BROCCOLI-ONION DELUXE
A friend gave me this recipe years ago. It's a marvelous dish to go with any meat...also a vegetable dish that will "keep" if your dinner party happens to be running late!

- In a covered saucepan, cook onions in a small amount of water for 5 minutes. Add broccoli; cook 5 more minutes. Drain. Place in a 2-qt. baking dish. In a small saucepan, melt 4 tablespoons butter; stir in flour, salt and pepper. Gradually add milk; cook and stir until thickened. Add cream cheese; stir until melted. Pour sauce over vegetables; sprinkle with cheddar cheese. Cover and bake at 350° for 30 minutes. Melt remaining butter; combine with crumbs. Sprinkle over casserole. Return to the oven, uncovered, for 15 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring broccoli and onions to a boil in a pot of salted water until vegetables are tender, about 5 minutes. Drain. Arrange vegetables in a baking dish.
- Melt 2 tablespoons butter in a saucepan over medium heat; cook and stir flour, salt, and pepper into melted butter until smooth, about 2 minutes. Whisk milk into flour mixture until thick and bubbly, about 5 minutes. Reduce heat to medium-low and add cream cheese. Stir until smooth.
- Pour cream cheese mixture over vegetables, stirring lightly. Top with Cheddar cheese. Combine 2 tablespoons melted butter with bread crumbs in a bowl; sprinkle over vegetables.
- Bake in the preheated oven until cheese is melted and bread crumbs are golden brown, about 30 minutes.

- Cook broccoli until tender crisp.
- Cook onions in boiling salted water: drain.
- In a saucepan melt half the marg; blend in flour salt and pepper.
- Add milk and cook stirring constantly until thickened and bubbly.
- Reduce heat and blend in cheese until smooth.
- Place vegetables in casserole.
- Pour sauce mixture over and mix lightly.
- Top with shredded cheese.
- Melt remaining marg and toss with bread crumbs.
- Sprinkle over casserole.
- Bake at 350 degrees for 40- 45 minutes.

This a favorite with everyone at my house. I have posted proportions for a potluck supper size but it could easily be cut in half for a family dinner.

Steps:
- 1. Lightly steam the broccoli until bright green but the stems are still firm. Chop up the onion and boil in salted water until tender. Drain.
- 2. Spray 9x13 or slightly smaller baking dish with Pam. Place the broccoli in the bottom and scatter the cooked onion over that.
- 3. In a saucepan melt 2 tablespoons of butter than add the flour, salt and pepper until blended. Add the milk, cook and stir over medium heat until thick and bubbly. Reduce heat to low, add the cream cheese and blend with a whisk until smooth.
- 4. Pour over broccoli and onions and sprinkle with shredded cheese. Melt remaining 2 tablespoons of butter and toss them with the breadcrumbs until combined. Top the shredded cheese with the breadcrumbs.
- 5. You can cover and chill until you are ready to bake this dish or bake uncovered immediately at 350 degrees for 30 minutes.

- Cook broccoli; drain. Cook onions; drain. In saucepan, melt 2 tablespoons butter; blend in flour, salt, and dash of pepper. Add milk; cook and stir until thick and bubbly. Reduce heat; blend in cream cheese until smooth. Place vegetables in a 1 1/2-quart casserole. Pour sauce over and mix lightly. Top with cheese. Melt 2 tablespoons butter, toss with crumbs. Bake casserole about 30 minutes at 350°, then sprinkle crumbs around edge and continue baking uncovered until heated (about 20 minutes more). Editor's Extra: Cook frozen broccoli per package instructions. Steam fresh broccoli and onions in small amount of water about 5 minutes, till al dente (crisp tender). I like to sauté the onions in a skillet with a tad of butter or spray.
