 1 teaspoon salt and 1/2 teaspoon pepper. Pulse until smooth, then add the oil with the machine running.
  • Drain the pasta well and transfer to a large bowl. Stir in the pesto. Add 2 tablespoons lemon juice and 1/2 teaspoon each salt and pepper and toss until the pasta is evenly coated. If the mixture seems thick, fold in the reserved pasta water, 1 tablespoon at a time. The mixture will thicken as it cools, so you want it to be saucy. Season to taste with salt and pepper.
  • Divide among serving dishes and top with lemon zest, then grate cheese over. Sprinkle with the walnuts, grind more black pepper on top, then drizzle with olive oil. Serve hot, warm or room temperature.

Kosher salt
4-oz. jar sun-dried tomato halves, drained and cut in 1/4" slices
half a 16-oz. bag frozen broccoli florets
1 cup prepared basil pesto (recipe follows)
2 cloves garlic
1/4 cup pine nuts, toasted in a skillet until lightly browned
1/4 cup manchego cheese, cut in pieces
3 cups basil leaves, tightly packed
1/4 cup olive oil
salt to taste

Steps:

  • PASTA: Put broccoli in a microwave safe bowl with two tablespoons of water, cover loosely with plastic wrap and microwave until tender, about 4 minutes. Stir once half way through cooking time. Remove, drain and set aside.
  • Boil pasta in plenty of salted water until al dente. Reserve one cup cooking water, drain pasta and set aside. Return pasta to cooking pot and stir in sun-dried tomatoes, pesto sauce and broccoli. Add warm pasta cooking water and stir just until sauce is evenly distributed (you may not use all the water). Serve immediately.
  • PESTO: Pulse garlic, pine nuts and manchego cheese until coarsely chopped, about the size of peas. Add basil leaves and pulse briefly to combine. With food processor running, add oil gradually in a thin stream to make a smooth paste. Add salt to taste.

  • To food processor, add oil, Parmesan, lemon zest and juice, parsley, and garlic. Puree until smooth, about 2 minutes, scraping down side as needed. Transfer pesto to pot with pasta. 2 tablespoons olive oil
1 lb skinless chicken breast half, cut into strips
1 red bell pepper, cut into strips
4 cups small broccoli florets
3/4 cup prepared basil pesto
1/3 cup freshly grated parmesan cheese

Steps:

  • Cook the penne in a large pot of water for 8-10 minutes until tender but firm.
  • While pasta cooks, heat oil in a large skillet over medium high heat. Add chicken and pepper strips and cook for 3-5 minutes.
  • Set aside.
  • Place the broccoli florets in a colander and drain the pasta over it. Place the pasta and broccoli back into the large pot.
  • Add the chicken mixture, pesto and parmesan cheese. Stir to combine.
  • To freeze:.
  • Cool. Spoon into freezer containers, seal, label and freeze for up to 3 months.
  • To serve:.

300g head broccoli , broken into florets
300g pasta (we used orecchiette)
1 tbsp pine nuts
1 large bunch of basil
1 large garlic clove
2 tbsp parmesan , finely grated
1 tbsp olive oil
50g smoked pancetta , diced
200g cherry tomatoes , halved

Steps:

  • Bring a pan of lightly salted water to the boil. Add the broccoli and boil for 5 mins. Scoop out with a slotted spoon and set aside.
  • Put the pasta in the same pan and cook following pack instructions. Meanwhile, tip the broccoli into a food processor with the pine nuts, basil, garlic, parmesan and oil, and blitz until smooth. Season with black pepper and a little salt (the pancetta is very salty).
  • Set a frying pan over a medium heat and cook the pancetta for 2 mins. Add the tomatoes and cook for 3 mins, or until softened. Toss the pasta with the broccoli pesto, tomatoes and pancetta, and loosen with a splash of pasta water, if needed. Spoon into bowls and serve.

2 cups uncooked spiral shaped pasta (I like tri color)
2 cups cooked chicken breasts, diced
2 cups broccoli florets, cooked crisp-tender and cooled
1 1/2 cups shredded mozzarella cheese
2/3 cup basil leaves, lightly packed
2 garlic cloves
1 cup low-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 cup shredded parmesan cheese
1/2 cup pine nuts, toasted (can sub with finely chopped walnuts)

Steps:

  • Cook pasta according to directions, drain and cool.
  • Combine pasta, chicken, broccoli and mozzarella.
  • Blend basil and garlic in blender or food processor until finely chopped.

  • Process to combine thoroughly.

  • Cook potatoes in large pot of boiling salted water until tender, about 10 minutes. Using slotted spoon, transfer potatoes to cutting board; return water to boil. Add broccoli; cook 3 minutes. Using slotted spoon, transfer broccoli to large bowl; return water to boil. Add linguine and cook until tender but still firm to bite, stirring occasionally. Drain, reserving 1/2 cup cooking water. Cut potatoes into small chunks. Add potatoes, pasta, and pesto to broccoli and toss, adding reserved cooking water by tablespoonfuls to moisten if necessary. Season with salt and pepper. Serve, passing cheese separately.

1 1/2 cups broccoli flowerets (about 1/2 bunch broccoli)
Salt
1 clove garlic
3 tablespoons pine nuts or walnuts
1/3 cup extra-virgin olive oil
Freshly ground black pepper
2 medium-sized boiling potatoes, peeled and cut in 1-inch chunks
1 pound linguine
Freshly grated Parmesan cheese

Steps:

  • Steam the broccoli flowerets about three minutes, until tender but still bright green. Rinse under cold water, then drain and set aside. Put a large pot of salted water on the stove to boil for the pasta.
  • When the broccoli is done, reserve four small flowerets for garnish and place the rest in the food processor along with the garlic and nuts. Process until finely ground.
  • With the machine running, pour the olive oil into the food processor through the feed tube. Stop the machine, scrape the sides, season with salt and pepper and process briefly. Transfer the mixture to a dish and set aside.
  • When the water is boiling, place the pototoes in the pot and boil for five minutes. Add the pasta, stir to separate the strands and cook until the pasta is al dente, about eight minutes. Drain potatoes and pasta together and transfer to a warm serving dish.
  • Toss the pasta and potatoes with the pureed broccoli mixture. Divide the pasta among four shallow bowls and garnish each serving with a reserved broccoli floweret and serve immediately with Parmesan cheese on the side.

About 2 3/4 cups all-purpose flour, to make your own or 1 pound dried fettuccine
2 cloves garlic, peeled and coarsely chopped
1 1/2 teaspoons kosher salt
3 cups fresh basil leaves
1/4 cup pine nuts
3/4 cup freshly grated Parmesan cheese
1/4 cup freshly grated pecorino cheese
1/4 cup extra-virgin olive oil
4 small red potatoes, thinly sliced
4 cups broccoli florets

Steps:

  • If making fresh pasta, beat the eggs together in a large bowl. Gradually stir in enough flour to make a soft, pliable dough. Knead the dough on a lightly floured surface until smooth. Shape it into a ball, cover with a damp towel and let rest for 1 hour.
  • Meanwhile, to make the sauce, place the garlic, 1 teaspoon of salt and 1 cup of basil in a food processor and pulse until chopped. Add the remaining basil and process until chopped. Add the pine nuts, cheeses and olive oil and process until the mixture forms a smooth paste. Set aside.

  • Divide the pasta dough in half and keep 1 piece wrapped in the towel. On a lightly floured surface, roll and stretch the pasta dough into a 13-by-16-inch rectangle. Let stand for 5 minutes. Cut across into 1-inch-wide strips. Repeat with the remaining dough. Bring a large pot of salted water to a boil. Cook the fresh or dried pasta until al dente, about 5 minutes for the fresh or 10 to 12 minutes for dried. Drain well and place in a large bowl.
  • Toss the pasta with the pesto and remaining 1/2 teaspoon of salt. Toss in the broccoli and potatoes. Divide among 4 plates and serve.

Pasta with Broccoli-Pine Nut Pesto image

8 cups broccoli florets (from about 1 3/4 pounds of broccoli)
1 pound orecchiette or farfalle (bow-tie) pasta
1/4 cup pine nuts
4 large garlic cloves
3 tablespoons olive oil
1 tablespoon white wine vinegar
1/2 teaspoon dried crushed red pepper
Grated Parmesan cheese

Steps:

  • Cook broccoli florets in large pot of boiling salted water until just tender, about 6 minutes. Using slotted spoon, transfer broccoli to colander and drain. Add pasta to same pot of water and cook until tender but still firm to bite. Drain pasta; reserve 3/4 cup cooking liquid. Return pasta to same pot.
  • With processor running, drop pine nuts and garlic through feed tube and chop finely. Scrape down sides of work bowl. Add broccoli, 1/4 cup reserved cooking liquid, oil, vinegar and crushed red pepper, process to coarse puree. Pour sauce over pasta; toss over medium-low heat until heated through, adding remaining cooking liquid as needed if sauce is too thick. Season with salt and pepper. Serve, passing cheese separately.

2 cups uncooked fancy pasta
2 cups chicken or 2 cups turkey
2 cups broccoli florets, steamed til barely tender
1 1/2 cups shredded low-fat mozzarella cheese
1/2 cup shredded parmesan cheese
1 cup lightly packed fresh basil leaf
2 -3 cloves garlic
1 cup fat-free mayonnaise or 1 cup low-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt

Steps:

  • Cook and drain pasta; cool.
  • Combine pasta, meat, broccoli, and cheeses in large bowl.
  • Put basil and garlic in food processor or blender; whiz.
  • Add mayo to food processor or blender.
  • Mix thoroughly.
  • Stir into pasta mix.
  • Toss to coat.
  • Refrigerate for at least 4 hours before serving.
  • During the last 1/2 hour of chilling time, toss once to mix.
  • For color contrast, serve with cherry tomatoes, cut in halves.

1 pound broccoli florets, cut into bite-size pieces (6 cups)
Kosher salt and freshly ground pepper
1/4 cup skin-on raw hazelnuts, toasted (1 ounce), plus more, chopped, for serving
1/2 cup packed fresh basil leaves, plus more for serving
1 small clove garlic, coarsely chopped
1 ounce grated Parmigiano-Reggiano (1/2 cup), plus more for serving
1/3 cup ricotta
1 teaspoon grated lemon zest, plus 2 teaspoons fresh juice
1/4 cup extra-virgin olive oil
1 pound short pasta, such as gemelli or fusilli

Steps:

  • Cook broccoli in a large pot of salted boiling water until bright green and tender, 4 to 5 minutes. Transfer with a slotted spoon to a plate; let cool slightly. Put half of broccoli in the bowl of a food processor with hazelnuts, basil, garlic, Parmigiano, ricotta, and lemon zest and juice. Pulse to combine. With machine running, stream in oil. Season with salt and pepper. (You should have 1 3/4 cups.)
  • Meanwhile, cook pasta in pot until al dente per package instructions. Reserve 1 cup pasta water; drain. Return pasta to pot, along with pesto. Add pasta water, 1/4 cup at a time, to create a silky sauce. Stir in remaining broccoli; season to taste. Serve with more Parmigiano, chopped hazelnuts, and basil.

I came up with this dish as I cleaned my freezer and pantry. Love one dish meals. You can susitute any protien, or eliminate for a nice easy side dish.

1 box cooked adente bowtie pasta
4 ham steaks
2 clove garlic
1 large head broccoli steamed
olive oil
1/2 c parmesan cheese

Steps:

  • 1. Prepare all your ingredients. Grill your ham steaks, few minutes each side, making nice grill marks.
  • 2. Taking 1/2 your cooked broccoli, garlic, a pinch both of salt and pepper,and parmesan cheese begin chopping in blender add olive oil purify till You have a nice consistency pesto.
  • 3. Slice grilled ham and other half of broccoli, toss together in a few teaspoons olive Add to pasta, pour pesto over and combine all ingredients. Put in baking dish, set covered in 325 degree oven for about 20 min. Just to warm through and combine all flavors. Serve with extra cheese. Enjoy!

When there is no time to cook for my family, I whip up something so easy that my youngest in college can make for his roommates. It's quick and simple. You may grill your own chicken breast and use fresh broccoli.

10 ounces basil pesto
1 lb penne pasta
1 lb broccoli, cut into small florets or 10 ounces frozen chopped broccoli
2 (6 ounce) tyson grilled chicken breast strips
3 ounces shredded parmesan cheese

Steps:

  • Cut the fresh broccoli buds into small florets, leaving as short a stem as possible; set aside.
  • Meanwhile, boil the pasta in salted water for about 4-5 mins or until al dente. Remaining 3 mins add the reserved florets into the same pot and boil 3 minutes, retaining the bright green color and a bit of crunch. Then place the chicken breast strips into the same pot just to warm it up about a minute. If you're using frozen you can wait until 3 mins are remaining. Add the chicken first that frozen broccoli.
  • Drain pasta, broccoli and chicken. Pour warm sauce over the pasta and stir gently to combine; plate and sprinkle with shredded parmasan cheese or your choice of cheese.

CREAMY VEGAN PESTO PASTA WITH BROCCOLI

This is something I just put together today. I was craving something creamy, but wanted to keep it vegan and this is what I came up with. I got some of the ideas for the sauce from other recipes in the Micheff Sister's Cookbook. I think next time I will use this pasta mixture in a casserole baked with bread crumbs covering the top.

7 ounces firm tofu
1 cup raw cashews
1 (10 ounce) package frozen chopped spinach, thawed (or fresh spinach tastes really nice and keeps more nutrients!)
2 garlic cloves
2 tablespoons olive oil
1 1/2 teaspoons salt
1 medium onion, chopped
1 (500 g) package egg-free pasta (I usually use bow tie, but it would be great with penne also)
1/2 cup water
3/4 cup water
1/3 cup water
2 teaspoons vegetarian poultry seasoning (I use McKays Vegan Chicken Seasoning)
1 1/2 tablespoons nutritional yeast
3 tablespoons pesto sauce, liquid (can add more to taste)
1 medium head of broccoli, cooked

Steps:

  • In a blender or food processor, blend cashews and 1/2 cup water until smooth. Then add the tofu, 1 tablespoons olive oil (reserve 1 Tbsp), 3/4 cup water, vegetarian chicken seasoning, 1 1/2 Tbsp nutritional yeast, and salt, and blend until smooth and creamy. You may want to add a tad more water if it's too thick. Set aside.
  • Boil pasta noodles and drain.
  • In a large saucepan, saute the onion and garlic in the remaining 1 tablespoons olive oil until onions are clear. Add 1/3 cup water and the vegan chicken seasoning. If you are using fresh spinach, cook it with the onion, if using frozen spinach add it to the saucepan after the onion is clear.
  • Once the onion, garlic, and spinach is cooked and the water has been evaporated, add the blended mixture (cashews, tofu, etc), cooked broccoli, and pesto sauce to the sauce pan. Cook together on low for 5 minutes.
  • Serve mixed sauce on top of cooked pasta and enjoy!
